Steps:
- To a large mixing bowl add 1/2 cup warm water, yeast and sugar.
- Proof yeast for 5 minutes until foamy.
- Add remaining water, oil, flour and salt.
- Stir to combine then knead via stand mixer fitted with dough hook on low speed for 5-7 minutes, or by hand until smooth and elastic. Spray dough with nonstick spray, place dough ball into clean mixing bowl and set in a warm, draft free area to rise for 30 minutes or until dough doubles in bulk.
- Once dough has doubled in bulk, punch down to degas and cut into 12 equal pieces. Roll each piece into a 6" breadstick/rope shape. Arrange on half sheet pan, not touching. Spray with nonstick spray, cover with plastic wrap. Place in warm area until breadsticks double in size 30-40 minutes (or more if it is chilly).
- Preheat oven to 425 degrees F.
- Once breadsticks have risen, remove plastic wrap and discard.
- Bake breadsticks for 8-10 minutes or until golden brown and internal temperature registers 190-200 degrees F.
- Melt butter, add garlic salt and stir together. Brush onto warm breadsticks immediately.
- Serve warm. Store leftovers in an airtight container. Warm leftover breadsticks in microwave 15-20 seconds to reheat.
SOFT GARLIC BREADSTICKS
Charles Smith relies of a bread machine to mix the dough for these buttery golden breadsticks that are mildly seasoned with garlic and basil. "I like to use this dough when making pizza, too," says the Baltic, Connecticut reader. "It makes two 12-inch crusts."

Steps:
- Measure your flour, salt, garlic powder, parsley, and baking powder into a big bowl. Stir the dry ingredients together so that they are evenly distributed throughout the flour. Now, pour in the milk. Stir with a big spoon until you have a ball of dough that leaves the sides of the bowl. You may have to dust the ball of dough with a little flour if it seems sticky to you. Gently knead the ball of dough right there in the bowl 5 or 6 times. Now place your dough on the counter. You may use a piece of waxed paper under the dough if you like. Using a rolling pin roll out the dough to a rectangular shape. If the edges become uneven, use your hands to reshape into a rectangle. It doesn't have to be perfect. You are aiming for a rectangle that will fi into a 9- by 13-inch pan. When you get the dough the right size, set it aside.
- Meanwhile, place the margarine in the 9- by 13-inch pan and place the pan in a 425F oven to melt the margarine. When the margarine is melted, carefully remove the pan from the oven, so as not to burn yourself. Sprinkle the second teaspoon of garlic powder and the 1/2 teaspoon of salt into the pan. You do not have to use the extra salt. Now, very carefully, lay your rectangle of dough into the pan, over top of the margarine. Next cut the rectangle into narrow strips. One method of doing this is to cut the dough in half, then cut each half again, quartering the dough, and then cut each quarter into narrow strips. The margarine will creep up between the strips. This is normal. It is what gives these bread sticks their texture. After cutting your strips, place the pan in the oven, still at 425F, and bake them for 20 minutes. They will be browned and crispy when they are done.
- The parsley is simply for decoration. It makes the bread sticks look more gourmet, but it adds little to the flavor or the texture. Leave it out if you don't have any, or are running low. If desired, you may sprinkle the bread sticks with a little bit of parmesan cheese before or after baking. This tastes good, but once again, is optional.

Steps:
- Fit your food processor with a steel blade. Place the bread flour, yeast, sugar, salt, Italian seasoning, garlic, 1/4 cup grated Parmesan and softened butter in the processor; pulse to blend. Stir together hot water, milk and egg. Start the processor and slowly pour in the milk mixture into the feed tube until a ball forms around the blade. Run for 30 seconds to knead. Remove dough from processor and knead briefly by hand. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
- Deflate the dough, and turn it out onto a lightly floured surface. Roll the dough into a 10x12 inch rectangle. Use a knife or pizza cutter to slice the dough lengthwise into ten strips, and then cut these strips in half. Brush tops of strips with 2 tablespoons melted butter, and sprinkle with 1/4 cup Parmesan cheese. Cover, and let rise until nearly double, about 30 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
- Bake in preheated oven for 18 to 23 minutes, or until golden brown. Turn broiler on, and brush breadsticks with remaining melted butter and Parmesan cheese. Broil just until the cheese starts to turn light brown, about 2 to 3 minutes. Serve warm.
