Steps:
- Preheat oven to 350ºF. Line a baking sheet with parchment paper and set aside.
- Place oats into a food processor and blend for 15-20 seconds to lightly pulverize, shredding them into smaller pieces. If you're using quick cooking oats, omit this step.
- Add oats, flour, baking powder, cinnamon, and salt to a bowl and mix well. Set aside.
- Using a standing mixer, cream butter and brown sugar together on medium/high speed until light and fluffy.
- Scrape the sides of the bowl and then turn the mixer on low speed and slowly add the maple syrup to the butter and sugar. Beat on medium/high until light and fluffy.
- Add egg and continue mixing. Scrape the sides of the bowl, add vanilla, and mix until light and fluffy.
- Slowly add dry ingredients (everything but the chocolate chips) to wet ingredients, 1/4 cup at a time, mixing on low. Last, fold in mini chocolate chips.
- Place the cookie dough in the refrigerator for 30 minutes to harden and to allow the flour in the cookie dough to hydrate.*
- Using a tablespoon cookie scoop, roll dough into ball and slightly flatten between your palms. Place on cookie sheet and bake for 8-10 minutes.
- Remove cookies from oven, let cool, and enjoy!

WHOLE WHEAT OATMEAL AND CHOCOLATE CHIP COOKIES
I modified this Betty Crocker recipe, and I was surprised by the rave reviews other adults gave it! My friend Darlene asked me for the recipe, so I thought I'd share with all... The whole wheat pastry flour gives it some fiber, without making it as overbearing as regular whole wheat flour.

Steps:
- Preheat oven to 375°.
- Use a mixer to beat butter/shortening in a large mixing bowl; add sugars, baking powder and baking soda, and blend well.
- Add eggs (or egg replacer) and vanilla, mixing until combined.
- Finally, mix in the flour, and gradually add the oatmeal and lastly the chocolate chips.
- If the mixture forms individual dry clumps, try adding a little water (I had that problem when I used egg replacer).
- Roll dough into tablespoon-sized balls, and place about 2-inches apart on a cookie sheet (I highly recommend the insulated sheets, or use two sheets layered on top of each other with the cookies on the top sheet).
- Bake for 10-12 minutes until the tops are brown.
- Let sit for several minutes before removing to cool on a wire rack.

SNEAKY WHEAT CHOCOLATE CHIP OATMEAL COOKIES
A slightly higher fiber version of Choc. Chip Oatmeal Cookies (Recipe #65568). I like to add half wheat flour for higher fiber, more whole grains, and to make them more satisfying. That way I eat less at a time!

- In a medium bowl, combine oats, whole wheat flour, cinnamon, baking soda, and salt. Set aside.
- In large bowl, using stand mixer with paddle attachment or electric hand mixer, cream together sugars with softened butter and coconut oil. The coconut sugar takes a little longer to cream with the oil and butter, so make sure to cream about 1-2 minutes, until coconut sugar crystals are less noticeable. (do NOT use melted oil and butter). Next add in egg and vanilla until combined.
- Add dry oat and flour mixture to large bowl of wet ingredients and combine until dough comes together. Using large wooden spoon, add in chocolate chips. (Or use stand mixer paddle)
