PIZZA BAKED POTATO
This budget-friendly supper combines two favourites in one dish. Top your jacket spuds with cheese, tomato, pepperoni and basil

Steps:
- Heat oven to 200C/180C fan/gas 6. Scrub the potatoes and dry well, then prick several times with a fork. Bake directly on the oven shelf for 1-1½ hrs, until they feel soft. If you are short of time, prick each potato with a fork, wrap in a sheet of kitchen paper and microwave on High for 8-10 mins until soft inside.
- While the potatoes cook, heat the oil in a small pan and sauté the onion for 5 mins to soften. Stir in the garlic and pepperoni, and cook for 1-2 mins, then add the chopped tomatoes. Bring to the boil, then simmer for 5 mins. Season and stir in half the basil. Spoon over the split potatoes and top each one with a good handful of cheese and the rest of the basil.

SNEAKY PIZZA BAKED POTATOES
Shhh ... we'll never tell. Our Sneaky Pizza Bake Potatoes with pepperoni, pizza sauce and mozzarella cheese hide a full serving of cauliflower.

- Heat oven to 400°F. Scrub potatoes; rub skins with oil. Pierce potatoes several times with fork to allow steam to escape. Bake on top oven rack 40 minutes or until tender.
- Meanwhile, cook cauliflower in large pot of boiling water until very soft and tender; drain. Reserve 12 slices pepperoni; chop remaining pepperoni. Set aside.
- When potatoes are cool enough to handle, cut thin slice off top of each potato. Gently scoop out potato pulp, leaving 1/4-inch shell; place pulp in large bowl. Add cooked cauliflower, chopped pepperoni, pizza sauce and 1/2 cup of the cheese. Beat with electric mixer on medium speed until well blended. Spoon mixture into potato shells.
- Place potatoes on ungreased cookie sheet. Sprinkle with remaining 1/4 cup cheese. Top each with 3 slices reserved pepperoni.
- Bake 15 to 20 minutes or until hot and cheese is bubbly. Garnish with lettuce.

ROASTED PIZZA POTATOES

- Preheat the oven to 400 degrees F.
- Arrange the potatoes in a 9-by-13-inch baking dish and season with the dried oregano and a good pinch of salt. Drizzle with the oil and toss to coat with your fingers. Roast for about 1 hour. (I went 1 hour and 10 minutes, just for extra browning.)
- Remove the potatoes from the oven and switch the oven to broil.
- Sprinkle the grated cheese over the potatoes and arrange the pepperoni in a single layer over the cheese. Broil for 2 to 3 minutes; don't take your eyes off it (see Cook's Note)! This happens fast, and all we want is browning and bubbling, and for the pepperonis to crisp and curl. Serve immediately with pizza sauce and a sprinkle of parsley or chives!
PIZZA STUFFED BAKED POTATOES
Found this in a magazine and adapted it to fit my taste. It's so versatile that these can be made to suit any taste or to use whatever you have on hand.

- Preheat oven to 350 degrees. Scrub the potatoes well and pierce with a fork. Rub the potatoes with oil. Bake 1 hour or until tender. Allow to cool enough to handle.
- Cut the top 1/4 off the potato and scoop out some of the potato.
- Heat the broiler.
- Combine the Italian seasoning and pizza sauce and divide among potatoes. Top with desired toppings. Sprinkle each potato with 1/4 cup of cheese.
- Place the potatoes under the broiler and melt the cheese.

EASY PIZZA POTATOES
Give the humble baked spud a makeover with this easy pizza potatoes recipe. They are simple to make and take barely any active time to cook.

- Preheat oven to 375˚F. Place one baking rack in the center of oven, with the other rack just below it.
- Pierce the potatoes a few times, using a sharp knife. Rub the potatoes evenly with olive oil. Season the outside with salt. Place potatoes directly on the middle rack. Place a baking sheet underneath the potatoes on the second rack.
- Bake for about 1 hour, or until they can be pierced easily with a fork. The exact baking time will depend on the size of your potatoes.
- Remove from oven and let cool for 5 minutes, until they can be handled safely. Leave the oven on.
- While potatoes cool, if using sausage, roughly chop links into 1-inch pieces. Heat the sausage according to package directions. I prefer to warm mine in a skillet over medium-high heat, but you can also warm in the microwave.
- Slice each potato down the center and gently push inward from each end to open. Place potatoes cut side up in a 9-by-9-inch baking dish.
- Add 1/3 cup of chopped warm sausage to each potato, if using, as well as whatever other toppings you would like to use, for a max 1/2 cup filling each.
- Spoon 1/4 cup sauce over each potato, then sprinkle with 1/4 cup cheese. Place pan in the oven and bake another 5 minutes, or until cheese is melted. Serve warm.

MY TAKE ON SNEAKY ORANGE PUREE
This is from the Sneaky Chef's recipe but I have added a little more to it. It's still orange! and so nutritious you will want to put it in almost everything! Try it in macaroni and cheese, grilled cheese sandwiches, meatloaf, spaghetti sauce, pizza sauce, throw it in with spaghettios! The options are endless. And have fun putting extra nutrition in your kids(and adults) food! :) In the summer you could sub yellow summer squash(1 med. or 2 small), use it raw and put in the food processor with the other veggies.

- Cut the squash in half and remove seeds and membranes. You may bake the squash at 400*F. for about 1/2 hour or till tender. Or you can microwave in a microwave safe dish with a tbls. or two of water for about 8-10 minutes. Pierce with fork to check if done. Or if you wish, peel squash, cut in chunks and boil with carrots and sweet potato.
- In a medium pot, cover carrots and sweet potatoes with cold water and boil for about 20 minutes until yams, and especially carrots, are very tender. If the carrots aren't completely cooked, they will leave little nubs, so make sure it's smooth.
- Drain the sweet potatoes and carrots(and squash if using) and put them in the food processor with two tbls. of water. Puree on high until smooth, no chunks should remain. Stop occasionally to push the mix from the top to the bottom. If you need to, add more of the water to make a smooth puree, but the less water the better.
- This makes about 3 cups of puree. Double the recipe if you want to store more puree. Keep in the fridge up to 3 days, or freeze 1/4 cup(or 1/2 cup) portions in sealed plastic bags or small plastic containers.
