You won't believe how easy it is to make homemade whole wheat bread! This recipe bakes up soft and is perfect for sandwiches.

1 1/2 cups warm water
1/4 ounce active dry yeast* ((1 packet))
1/4 cup honey
3 tablespoons unsalted butter, (softened)
3 3/4 cups whole wheat flour ((you may need as much as 4 1/2 cups))
1/2 teaspoon kosher salt

Steps:

  • Place the warm water in a large bowl and sprinkle the yeast on top. Set aside for 5 minutes to allow the yeast to proof.
  • Add the honey and butter.
  • Blend in 2 cups of the flour and the salt until moistened. Beat on medium speed for 3 minutes.
  • Stir in an additional 1 1/4 to 1 3/4 cups flour, until dough pulls away cleanly from the sides of the bowl.
  • Knead on floured surface, adding 1/2 to 3/4 cup additional flour, until dough is smooth and elastic, about 10 minutes.
  • Place dough in large greased bowl and cover loosely with plastic wrap. Let rise in warm place until doubled in size, 30 to 45 minutes.
  • Lightly mist a 9x5-inch loaf pan with non-stick spray.
  • Punch down the dough and shape it into a loaf.
  • Place in prepared pan, cover loosely with greased plastic wrap, and let rise in warm place until doubled in size, 30 to 45 minutes.
  • Preheat the oven to 350°F.
  • Uncover dough, and bake 40 to 45 minutes or until loaf sounds hollow when lightly tapped.

The original recipe comes from "What's For Supper?" by the Rockypoint, WY Happy Hour Club. I've made it a few times now and always change it a bit based on what I have on hand but it is always very moist and soft. This does seem to be a somewhat wet dough, which keeps it a moist bread. The recipe says to use a stand mixer with dough hooks, which is what I have used. I use bread flour for the white flour. I've added milled flax and wheat germ to boost the nutritional value and added tons of flavor (IMOP).

1/4 cup honey
2 1/2 cups luke-warm water
2 1/4 teaspoons yeast
4 cups unsifted white flour
3 cups unsifted whole wheat flour (I've used more)
1/2 cup powdered milk
8 teaspoons vital wheat gluten
1 tablespoon salt
1 egg, slightly beaten
1/4 cup salad oil

Steps:

  • Dissolve honey in lukewarm water in bowl of stand mixer.
  • Then add yeast and let stand for 10 minutes.
  • Next, add remaining ingredients to the yeast mixture, about a cup at a time.
  • Using dough hook, knead for 10-15 minutes. (I don't knead for more than 10 minutes.).
  • Place in a well greased bowl, turn once to bring greased side up.
  • Cover loosely and let rise in warm place, until doubled in size, about 1 hour.
  • Turn out onto lightly floured board and divide in half.
  • Shape into loaves or rolls, place in/on pan and let rise about 45 minutes in a warm place.
  • Bake at 375 for 25-35 minutes.
  • After removing from oven, butter the crust to keep it soft.
  • Makes 2 loaves or about 3 dozen rolls.

Light, soft, tasty, and healthy! Just made this bread and it is so good - thin crust and lots of soft bread. I wanted to keep a record of the recipe, so this is my first post!

Number Of Ingredients 10

1 1/4 cups whole milk, room temperature
3 tablespoons melted butter (yes, I used real butter)
1 teaspoon salt
2 tablespoons honey
1 teaspoon molasses (optional)
1 tablespoon brown sugar
1 1/2 cups whole wheat flour
1 1/2 cups all-purpose flour
1/2 cup wheat germ, room temperature if you keep yours in the fridge
1 tablespoon yeast

Steps:

  • Place all ingredients in the order listed into a bread machine. Use the dough setting and let the machine do all the kneading. My machine mixes everything, lets the dough rest, then rekneads, then rises. Takes about an hour and a half.
  • Once the machine beeps, punch the dough down and remove to a lightly floured surface. I lightly kneaded and then shaped into a loaf. Place in a greased bread pan and put someplace to rise for an hour. I used my oven and just didn't turn it on. Removed from the oven after an hour.
  • Heat oven to 325 and bake in the center of oven for 30 minutes.
  • Remove from oven and rub a tablespoon of butter all over top crust. Allow to initially cool by placing pan on a rack. Then turn the pan on its side and the loaf will come right out (as long as you thoroughly greased the pan that is).
  • I was not able to let the loaf fully cool -- as I must have the end piece while still warm :) My bread knife sliced it perfect and it held its shape anyways.

I was looking for an easy but soft 100% whole wheat bread and found this on the internet. I thought it needed to be in recipezaar. This bread uses gluten and I have not tried it without. It is a very large loaf. You can double the recipe and make three 9x5 inch loaves or do one single large loaf. The bread comes out so soft and delicious. It is extremely easy to make with little effort. I use a mixer but there are directions for hand, mixer, or bread machine.

1 1/2 cups lukewarm water
3 tablespoons coconut oil or 3 tablespoons olive oil
2 tablespoons molasses or 2 tablespoons maple syrup
3 1/2 cups whole wheat flour
1 tablespoon vital wheat gluten
2 tablespoons flax seed meal (optional)
1 1/2 teaspoons salt
1 1/2 teaspoons instant yeast

Steps:

  • To prepare the dough:.
  • (Hand method) Combine all ingredients and mix until you have a shaggy dough. The dough will seem wet. Let the dough rest, covered, for 20 minutes, then knead until smooth and elastic, about 10 minutes. Allow dough to rise, covered, for 1-2 hours or until puffy and nearly doubled in bulk.
  • (Mixer method) In bowl of a stand mixer fitted with the dough hook, combine all ingredients and mix them until you have a shaggy dough. The dough will seem wet. Let the dough rest for 20 minutes, then knead by machine until fairly smooth, about 5-10 minutes. Allow dough to rise, covered, for 1-2 hours or until puffy and nearly doubled in bulk.
  • (Bread machine method) Place all ingredients in bread machine and set to dough cycle.
  • To shape loaves:.
  • After the dough has risen, gently deflate, shape into a log, and place in a lightly greased 9x5 bread pan or 2 small pans. Cover with towel or lightly greased plastic wrap and allow to rise in warm place for about 30 mins to 1 hour, until its crowned about 2 inches over the rim of the pan. Preheat oven to 350 about halfway through the rising time.
  • To bake the loaves:.
  • If desired, brush top of loaf with milk or egg white and sprinkle with oatmeal, poppy seeds, etc. Bake bread in preheated 350 oven for 45 minutes or until it turns a deep brown and sounds hollow when tapped on the bottom.

1 package (1/4 ounce) active dry yeast
3 cups warm water (110° to 115°), divided
3/4 cup canola oil
1/4 cup sugar
1/4 cup molasses

7 to 7-1/2 cups all-purpose flour
3 cups whole wheat flour

Steps:

  • In a large bowl, dissolve yeast in 3/4 cup warm water. Add the oil, sugar, molasses, salt and remaining water. Combine flours; add 4-5 cups flour to mixture. Beat until smooth.
