SMOTHERED CABBAGE
This is a great twist on traditional fried or smothered cabbage - taken from the Tony's Seafood of Louisiana website (who are quoting a Mulate's recipe). How can we go wrong? YUMMO!! My DH brought me a tee back from Mulate's when he was down helping recovery efforts after Hurricane Katrina - needless to say we love the region and the food - and now I can say I "perk" up a bit when I see Mulate's anywhere. I can't wait to get down there myself just to sample my way around the region! How DO I get one of those traveling shows myself? ;)--

Steps:
- In a large saucepan, brown sausage over medium heat.
- Add onion and saute for 3 minutes.
- Add cabbage and cover.
- Cook about 50 minutes, stirring occasionally.
- Uncover and add seasonings, cook 5 minutes more.
- Serve as a main dish over rice or as a side with some cornbread, of course. ;).

FRIED CABBAGE AND BACON WITH ONION
This is a fantastic comfort food recipe!One thing about comfort foods is that you can add a little of this and a little of that, to absolutely make it your comfort food. Feel free to add your special ingredient!

Steps:
- Cut the cabbage into quarters. Remove any wilted or discolored outer leaves. Cut out the core from the cabbge quarters. Cut into large 1-inch dice.
- Cook the bacon and onion in a 4-quart pan over medium heat until bacon is crisp, and the onion is wilted.
- Remove the bacon and onion to paper towels to drain. There should be about 1/2 cup of bacon drippings in the pan.
- Add the cabbage to these drippings and cook without stirring until it begins to brown, about 3 minutes.
- Add the water, sugar, salt and pepper and cook until the cabbage is tender, about 20 minutes.
- Crumble the cooked bacon into the cabbage and serve hot.
SMOTHERED CABBAGE
This down-home dish is a family favorite. The addition of a ham hock and pork shank add richness and a depth of flavor that can't be beaten. It's perfect for a holiday or everyday meal, and leftovers freeze well.

- Combine water, ham hock, and pork shank in a large pot. Bring to a boil, reduce heat, and simmer until meat is cooked through, about 2 hours. Drain and set meat aside to cool to room temperature, about 20 minutes.
- Remove meat from pork shank, chop into bite-sized pieces, and place in a bowl. Remove skin and meat from ham hock, chop into very small pieces, and add to the bowl, omitting skin if you prefer.
- Heat bacon drippings in a large skillet or Dutch oven over medium-high heat until hot, but not smoking. Add 1/4 of the cabbage to the hot skillet and saute until slightly wilted, about 3 minutes. Add 1/4 of the meat mixture. Add another 1/4 of the cabbage, cooking until slightly wilted, about 3 minutes, followed by another 1/4 of the meat mixture. Repeat until all cabbage and meat have been added. Season with salt and pepper. If mixture sticks to the skillet, add 1 to 2 tablespoons chicken broth.
- Slowly add remaining chicken broth to the cabbage-meat mixture in the skillet, give it a good stir, and reduce heat to medium-low. Simmer until cabbage is tender, 30 to 45 minutes.

- In a Dutch oven, melt butter over medium heat. Add onion and cook for 4 minutes, or until soft.
- Add cabbage, potatoes, broth, salt, pepper, and red pepper flakes.
- Cover, reduce heat to medium-low and simmer for 10 minutes, stirring occasionally.
- Remove lid and increase heat to medium-high. Cook until most of liquid has evaporated (about 12 to 14 minutes), stirring occasionally.

- Add Worcestershire, apple cider vinegar, garlic powder, & brown sugar.

- Heat the butter in a large cast iron pot or dutch oven over medium-high heat. Once the butter starts to shimmer, add the sliced onion and saute, frequently stirring until just soft, about 3 minutes. If using sausage, add it together with the onion. Add the rest of the ingredients, stir and bring to boil. Lower the heat to medium-low, cover and simmer until the potatoes are fork-tender, about 15 minutes, stirring occasionally.

- Place the smoked turkey into a large pot, and pour in 4 cups of water.
- Bring the water to a boil, and cook until the turkey is tender. At this time, there is very little liquid in the pot, but do not get rid of it (It's flavor baby!!)
- Next turn the heat off, and remove the turkey from the pot.
- Chop the turkey meat into bite sizes, then set to the side.
- Place the pot back on the stove top, and turn the heat to medium high.
- Add in the onions, and garlic then cook until they are translucent.
- Start adding in the cabbage, and stir.
- Cover the pot, and let the cabbage cook down some.
- Toss in the smoked turkey meat, and sprinkle in the creole seasoning and black pepper.
- Stir everything, place the lid on the pot, and let the cabbage cook down for 5 minutes.
- Remove the lid from pot, and stir the cabbage. Place the lid back on pot.
- Cook the cabbage until it's nice and tender.
- Serve and enjoy!
SMOTHERED CABBAGE WITH BACON
Smothered cabbage is really simple to make, just cook up some bacon, use that bacon grease to saute your onions and peppers in and add the cabbage, a little broth and apple cider vinegar and that's it.

- In a large skillet, heat about 2 tablespoonfuls of olive oil over medium heat, add bacon and fry until crispy. Remove bacon from pan and drain on paper napkin.

- Cut out the cabbage's core and use a food processor or a knife to shred the cabbage leaves. (I remove the outer layer of cabbage leaves first and discard them before chopping.)
