BEST MIDWEST CHILI YOU'LL EVER EAT * NO NOODLES OR KIDNEY BEANS
Nothing like going out on a limb with that title, right? :-) Made in the slow-cooker or a bean pot in the oven or in a pot on the stove-top, any way you prepare it---it comes out D-E-L-I-C-I-O-U-S! (Not that I'm biased!)

Steps:
- Fry ground meat; as it finishes, add the onion and sauté together.
- While that is working, open all the cans and dump into slow-cooker; add the seasonings; stir to mix.
- When meat is browned and onions are transparent or golden brown, add the green pepper, cook 1-2 more minutes; then add to the bean mixture; mix well.
- Cook on high for 3-4 hours; medium for 4-6; low for 6-8 hours.
- Serve with corn/tortilla chips in bottom of bowl, chili next, and cheese sprinkled over the top; onions & sour cream optional.
- NOTE: This is actually even BETTER as leftovers!
CHILI, PLAIN AND SIMPLE BUT DARN GOOD
This is plain and simple but makes a wonderful chili, you may add in other ingredients if desired, my family likes this topped with cheddar cheese and sour cream then served with recipe#105726 --- I strongly suggest to make this 1-3 days ahead the flavors will intensify and ripen, you will really notice a difference in flavor if made ahead --- all amounts may be adjusted to taste.

- In a large pot brown the ground beef with onion and green bell pepper until no longer pink; drain all fat.
- Add in garlic, oregano and chili flakes; cook stirring until browned (about 12-15 minutes, for the best flavor the meat must be slightly browned).Add in chili powder and cumin; cook stirring for 2 minutes.
- Add in stewed tomatoes, tomato sauce and seasoned salt; bring to a boil over medium heat stirring.
- Reduce heat to low and cook uncovered for 1-1/2 hours stirring occasionally.
- Stir in the beans with their liquid and continue to cook for another 30 minutes, stirring occasionally.

- Crock Pot Cooking Instructions: Transfer ground beef mixture to a 5 or 6 quart crock pot then add the rest of the ingredients and stir to combine (can be done ahead of time. Store in the refrigerator until ready to start cooking.) Place a lid on top then cook on low for 4-6 hours.

- Heat a large soup pot or Dutch oven over medium-high heat. Add ground beef, onion or shallot, and garlic, season with salt and pepper, then cook until ground beef is cooked through. I like to keep the beef in bigger chunks versus breaking it up finely to give the chili extra texture.
- Add remaining ingredients then turn heat up to high to bring chili to a bubble. Turn heat down to medium-low then simmer for 20 minutes, stirring occasionally and skimming off any excess fat that may rise to the top. Scoop chili into bowls then serve with toppings.
- To freeze: Cool chili completely then scoop into a Ziplock freezer bag and freeze flat. Thaw for 24 hours in the refrigerator then pour into a soup pot or Dutch oven and warm.

- For the stovetop: Heat a large soup pot or Dutch oven over medium-high heat then add ground beef and onion and saute until cooked through, breaking beef up as it cooks. Add remaining ingredients, except toppings, then turn heat up to high to bring to a boil. Place a lid on top then turn the heat down to medium-low and simmer for 30 minutes, stirring occasionally. Taste then add more taco seasoning if desired, and then serve with toppings.
- For the crock pot: Heat a large skillet over medium-high heat then add ground beef and onion and saute until cooked through, breaking beef up as it cooks. Drain if necessary then add meat to a 6 quart crock pot with the remaining ingredients, except toppings, and stir to combine. Cook on low for 6 hours then serve with toppings.
