My family goes crazy over these soft, fruity cookies. They are easy and quick to make too!

Ingredients

½ cup shortening
1 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 (8 ounce) can crushed pineapple
2 cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon baking soda
⅛ teaspoon salt

Steps:

Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
In a large bowl, cream together the shortening and sugar until light and fluffy. Add the egg, beat well, then stir in the vanilla and pineapple. Combine the flour, baking powder, baking soda and salt; gradually stir into the creamed mixture. Drop by rounded spoonfuls onto the prepared cookie sheet.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Ingredients

1 cup light brown sugar
1 cup granulated sugar
1 cup shortening
2 eggs
1 (20 ounce) can crushed pineapple, drained
1 1/2 teaspoons vanilla
4 cups flour
1/2 teaspoon salt
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder

Steps:

Stir vanilla into pineapple; set aside.
Cream shortening, sugars and eggs.
Add pineapple and stir until well blended.
In separate bowl, combine flour, salt, baking soda, and baking powder; mix well.
Stir flour mixture gradually into pineapple mixture until thoroughly combined.
Drop by spoonfuls onto ungreased cookie sheets.
Bake at 350 degrees for 12-15 minutes.

I saw this recipe on the web and thought it looked so good I had to try it immediately - so I did! The results were wonderful. Even my fiance (who swears he doesn't like pineapple) thought they were great. I found a couple of similar recipes on zaar, but not one exactly like this.

1/2 cup shortening
1/2 cup brown sugar
1/2 cup white sugar
1 egg, beaten
2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 cup crushed pineapple, drained
2/3 cup chopped walnuts
1/4 teaspoon salt
1/2 teaspoon vanilla

Steps:

Preheat oven to 350.
Cream shortening and sugars together.
Add egg and mix well.
Add dry ingredients and mix well Add drained pineapple and mix well.
Add nuts and flavoring, mix well (yes, again).
Drop by spoonful onto greased baking sheet.
Bake for 15-20 minutes.
