GROUND BEEF GOULASH
Easy and filling meal perfect for freezing. Goes great with salad and brownies.

Steps:
- Heat a large skillet over medium heat. Cook and stir beef, onion, and red bell pepper in the hot skillet until browned and crumbly, 7 to 10 minutes; drain and discard grease.
- Transfer beef mixture to a slow cooker; add beef broth, potatoes, carrots, ketchup, Worcestershire sauce, garlic, paprika, hot sauce, and salt. Stir the mixture, making sure the potatoes remain submerged in liquid.
- Cook on Low for 4 hours.

LOW FAT GOULASH
This is another passed down family recipe. A favorite of Northerners and, with a few tweaks, lower in fat.

Steps:
- Brown onions in margarine in a large skillet. Add ground turkey and brown.
- While this is cooking, cook macaroni according to directions.
- Drain and rinse the turkey and mix in seasonings. Drain the macaroni. Place both in large skillet.
- Add all the ingredients using only 1/2 the can of tomatoes until it cooks a little while. Add the rest and simmer 15 minutes.

LOW-FAT BEEF GOULASH
A real comfort food. Serve this with freshly boiled rice/pasta or even mashed potatoes. 3 WW points per serving. (From WW cookbook) This dish freezes really well, you can make extra for those lazy nights. Since this goulash is low in fat, there's no addition of sour cream/cream to thicken it up. If you like it very thick, simmer with some chopped potatoes for longer time or use 1 1/2 tsp cornstarch dissolved in 2 TB cold water to thicken up.

Steps:
- Heat oil in a skillet, and fry onion until softened.
- Add steak and cook for a few minutes.
- Stir in paprika, add bay leaves, wine, tomatoes and stock.
- Bring to boil.
- Season to taste, then simmer for 1 hour or so (until the meat is tender).
- Garnish with chopped parsley before serving.

Steps:
- Melt lard in a pot over high heat. Add onions; cook and stir until browned, about 15 minutes. Remove pot from heat, add paprika, and stir quickly to combine with onions and prevent burning.
- Add meat to the pot and place over high heat. Cook and stir until browned on all sides, 5 to 10 minutes. Season with salt and pepper. Add tomato paste and stir to combine. Add water, garlic, and cumin. Reduce heat to low and cover the pot. Cook, stirring occasionally, until meat is very soft, at least 1 1/2 hours. Stir in marjoram and cook another 10 minutes.

I got the original recipe from The American Heart Association recipe collection but I changed it up a little to make it better suited for what I wanted.

- Cook macaroni according to package directions, omitting salt.
- Drain and set aside.
- Brown ground beef with mushrooms, onion, peppers and garlic.
- Pour off fat.
- Add remaining ingredients.
- Simmer gently for 15 minutes.
- Add cooked macaroni.
- Simmer for 10 minutes.
- Serve.
