Steps:
- Preheat oven to 350°.
- In a mixing bowl, combine the egg, parmesan cheese, Italian seasoning, cottage cheese, and 1 cup mozzarella cheese; set aside.
- In a large skillet, brown the beef, onion, and garlic together until the beef is done; drain excess grease.
- Add water and all but 1 cup of spaghetti sauce to beef.
- Spread reserved spaghetti sauce into the bottom of a greased 13x9 inch pan.
- Layer 5 to 6 lasagna noodles over the sauce, overlapping or breaking to fit.
- Spread half the cheese mixture over the noodles.
- Spoon a third of the beef mixture over the cheese layer.
- Repeat layers once.
- Add one more layer of 5 to 6 noodles and spoon remaining third of beef mixture over the top.
- Cover and bake 50 minutes.
- Sprinkle remaining mozzarella cheese over the top.
- Let stand 5 minutes before serving.

- In a Dutch oven, cook beef over medium heat until no longer pink. Meanwhile, cook vegetables according to package directions; drain. Finely chop the vegetables; place in a bowl. Stir in eggs and cottage cheese; set aside., Drain beef; stir in spaghetti sauce. Spread 2 cups meat mixture into a greased 13x9-in. baking dish. Top with 4 noodles. Spread half of the vegetable mixture to edges of noodles. Layer with 2 cups meat mixture and 1 cup mozzarella cheese. Top with four noodles, remaining vegetable mixture and 2 cups meat mixture. Layer with remaining noodles, meat mixture and mozzarella cheese., Cover and bake at 375° for 50 minutes or until a thermometer reads 160°. CLASSIC LASAGNE
Prepare this easy lasagne ahead of time and save in the freezer, uncooked, for when you need it during a busy week. Then just bake for an extra 45 mins.

- To make the meat sauce, heat 2 tbsp olive oil in a frying pan and cook 750g lean beef mince in two batches for about 10 mins until browned all over.
- Finely chop 4 slices of prosciutto from a 90g pack, then stir through the meat mixture.
- Pour over 800g passata or half our basic tomato sauce recipe and 200ml hot beef stock. Add a little grated nutmeg, then season.
- Bring up to the boil, then simmer for 30 mins until the sauce looks rich.
- Heat oven to 180C/fan/160C/gas 4 and lightly oil an ovenproof dish (about 30 x 20cm).
- Spoon one third of the meat sauce into the dish, then cover with some fresh lasagne sheets from a 300g pack. Drizzle over roughly 130g ready-made or homemade white sauce.
- Repeat until you have 3 layers of pasta. Cover with the remaining 390g white sauce, making sure you can't see any pasta poking through.
- Scatter 125g torn mozzarella over the top.
- Arrange the rest of the prosciutto on top. Bake for 45 mins until the top is bubbling and lightly browned.

SNEAKY LASAGNA
I call it sneaky because my guy claims that he HATES zucchini. One day I had just one lonely zucchini and snuck it in there. He LOVED it, although he was a little upset when I told him what was in it. But hey every time I make it he eats it like it is the best thing he has ever tasted.

- 1. pre-heat oven to 375
- 2. cook the lasagna noodles according to the box. Drain
- 3. cook ground meat, onion, celery, and bell peppers until meat it browned. drain and rinse.
- 4. In a medium bowl mix the ricotta cheese, 2 cups of the italian cheese, 1/2 of the parmesan cheese, parsley flakes, italian seasoning,eggs, and salt and pepper together untill smooth.
- 5. in a 9x13 baking dish spread 1/3 c of the sauce on the bottom.
- 6. combine meat mixture with the remaining sauce.
- 7. layer 4 noodles and told with the remaining cheese mixture, zucchini, and half the remaining sauce
- 8. layer 4 more noodles to with remaining sauce and sprinkle the rest of the parmesan cheese. Then finish with the last 2 cups of the italian cheese.
- 9. cover the baking dish the place on a foil lined cookie sheet.
- 10. bake for 1 hour. uncover and bake for another 20 minutes or until cheese is melty and brown
- 11. let stand for at least 20 minutes to cool

- Preheat oven to 375 degrees F (190 degrees C).
- In a skillet over medium heat, brown ground beef with onion; drain grease. Pour in spaghetti sauce and simmer 5 minutes.
- In a 9x13 inch baking dish, spread enough sauce and beef to cover bottom and put a layer of ravioli down end to end. Spread a layer of sauce and cheese just like you would with regular lasagna. Keep layering and finish with sauce on top.
