Ingredients

3/4 cup amaretto
4 cups apple cider, chilled
1/4 cup lemon juice
6 lemon slices
6 cinnamon sticks (3 inches)

Steps:

Fill six highball glasses with ice. Pour 2 tablespoons amaretto into each. Stir together apple cider and lemon juice until well mixed. Divide evenly among glasses. Serve each with a lemon slice and cinnamon stick.

Ingredients

1 small sugar cube
1 teaspoon freshly squeezed lemon juice
2 ounces apple cider
2 ounces cranberry-raspberry flavor seltzer
1 spherical piece cocktail ice
1 whole apple chip
One 2- to 3-inch piece orange peel

Steps:

Add the sugar cube, lemon juice, apple cider and seltzer to a 6- to 8-ounce Old Fashion glass. Stir to dissolve the sugar. Drop in the ice cube sphere and apple chip. Flame the orange peel by simultaneously bending the peel, skin-side out, and holding a match or lighter near the peel to ignite the spraying orange oil. Rub the peel around the rim of the glass before dropping it in the drink.

40ml Somerset brandy 5yr (Calvados will do - nothing with too much age as it will start to lose some of its apple-y character)
20ml lemon juice
20ml egg white
10ml toffee syrup (Biona Caramel Agave Syrup is great, or see the recipe below)
Breton cider to top up (about 40-50ml)

Steps:

Put all the ingredients, except the cider, into a cocktail shaker and dry shake (no ice).
Add ice to the shaker and shake again. Strain into a small wine glass and top with the Breton cider.
