I have never heard a complaint of my beef stew, it's a great new take on an old favorite! I prefer to serve stew over white rice, it all depends on your taste. You can season the beef with a packet of Sazon instead of salt and pepper, for even more Spanish style.

1 pound beef stew meat
salt and ground black pepper to taste
½ cup chopped Spanish onion
2 cloves garlic, minced
2 cups chopped red potatoes
1 (14.5 ounce) can diced tomatoes
1 (12 ounce) jar sofrito
½ cup pitted and halved green olives

Steps:

  • Heat a large skillet over medium heat. Cook beef in hot skillet until completely browned, about 5 minutes; season with salt and pepper. Transfer beef to a slow cooker, retaining some of the beef drippings in the skillet.
  • Return skillet to heat and heat the retained drippings. Saute onion and garlic in hot drippings until softened, about 5 minutes; add to beef in slow cooker.
  • Stir potatoes, diced tomatoes, sofrito, and olives into the beef mixture.
  • Cook on Low until beef and potatoes are fork-tender, 4 to 5 hours.

2 tablespoons vegetable oil
1 medium onion, chopped
1 green bell pepper, seeded and chopped
5 cloves garlic, chopped
1 teaspoon salt
¼ teaspoon pepper
¼ teaspoon ground cumin
1 teaspoon dried oregano, crushed
2 bay leaves
2 tomatoes, chopped
¾ cup canned tomato sauce

Steps:

  • Heat oil in a skillet over medium-high heat. Add onion and garlic, and cook until onion is translucent. Add the bell pepper, and saute until tender. Season with salt, pepper, cumin, oregano and bay leaves. Continue cooking until the mixture looks like a yummy green paste with oil around it. Stir in the tomatoes, if using, and cook stirring until all of the liquid is released. Gradually stir in the tomato sauce simmer until the sauce looks really red. Taste, and adjust seasonings if desired. Remove bay leaves.
  • Now the sauce is done. You can add it to meat, rice, beans fish or potatoes. Thin the sauce down if necessary with water, wine, beer, or whatever is handy.

I found some ready-made sofrito in the freezer section of a grocery and I also found a homemade version of it at a Latin American grocery in the refrigerator case. Peppers, onions, garlic, tomatoes, and cilantro are processed into tiny pieces and form this recipe base. Try this easy sofrito chicken and cauli-rice for dinner, soon! Garnish with capers and fresh parsley.

2 bone-in, skin-on chicken breasts
1 teaspoon sazon seasoning
½ teaspoon chili powder
ground black pepper to taste
2 tablespoons extra virgin olive oil
½ cup prepared sofrito
2 tablespoons tomato paste
½ teaspoon ground cumin
½ cup chicken stock
1 pound frozen riced cauliflower, thawed and drained
1 cup frozen green peas, thawed
½ teaspoon salt, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pat chicken breasts dry with a paper towel. Combine sazon seasoning, chili powder, and pepper in a small bowl. Season each chicken breast with sazon spice mix, making sure to get some seasoning under the skin as well as on the outside.
  • Heat a 10-inch skillet over medium-high heat. Add olive oil to the hot pan, and place chicken breasts skin-side down in the skillet. Brown chicken, about 4 minutes. When skin is brown, move chicken to a plate. Add sofrito, tomato paste, and cumin to the same skillet and cook, stirring, for 1 to 2 minutes. Add chicken stock and bring to a boil. Stir in riced cauliflower and nestle chicken down into the mixture. Cover.
  • Bake in the preheated oven for 25 minutes. Stir in peas and salt, and bake, uncovered, until the chicken is no longer pink at the bone, the juices run clear, and most of the liquid has cooked down, 15 to 20 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Serve hot.

1 Cubanelle pepper, seeded and quartered
1 small onion, peeled and quartered
1 bulb garlic, peeled
1 cup chopped fresh cilantro
2 tablespoons olive oil
10 boneless, skinless chicken thighs, or more to taste
2 teaspoons adobo seasoning
2 teaspoons cumin
1 cup chicken broth

Steps:

  • Combine tomatoes, green bell pepper, red bell pepper, Cubanelle pepper, onion, garlic, and cilantro in the bowl of a food processor; pulse until finely chopped. Set aside 1 cup of sofrito for the recipe and save the rest for another use.
  • Heat olive oil in a large skillet over medium heat. Season chicken thighs with adobo and cumin. Add chicken to hot skillet and sear on each side until golden brown, 5 to 6 minutes per side. Reduce heat to low and add chicken broth and 1 cup of sofrito. Cover and simmer until chicken thighs fall apart, about 1 hour.

I found this delicious recipe in the 'Dinner Tonight!' column in the Chicago Tribune. You can marinate this for as little as 30 minutes but 2-3 hours is best. I've included the 30 minute marinading time in the prep time. If you don't have a food processor just chop the vegetables as small as possible and place in a blender with the olive oil and puree.

1 onion, cut into 1 inch pieces
1 green bell pepper, cut into 1 inch pieces (cored and seeded)
1 red bell pepper, cut into 1 inch pieces (cored and seeded)
1 bunch cilantro or 1 bunch flat leaf parsley
6 cloves garlic
1 tablespoon olive oil
2 teaspoons salt
1 teaspoon fresh ground black pepper
1 lb flank steak, scored on both sides

Steps:

  • For the sofrito: puree onion, bell peppers, cilantro and garlic in a food processor; add olive oil, salt and pepper.
  • Spread 1 cup of the sofrito over the flank steak, working it into the scored crevices of the meat with your fingers; allow the meat to marinate for at least 30 minutes but 2-3 hours is best.
  • Prepare grill or broiler; grill or broil the meat to the desired doneness, about 8 minutes per side for medium rare.
  • Let stand 5 minutes then slice.
  • Refrigerate or freeze the rest of the sofrito to use in another dish- it goes really well with sauteed chicken.

1 -2 cup water
3/4 cup sofrito sauce, # 191924
1 (8 ounce) can tomato sauce
1 teaspoon adobo seasoning
4 cups cooked white rice

Steps:

  • Season both sides of flank steak with sazon and place in pot with just enough water to cover and simmer for 2 to 3 hours.
  • Remove flank steak and shred with 2 forks. Preserve 1 cup of the liquid.
  • Heat oil in skillet on medium, add sofrito and cook for 5 minutes.
  • Add 1 cup of the liquid from the pot, tomato sauce and adobo.
  • Simmer while stirring occasionally for about 10 minutes.
  • Serve over white rice.
