BROCCOLI-CHEDDAR STUFFED CHICKEN BREASTS



Broccoli-Cheddar Stuffed Chicken Breasts image

I've taken the classic flavors of broccoli Cheddar soup and transformed them into a filling for baked chicken breasts. But feel free to grab whatever cheese, herbs and spices you've got and use those instead. This recipe would also work great with cauliflower and/or any type of cheese that has a decent melt factor. Firmer cheeses like Parmesan and Gruyère would be welcome additions, but I'd steer clear of anything that's extra-soft (think Brie or mascarpone) because we want the filling to stay intact.

Number Of Ingredients 8

3 cups broccoli florets (see Cook's Note)
1 1/2 cups shredded Cheddar cheese
2 ounces cream cheese, at room temperature
1 tablespoon chopped fresh chives or other fresh herbs
Kosher salt and freshly ground black pepper
4 large boneless, skinless chicken breasts (see Cook's Note)
Garlic powder, ground cumin or other spices
4 tablespoons olive oil

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 400 degrees F.
  • Place the broccoli in a microwave-safe bowl then add 2 tablespoons water. Cover the bowl (a large plate works best) then microwave for 2 minutes. Remove the broccoli to paper towels, drain very well and let cool slightly.
  • Chop the broccoli into small, pea-sized pieces then return it to the bowl. Add the Cheddar, cream cheese, chives, 1/4 teaspoon salt and 1/4 teaspoon pepper. Stir until well combined.
  • Arrange the chicken breasts on a cutting board, and using a sharp knife, cut a deep pocket horizontally into each chicken breast without cutting all the way through to the other side.
  • Divide the broccoli mixture among the chicken breasts, pressing it firmly into each pocket.
  • Season the outsides of the chicken breasts on both sides with garlic powder, salt, pepper and any other preferred spices.
  • Divide the olive oil among two ovenproof skillets set over medium heat. Once the oil is hot, add 2 of the chicken breasts to each skillet. Cook the chicken until seared on one side, about 3 minutes, then flip it once and cook until seared on the other side, 2 to 3 minutes.
  • Transfer the skillets to the oven and continue cooking the chicken breasts until the thickest part of each breast reaches 165 degrees F, 10 to 15 minutes.
  • Remove the chicken breasts from the oven and serve.

4 boneless skinless chicken breasts (pounded to even thickness)
1 teaspoon garlic powder
1 teaspoon Herbs de Provence (or Italian blend seasoning)
1 ½ pounds broccoli florets
1 tablespoon butter
1 tablespoon olive oil
2 teaspoons minced garlic (or ½ teaspoon garlic powder)
salt and pepper to taste
3 tablespoons grated parmesan cheese
2 teaspoons oil

Steps:

  • Season chicken on both sides with garlic powder, Herbs de Provence (or Italian blend), and salt and pepper (I'm pretty generous with the salt and pepper here, go with your gut).
  • In a large skillet, melt butter. Once melted, drizzle 1 tablespoon oil into the pan. Add chicken and brown for 3-4 minutes on each side.
  • Toss broccoli florets with 2 teaspoon oil, garlic (or garlic powder) and parmesan cheese.
  • Scoot the chicken over in the pan to make room for the broccoli.
  • Add broccoli to the pan, add 1/3 cup water (pour it to the side of the chicken and broccoli and not over the top so that it doesn't wash away the seasonings), cover and cook for 15 minutes or until chicken is white throughout and broccoli is fork-tender. (see note for alternate cooking method) Serve immediately.

1 boneless skinless chicken breast
2 tablespoons flour
1 teaspoon black pepper
1 tablespoon olive oil
1 teaspoon butter
1 cup broccoli floret
1/3 cup chicken stock
1 lemon, juice of

Steps:

  • Heat the olive oil and butter in a large frying pan until the butter stops foaming Pat dry the chicken breast and coat with the flour and black pepper.
  • Place the chicken in the hot oil/butter, fry for 5 minutes and flip, frying for additional 5 minutes or until the internal temperature is 160 degrees (F).
  • When the chicken is done, remove to a plate and stir fry the broccoli for 2 minutes or until tender crisp.
  • Turn off the heat, add the chicken stock and the juice from the lemon and stir until the mixture starts to thicken.
  • Pour the lemon broccoli over the chicken breast.

1 pound boneless skinless chicken breasts, cut into 1-inch strips
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup all-purpose flour
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1 large egg
3 tablespoons lemon juice, divided
1/4 cup butter, cubed
1 cup chicken broth
1/2 teaspoon grated lemon zest
4 cups fresh broccoli florets
Lemon wedges
Hot cooked rice, optional

Steps:

  • Sprinkle chicken with salt and pepper. In a shallow bowl, mix flour, garlic powder and paprika. In another shallow bowl, whisk egg and 1 tablespoon lemon juice. Dip chicken in egg mixture, then in flour mixture; shake off excess., In a large skillet, heat butter over medium heat. Add chicken; cook 4-6 minutes on each side or until no longer pink. Remove and keep warm. Add broth, lemon zest and remaining lemon juice to skillet; bring to a boil. Stir in broccoli. Reduce heat; simmer, covered, 8-10 minutes or until broccoli is tender. Serve with chicken, lemon wedges and, if desired, rice.

Using the spice rub from the popular "Roast Sticky Chicken-Rotisserie Style" recipe found on this site, make a complete one-skillet roasted chicken breast dinner in less than an hour.

2 teaspoons kosher salt
1 teaspoon paprika
½ teaspoon onion powder
½ teaspoon dried thyme
½ teaspoon ground white pepper
¼ teaspoon cayenne pepper
¼ teaspoon ground black pepper
¼ teaspoon garlic powder
2 tablespoons salted butter
2 whole bone-in chicken breasts with skin
4 medium red potatoes, cut into 1-inch wedges
3 bunches broccoli, cut into florets
1 pinch salt to taste
1 clove garlic, chopped

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Mix salt, paprika, onion powder, thyme, white pepper, cayenne, black pepper, and garlic powder together in a bowl. Rub 1/2 of the spice mix liberally all over the chicken breasts, including under the skin. Reserve the remaining mix.
  • Melt butter in a large cast iron skillet over medium-high heat. Place the chicken breasts, skin-side down, into the melted butter and and brown, without moving, for 5 minutes.
  • In the meantime, toss potatoes with the rest of the spice mix.
  • Remove chicken from the pan and add potatoes to the bottom of the skillet in a single layer. Place chicken breasts, skin-side up back on top of the potato wedges and place in the preheated oven.
  • Roast in the preheated oven until chicken is no longer pink in the center and juices run clear, 18 to 20 minutes.
  • While the chicken and potatoes are roasting, salt the broccoli florets lightly.
  • Remove the chicken, add the broccoli to the skillet, and toss with the chicken drippings and potatoes. Add chopped garlic. Return the skillet to the oven and roast until broccoli is tender, 8 to 10 minutes.

1 boneless skinless chicken breast
1/4 teaspoon black pepper
1 teaspoon olive oil
1 cup broccoli floret
1/4 cup olive, sliced and seeded
1 teaspoon flour
1 teaspoon butter
2 teaspoons Dijon mustard (Grey Poupon)
1/4 cup white wine (Vermouth is fine)
3/4 cup chicken stock

Steps:

  • Sprinkle the black pepper on both sides of the thawed chicken breast, next apply the olive oil and place into a very hot non-stick frying pan.
  • Fry for 4 minutes, turn over once and fry for another 4 minutes or until the interal temperature is 160 degrees (f) Mix the flour and butter in a small bowl until combined.
  • Remove the chicken breast, add the wine and chicken stock, and stir to loosen the crispy particles.
  • Add the mustard and butter/flour mixture and stir again until the gravy thickens.
  • Add the broccoli and olives and cook over medium heat for 5 minutes.
  • To serve, pour gravy and broccoli over the chicken.
