This is an old recipe of my grandmother's. These crunchy cookies are guaranteed to please.

¾ cup butter, softened
¾ cup white sugar
1 egg
1 ½ cups all-purpose flour
½ cup cornmeal
1 teaspoon baking powder
¼ teaspoon salt
1 teaspoon vanilla extract
½ cup raisins

Steps:

  • In a large bowl, blend butter and sugar until creamy. Add egg and beat well.
  • In another bowl, stir together flour, cornmeal, baking powder and salt; gradually add to butter mixture. Add vanilla and blend thoroughly. Stir in the optional raisins.
  • Form dough into ball, wrap tightly in plastic wrap, and chill until firm, about 1 hour.
  • Roll out dough on well-floured board to 1/4 inch thickness. Cut with cookie cutters (2 1/2 inches in diameter) and place 1 inch apart on lightly greased cookie sheet.
  • Bake in 350 degree F (175 degrees C) oven for 10-12 minutes or until edges are golden. Store in airtight container.

The word polenta does not actually refer to a specific grain, but rather a porridge dish made from a coarse grind of cornmeal. These cookies have a wonderful buttery crunch that is terribly addictive, so you may want to double this recipe and keep a log or two in the freezer for whenever the mood strikes you.

1 1/2 cups polenta, stone-ground grits or coarse cornmeal, plus additional as needed
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
1 1/2 sticks (12 tablespoons) unsalted butter
2/3 cup sugar
2 large eggs plus 1 large egg yolk
1/2 teaspoon vanilla extract

Steps:

  • In a bowl, mix together the polenta, flour, baking powder and salt.
  • In a mixer, cream together the butter and sugar. Add the eggs and yolk one by one, then add the vanilla. Add the dry ingredients and mix until a firm dough forms.
  • Divide the dough in half, place each piece onto a piece of parchment or wax paper, and shape the dough into a rough log about 2 inches in diameter, dusting with cornmeal as needed to prevent sticking. Roll up in the paper, twisting the ends to seal, and roll back and forth a few times to smooth out the shape. Refrigerate at least 1 hour. (At this point, the dough can be frozen for up to 2 months.)
  • Preheat the oven to 350 degrees F, and line 2 cookie sheets with parchment paper or silicone baking mats. With a sharp knife, cut the cookies into 1/2-inch slices, and place on the prepared cookie sheets about 2 inches apart. Bake, rotating halfway through, until cookies are just golden, 16 to 18 minutes. Transfer to a rack to cool completely, about 20 minutes.
  • Polenta cookies can be stored in an airtight container for up to 3 weeks.

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Prepare the corn muffin mix as directed on the box, then stir in the butter, jalapenos, flour and honey. Use a 2-inch ice cream scoop or 1/4-cup measure to scoop the batter onto the prepared baking sheet, leaving about 1 1/2 inches between each scoop. Sprinkle with the chile lime seasoning.
  • Bake the cookies until puffed, light golden on top and golden brown on the underside, 10 to 12 minutes. Serve warm.

1/2 cup butter (125 g)
1/2 cup sugar (100 g)
1 tsp vanilla extract
1 egg
pinch of salt
1 2/3 cup cornstarch (250 g)
hundreds and thousands (sprinkles)

Steps:

  • Preheat the oven to 175 ºC / 350 ºF.
  • Line a baking sheet with parchment paper and set aside.
  • Add butter, sugar and vanilla into a bowl and mix until creamy.
  • Add the egg and a pinch of salt and mix until well combined. The egg has to be fully incorporated into the butter.
  • Add the cornstarch and mix until combined. You should be able to shape the dough into a ball and it should be soft and flexible enough to be able to be used in a cookie press. The dough shouldn't stick to your hands. If the dough does stick don't panic. A little bit of stickiness isn't a problem, as long as you can shape the dough into a ball. If it is too sticky just add a little bit more cornstarch till the dough stops sticking.
  • The traditional way to make these cookie is by shaping the dough into little balls which you put on your baking sheet and flatten with a fork dipped in cornstarch. Keep dipping the fork into the cornstarch as needed.
  • Sprinkle all cookies with hundreds and thousands.
  • Put the cookies into the oven and bake for approximately 12 minutes. Be careful not to brown them too much, the cookies need to have a light, white/golden colour.

I really enjoyed these savory cookies, they are really delicious with a cup of ice tea in the summer and warm tea in the colder months. The cookies are very soft when they come out of the oven, so it is best to transfer the whole piece of parchment from the cookie sheet onto a cooling rack to prevent them from breaking.

  • Put the oven racks in upper and lower thirds.

1 Tbsp finely grated lemon zest (i used 2 small lemons)

12 Tbsp butter, unsalted (1 1/2 sticks)

  • 1. Preheat oven to 350. In a small bowl, whisk together four, cornmeal, lemon zest and salt.
  • 2. a large bowl mix butter, sugar, and egg until combined. Gradually add dry ingredients until moistened.
  • 3. Pinch off and roll dough between hands to form balls, each equal to 1 1/2 TBL (I used a small cookie scoop for uniform size). Place on 2 baking sheets, about 2 inches apart. With fingers or palm of hand, flatten balls to 3/4 inch thickness.
  • 4. Bake until lightly browned around edges, 20-25 minutes; transfer to racks to cool completely. enjoy!

Shape into 1-inch balls and roll in sugar. Arrange 20 per large baking sheet about 1 1/2 inches apart. Bake 12 to 13 minutes or until lightly browned on the bottom. Cool on a wire rack. Makes about 50. Note: Add 1/2 cup chopped crystallized ginger for fun.
