Oh boy, po boys! Serve with an ice-cold Barq's root beer in a large frosty beer mug. Make sure you clean your crabs properly.

8 soft shelled crabs, cleaned (small)
salt
pepper
1 egg
1 cup milk
1 cup flour
2 teaspoons baking powder
vegetable oil
1 loaf crusty French bread, toasted (long New Orleans-style loaf if you want to be authentic)
shredded iceberg lettuce
tomatoes, slices
pickle
mayonnaise or tartar sauce
Crystal hot sauce or louisiana hot sauce

Steps:

  • In one bowl, beat together the eggs and milk.
  • In another bowl, sift together the flour and baking powder.
  • Season the cleaned crabs with salt and a generous amount of pepper.
  • Dip crabs thoroughly in the egg mixture, then in the flour mixture. Set aside.
  • Pour vegetable oil into a fry pan to about 1" deep. Heat to very hot.
  • Cook crabs until golden brown, turning once, about 4-5 minutes on each side. Drain on paper toweling.
  • Cut the toasted French bread into four pieces. Dress the bread of each sandwich with mayonnaise, lettuce and a couple slices of tomatoes. Place the two crabs inside each sandwich and season with a dash or two of hot sauce.

2 ounces garlic chili paste
1 pint distilled white vinegar
4 ounces rice vinegar
2 1/2 garlic cloves, finely minced
1 1/2 tablespoons kosher salt
1 1/2 cups sugar
3/4 cup water
3/4 tablespoon cornstarch
2 cups oil
1 large soft shell crab
2 ounces buttermilk
1/2 cup tempura flour
1 asparagus spear
2 ounces rice noodles, cooked
1 carrot, julienned
1 sprig basil
1 sprig cilantro
1 sprig mint
1 lime wedge

Steps:

  • Combine chili paste, white vinegar, rice vinegar, garlic cloves, kosher salt, sugar, and water in a saucepan and bring to a boil. Simmer for 30 minutes and skim if needed. Add cornstarch and bring back to a boil to thicken. Set aside and let cool.
  • Heat oil to 360 degrees F. in a deep pot.
  • Dredge crab in buttermilk and dip in tempura flour. Fry in oil for 2 minutes until crisp. Set aside. Place asparagus spear in oil for one minute. Set aside.
  • Place 2 ounces of the cooled chili paste sauce in a shallow bowl along with a mound of cooked rice noodles. Arrange carrot and sprigs of basil, cilantro, and mint next to the noodles. Place lime wedge along side the noodles. Put fried crab on top of noodles with asparagus spear.

Ask your fishmonger to clean the crabs for you, because though the process is a quick and easy one, it's not for the squeamish. There's not much cooking here. Sometimes crabs spatter, so it's best to fry them in oil that's not smoking hot.

1 12- to 16-inch-long loaf supermarket French- or Italian-style bread, or 2 smaller loaves
1 egg
1 cup milk
1/2 cup cornmeal
1/2 cup flour
1/2 teaspoon cayenne, or more
Salt
Neutral oil, like corn or grapeseed, as needed
2 large soft-shell crabs, cleaned
For garnish: mayonnaise, lettuce, tomato, hot sauce or lemon.

Steps:

  • Heat oven to 350 degrees. Split bread in half and remove some of the soft white crumb with your fingers. Toast bread lightly in oven, about 10 to 15 minutes.
  • Beat egg and milk together in a bowl; combine the cornmeal, flour, cayenne and a large pinch of salt on a plate. Put about 1/4-inch of oil in a deep skillet broad enough to accommodate crabs, and turn heat to medium. When oil is hot -- a pinch of flour will sizzle -- dip crabs in milk-egg mixture, then dredge in the cornmeal-flour mixture. Put in skillet; adjust heat so crabs bubble gently but not furiously in oil.
  • When bottom is nicely browned, 3 to 5 minutes, turn crabs and brown other side; crabs will be quite firm when done.
  • Serve on toasted bread, garnished as you like.

1/2 cup mayonnaise
1 tablespoon minced red onion
1 tablespoon finely chopped dill pickle
1 tablespoon rinsed and finely chopped capers
1 tablespoon thinly sliced fresh chives or 1 tablespoon green onion
1 1/2 teaspoons Old Bay Seasoning
1 teaspoon fresh lemon juice
1/4 teaspoon hot pepper sauce, such as Tabasco
1/4 cup all-purpose flour
1/4 cup medium-grind yellow cornmeal
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
4 jumbo soft-shell crabs, cleaned (dont' forget to remove the gills)
2 tablespoons canola oil or 2 tablespoons vegetable oil
1 tablespoon unsalted butter
8 slices French baguettes, toasted (or French Bread slices cut aboute 5-inches long each)
4 large leaves lettuce
4 -8 slices ripe tomatoes

Steps:

  • Make the Tartar Sauce: In a small bowl, combine the mayonnaise, onion, pickle, capers with spicy tartar sauce chives, Old Bay, lemon juice, and hot pepper sauce. Set aside.
  • To Cook the Crabs: In a wide, shallow bowl, combine the flour, cornmeal, salt and pepper. Dredge the crabs to coat on both sides.
  • Heat the oil in a 12-inch skillet (preferably cast iron) over medium-high heat until shimmering hot. Add the butter to the skillet and swirl the pan to melt it. Add the crabs top side down and cook, shaking the pan once or twice, until crisp and browned, about 3 minutes. The crabs may pop and splatter, so be careful.
  • Flip the crabs and cook until crisp and just cooked through (an instant-read thermometer inserted in the center of the crab should read 145°F), about 3 minutes more. Transfer the crabs to a large paper-towel-lined plate.
  • To Assemble the Sandwiches: Spread the tartar sauce on the 8 slices of toast. Top 4 of the toast slices, sauce side up, with a piece of lettuce and 1 or 2 slices of tomato. Put one crab on each sandwich, top with the remaining toast, sauce side down, and serve.
