Steps:
- Butter a 9 by 9-inch glass baking dish and set aside. Preheat the oven to 350 degrees F.
- Spread the oats, sunflower seeds, almonds, and wheat germ onto a half-sheet pan. Place in the oven and toast for 15 minutes, stirring occasionally.
- In the meantime, combine the honey, brown sugar, butter, extract and salt in a medium saucepan and place over medium heat. Cook until the brown sugar has completely dissolved.
- Once the oat mixture is done, remove it from the oven and reduce the heat to 300 degrees F. Immediately add the oat mixture to the liquid mixture, add the dried fruit, and stir to combine. Turn mixture out into the prepared baking dish and press down, evenly distributing the mixture in the dish and place in the oven to bake for 25 minutes. Remove from the oven and allow to cool completely. Cut into squares and store in an airtight container for up to a week.

SOFT & CHEWY GRANOLA BARS
This recipe is from my daughter's Home Ec class. She brought a sample home after they made them. They are nice and soft, a little chewy, and very tasty. I would think you should be able to change it up to suit your family. Try craisins with white chocolate chips, nuts, raisins, other dried fruits. Don't add too much or your granola bars will not have enough "glue" to hold together! They will stay soft for a few days if well wrapped.

CHEWY GRANOLA BARS
I like these granola bars because they are chewy...not cakelike, not crunchy....nice and chewy. I've tried others, but my kids always ask for these. The recipe is from TOH.

Steps:
- In a large bowl, mix together the oats, rice cereal, chocolate chips, coconut, sunflowers, peanuts, raisins, wheat germ, and sesame seeds.
- In a large microwave-safe bowl, combine the marshmallows, peanut butter, butter, corn syrup and vanilla.
- Microwave the marshmallow mixture at 70% power for 2-3 minutes, stirring often until well-blended.
- Quicky stir the dry ingredients in to the marshmallow mixture. You'll have to work quickly as the mix will get gooey fast.
- Spread into a greased 13-in. X 9-in. X 2-in. baking pan. To flatten the granola bars, I spray the BOTTOM of a second baking pan with cooking spray, nest this second pan on top of the pan with the mix and press down hard.
- Bake at 350 degrees F. for 15-20 minutes.
- Cool and cut into 24 bars.

- In a large pot, bring the butter, honey, coconut sugar and molasses on high heat. Once boiling, boil until it just begins to thicken - about 45 seconds to a minute.
- Remove from the heat and whisk in the vanilla until well mixed. Finally, stir in all the remaining ingredients except the chocolate chips until everything is coated.
- Press the mixture VERY FIRMLY into the prepared pan (I find using SLIGHTLY damp hands works super well) and then sprinkle with the chips, lightly packing them in.

- Prepare a nine inch square baking pan by lining it with aluminum foil, dull side up. Give the foil a light coating of non-stick cooking spray and set aside.
- In a large bowl, combine the rolled oats, chopped almonds, chopped cranberries, coconut, pepitas, and flax seed and stir well to evenly mix it all up.
- In a small saucepan set over medium heat, combine the sugar, honey, and butter. Cook, stirring occasionally, until the butter melts and the mixture starts to bubble. Once it has come to a light boil, cook the mixture for one to two minutes to dissolve the sugar. Remove the pot from the heat and stir in the vanilla and kosher salt. Pour this over the oat mixture and stir very well to combine.
- Scrape the mixture into your prepared pan and press it down into an even layer. To do this, I like to use a piece of parchment paper to lay over the top of the granola bar mixture and press firmly with my hands of a second nine inch square pan. Scatter the top of the granola bars with the finely chopped dark chocolate and give it another good press.

- Pour into the oats mixture and stir with a spatula or wooden spoon until thoroughly mixed. (Use clean hands if needed to get it all well incorporated. It’s okay if the chocolate melts a little.)

- Preheat the oven to 350F. Line a 13X9 pan with parchment paper. It's important that there's extra parchment paper on each side of the pan so the granola bars are easy to lift out of the pan after baking.
- Process the dates in the bowl of a food processor for 40-50 seconds. The chopped date pieces should stick together.
- In a medium saucepan, over medium heat, melt the peanut butter into the honey. Add the dates from the food processor, stirring until the heat breaks down the dates, and the mixture is thick and spreadable. Remove the pan from the heat and add the vanilla extract. Set aside.

- Preheat oven to 350 degrees. Line a 9x9 or 8x8 pan with parchment paper, set aside. You may also line with foil just be sure to grease it well.
- Place chopped almonds and oats on a baking sheet and bake for 3 minutes, stir and bake for another 2. How long you toast them for is personal preference, I don't like mine to be that toasted. Once they're done, pour them into a large bowl.
- In a small saucepan on medium-low heat, combine butter, coconut oil, honey and brown sugar together until everything is dissolved and smooth, about 3 minutes. Stir in vanilla. Pour the mixture over the oats and almonds. Stir until everything is evenly and well coated. Let the mixture cool for about 5 minutes before adding in mix-ins to reduce the melting of chocolate. Lightly fold in craisins and 1/4 cup of chocolate chips to reduce melting. Pour into prepared pan and evenly distribute granola throughout. Sprinkle 2 tsp of chocolate chips on top. Press down firmly for about 5 minutes until granola is firmly compacted. This part is SUPER important so you're granola bars don't fall apart, take your time. (I like to use a piece of greased wax paper or greased rubber spatula to help me along.) Once granola is firmly compact, chill in the fridge for 2-3 hours. Bars will be hard after chilling so let them rest for about 10 minutes on the counter before cutting up to serve.
- I store mine separately, each wrapped in a piece of plastic wrap. If your house is warm, store them in the refrigerator or find a cool place like a cabinet or pantry. They will stay soft and fresh up to 2 weeks.
