4 cups quick-cooking oats
1 cup packed brown sugar
1 teaspoon salt
1-1/2 cups chopped walnuts
1 cup sweetened shredded coconut
3/4 cup butter, melted
3/4 cup orange marmalade

Steps:

  • In a large bowl, combine the oats, brown sugar and salt. Stir in remaining ingredients. Press into a greased 15x10x1-in. baking pan. Bake at 425° for 15-17 minutes or until golden brown. Cool on a wire rack.

3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
1 (8 ounce) container low-fat vanilla yogurt or 1 (8 ounce) container plain low-fat yogurt
2 large egg whites, lightly beaten
2 tablespoons vegetable oil
2 tablespoons skim milk
2 teaspoons vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups oats (quick or old fashioned, uncooked)
1 cup raisins or 1 cup dried cranberries

Steps:

  • Heat oven to 350°F degrees.
  • In large bowl, combine sugars, yogurt, egg whites, oil, milk, and vanilla; mix well.
  • In medium bowl, combine flour, baking soda, cinnamon, and salt; mix well.
  • Add to yogurt mixture; mix well.
  • Stir in oats and fruit.
  • Spread dough onto bottom of ungreased 13x9-inch baking pan.
  • Bake 28-32 minutes or until light golden brown.
  • Cool completely on wire rack.
  • Cut into bars.
  • Store tightly covered.

1/2 cup raisins

Steps:

  • Mix together sugars, yogurt, egg white, oil, milk and vanilla.
  • Sift together dry ingredients and add to mixture.
  • Stir in oats and raisins.
  • Spread dough onto an ungreased 9x13-inch pan.

1 teaspoon ground cinnamon
1 1/2 cups all-purpose flour
1/2 teaspoon salt, or to taste
1/2 teaspoon baking powder
1 stick unsalted butter, at room temperature
1/2 cup molasses
1/2 cup granulated sugar
1 egg
3/4 cup uncooked rolled oats
1/2 cup raisins
1/2 cup butterscotch chips
1/2 cup chopped walnuts, optional

Steps:

  • Preheat oven to 350 degrees F. Butter and flour a 9 by 13 inch baking pan. Sift the dry ingredients together and set aside. In an electric mixer cream the butter, molasses and sugar until light and fluffy. Beat in the egg and add the reserved dry ingredients and mix until just incorporated. Fold in oats, raisins, nuts and chips. Spread dough in an even layer on prepared pan and bake for 20 to 30 minutes or until lightly browned. Let cool on a rack for 10 minutes then carefully cut in to bars approximately 3 inches square. Remove bars from pan and allow to cool completely.

Quick to mix and quicker to disapear. I like to slightly underbake these for a more softer bar. Dont over bake or you will have rocks! For a really flavorful bar, toast the nuts and coconut in the oven while preheating...watch closely it will burn quickly.

1/2 cup butter, melted and cooled
2 cups quick-cooking oats (not instant)

Steps:

  • Preheat oven to 350°F Line an 8×8-inch baking pan with parchment paper (optional, but aids in getting cookies out of pan).
  • Whisk together flour, sugar, brown sugar, baking soda, salt and spices in a large bowl.
  • Make a well in the center of the flour mixture and stir in vanilla, egg and melted butter until smooth. Stir in oats and raisins until they are evenly distributed.
  • Pour dough into prepared pan and spread into a even layer with a spatula or your fingers. Bake for 22-26 minutes, or until bars are set and the center no longer looks wet. Edges will be golden brown. Cool pan on a wire rack before slicing. Cut into rectangular bars to serve.

1 cup butter, cut up (2 sticks)
4 cups old fashioned oats, uncooked
1 cup packed brown sugar
1/2 cup light corn syrup
1 cup semi-sweet chocolate chips or 1 cup milk chocolate chips
3/4 cup creamy peanut butter

Steps:

  • Preheat oven to 350°; grease 15 1/2" by 10 1/2" jelly-roll pan.
  • In microwave-safe large bowl heat butter in microwave oven on High until butter melts, stirring once.
  • Stir in oats, sugar, and corn syrup until well combined.
  • With fingers, press oat mixture evenly into prepared pan.
  • Bake 20 to 23 minutes or until edges are set and center is slightly jiggly; cool completely on wire rack.
  • In a 1-quart sauce pan , heat chocolate chips and peanut butter over low heat until chocolate is melts and mixture is smooth, stirring frequently.
  • Spread chocolate mixture evenly over oat crust.
  • Cover loosely with plastic wrap and refrigerate 1 hour or until chocolate is firm.
  • Cut lengthwise into 4 strips, then cut each strip crosswise into 10 bars--40 bars.
  • If bars are difficult to remove from pan; place pan on a very hot damp towel for a few minutes to warm slightly.
  • Store bars in covered container, with wax paper between layers, in refrigerator up to 1 month or in freezer up to 3 months.
