I CAN'T BELIEVE THIS IS MICROWAVED OATMEAL!
My dad showed me this technique for making oatmeal in the microwave. I never microwaved oatmeal because it always boiled over and never tasted as good. And instant oatmeal is truly awful. This recipe is quick and simple, and gives a great-textured, chewy oatmeal. Plus, there are no dishes other than your bowl and spoon!

Steps:
- Pour desired amount of oatmeal into cereal bowl. (I suggested 1/2 cup, but any amount is fine. However, if you use much more than this, you will probably want to use a larger bowl so the oatmeal doesn't boil over before it is fully done).
- Add enough water to just cover the oatmeal. (1/2 cup water if you are using 1/2 cup of oatmeal).
- Microwave on high for about 2 minutes. (The actual time will vary depending on the microwave. I let it go until a volcano forms. I turn the microwave off just before the volcano erupts over the side of the bowl. I then let it sit in the microwave for about a minute, but it's not necessary.).
- Sprinkle a dash of cinnamon on top.
- Add sugar and milk/cream to the desired consistency and flavor.

TASTY OATMEAL THE MICROWAVE WAY!
This is NOT boring oatmeal! I've hooked many a "I don't care for oatmeal" folks w/ this one! Other than the basics (water, oats, & salt), the ingredients are optional and may be varied to suit individual tastes.

- Combine ingredients in microwave safe dish/pot. Nuke 2 mins 20 sec. Stir. If still "water-y," nuke 10-15 seconds.
- ***Note #1: I often use whatever fresh fruit I have on hand -- chopped apples, cut up bananas, fresh peaches, etc.
- ***Note #2: I also like to use dried fruit such as raisins, cherries, blueberries, etc. When using dried fruit, I like to nuke the fruit in enough water to cover for appx 2 mins, depending on the size of the fruit and it's estimated moisture content.
- ***Note #3: After nuking dried fruit, do not drain if there is any water left. Add the other ingredients to the pot and go from there.
- ***Note #4: Other than the water and oats, I don't actually measure the other stuff, just adding a handful of this and some of that.

BAKED FRUIT-CINNAMON OATMEAL RECIPE
Steps:
- Preheat oven to 350F degrees. Lightly spray 8-inch square baking dish with nonstick spray.
- In a large bowl, mix together the oats, blueberries, cranberries, all except 2 tablespoons of the brown sugar, baking powder, cinnamon, and salt.
- In another bowl, whisk together the yogurt, 1/2 cup milk, the applesauce, egg, oil and vanilla until smooth.
- Add the yogurt mixture to the oat mixture and stir until well combined.
- Spoon into the prepared baking dish and spread it out evenly. Sprinkle with the remaining 2 tablespoons brown sugar.
- Bake the oatmeal until a toothpick inserted into the center comes out clean, about 35 minutes.
- Remove from the oven and let cool in the baking dish on a wire rack for 10 minutes.
- Cut the oatmeal into 8 equal portions and serve with remaining 1/2 cup milk.

WW INSTANT OATMEAL MUFFINS (1 WW POINT EACH)
I just started weight watchers and wanted a muffin for breakfast. Other recipes called for things I didn't have so I designed my own recipe with what I had in the kitchen. These are moist and sweet enough to please and my 1 year old and 3 year old loved them. They definitely stick to paper muffin cups a little so I think I'll try skipping the paper cups next time and opt for just the muffin pan and some cooking spray.

PERFECT MICROWAVE OATMEAL FOR ONE
I used to fix myself hot oatmeal every day, even when I was working. I guess I'm lazier now, and not willing to clean that pot day after day. - 1. Add oatmeal to a microwave safe 3 cup bowl. The bowl must be big enough or the oatmeal will boil over and make a huge mess. Use any kind except instant. (I don't like the additives in instant and it is so finely ground that much of the fiber effect is lost.) Do not stir.
- 2. Add water either from the tap to cover and add about one inch above the oatmeal, bottled or filtered. Use what you have and what you can afford. Do not stir.
- 3. Add salt. I'm on a salt restricted diet but found that I wasn't getting enough Iodine in my diet so I have added this tiny bit. You can omit the salt if you wish. Do not stir.
- 4. Add fruit. I have diced A fresh apple with peel. I've added drained, canned fruit like peaches, pears or fruit cocktail (half a can and I dice it.) Make sure the water level in the bowl barely covers the fruit. Do not stir.
- 5. Add the Coconut Oil. You may use Butter, either salted or unsalted, Olive oil, Avocado oil or even Margarine if that is all you have. You can omit the fat if you wish. I find the fat helps keep it from boiling over. Do not stir.
- 6. Pace the bowl in the center of the microwave on the turn table. Microwave for 2 to 2 1/2 minutes on full power. No need to cover. The oatmeal will rise very close to the rim sometimes. Stop the power and let it sit a few seconds then continue to cook the full time. Microwave ovens vary and food should be monitored for boil over, sparking, smoking, burning. (better safe that sorry.) CAUTION! The bowl will be very hot. remove with pot holders, bowl covers can be added prior to microwaving to make for easy removal after cooking. I crocheted some with 100% cotton yarn.
- 7. Remove bowl carefully from microwave. Add Cinnamon and Bran. Sometimes I add a tsp of Chia Seed. I try to eat cinnamon every day. Stir everything in. You can omit the cinnamon, the chia and/or the bran.
- 8. Add the sliced or chopped nuts. Almonds or Sunflower Seeds are two of my favorites. In a pinch I have added a heaping teaspoon of nut butter instead. Stir it all in. You can omit the nuts too.
CREAMY MICROWAVE OATMEAL
Trust me you want a large bowl and to stir. It over flowed the first time I made this, lost half my breakfast. I like the oatmeal without the sweeteners and milk.
