SMOKY CHICKEN, BEAN & KALE STEW



Smoky chicken, bean & kale stew image

Enjoy this chicken, bean and kale one-pot for a hearty family stew with a smoky paprika flavour. Serve with some crusty garlic bread to soak up the juices

1 tbsp olive oil
8 boneless and skinless chicken thighs
80g cubed pancetta or smoky bacon lardons
1 large red onion
4 garlic cloves
2 tsp smoked paprika
2 bay leaves
1 tbsp red wine vinegar
2 x 400g can plum tomatoes
1 tsp caster sugar
1 chicken stock cube
400g can cannellini or butter beans, drained
100g kale, stripped from the stalk and roughly chopped
garlic bread, to serve
drizzle of extra virgin olive oil (optional)

Steps:

  • Heat the oil in a large casserole pan. Tip in the chicken and cook for a few minutes each side until golden brown - do this in batches so you don't overcrowd the pan. Remove the chicken and set aside.
  • Put the pancetta in the pan and cook for 5 mins until starting to crisp. Push to one side and add the onion, cooking until softened, about 8 mins. Stir in the garlic and cook for another 1 min.
  • Add the paprika, bay, vinegar, tomatoes and sugar, then crumble in the stock cube. Add two cans full of water (800ml), season well and return the chicken to the pan. Cover and simmer over a low heat for 30 mins - bubbles should only break the surface now and then.
  • Uncover the pan and cook for another 30 mins until the stew has reduced to a rich broth. The tomatoes should have brokendown by now, but if they're still quite chunky, squash them with the back of a wooden spoon. Use two forks to pull apart the larger chunks of chicken.
  • Stir the beans and kale into the stew, cover with a lid and cook for 5 mins to wilt the kale and heat the beans through. Serve in deep bowls with chunks of garlic bread and a drizzle of good extra virgin olive oil, if you like. To freeze the stew, leave to cool completely, then transfer to a freezerproof container. Will keep for up to three months. Defrost thoroughly, then reheat until piping hot.

One day, I was wondering what special dessert I could make out of our usual food or ingredients we can find from the very usual humble kitchen of ours. Then my sister exclaimed - "Milo!". She is a milo addict for sure, and that reminds me of a colleague too. Well, I finally managed to get a recipe on hand, with twist on the normal chocolate cookies as I replaced the cocoa powder with milo powder. But they tasted great!

125 g butter
1 cup caster sugar
1 1/2 cups self-rising flour (sifted)
1/2 cup milo (Not the 3-in-1)
1 egg (beaten)
1/2 cup hazelnut kernels, chopped (optional)

Steps:

  • Preheat oven on 180.
  • Cream butter & sugar together.
  • Add egg & milo. Mix well.
  • Add self-rising flour in slowly while blending to prevent clumps forming.
  • Bake 180 for 15mins. Cookies will doubled in size whilst baking (No worries!). It will fall back after cooled.
  • Allow cookies to cool on rack for 10mins before removing & Serve!

I am a single mom who is constantly trying to find things that my son will like and I can afford. I was wondering around my kitchen this evening and pulled out random things and whipped this up. It's pretty tasty! Great for left overs!

4 tablespoons pizza sauce (spaghetti sauce works just as well)
1/4-1/2 cup cheddar cheese (I had mild cheddar on hand)
1 1/2 cups cooked chicken (again, another left over!)
1 (6 1/2 ounce) can mushroom stems and pieces
1 (8 ounce) Pillsbury Crescent Recipe Creations refrigerated flaky dough sheet

Steps:

  • Preheat oven to 350 degrees.
  • Cut or shread chicken into small pieces.
  • On a cookie sheet, unroll the Recipe Creation dough.
  • Spoon pizza/spaghetti sauce onto the dough and spread evenly over all of the dough.
  • Even layer the mushrooms, chicken and cheese.
  • Start rolling the dough over itself from one of the longest sides. When you roll it approximately half way, take the other edge and overlap it to create a complete "log".
  • Bake at 350 degrees for 15-20 minutes.

This is a riff on a dish I had at a restaurant. I was wondering how I could combine alder-smoked Romas, hot pimenton and saffron to play off the taste of caramelized onions and red pepper strips. Then add the earthy taste of portobello mushrooms to pull it together. Dry vermouth is wonderful in this rather than white wine. Really pulls the flavors together. It turned out better than I thought it could. DS2 says it is "delectable." LOL Try it and let me know what you think. The prep. time includes the brining period for the chicken. Thanks

2 quarts water
1/2 cup kosher salt
1/2 cup turbinado sugar
1 tablespoon vegetable stock base
6 large boneless chicken breasts, with skin on
2 large white onions, peeled and sliced very thin
2 large red bell peppers, seeded and sliced in thin strips
6 garlic cloves, peeled and minced
8 saffron strands or 1/8 teaspoon saffron
2 tablespoons hot pimiento powder
1/4 teaspoon ground cinnamon
1 cup pinot grigio wine
olive oil
4 portabella mushroom caps, sliced thinly
1 lb roma tomato, alder smoked and peeled
1 lb roma tomato, seeded and finely chopped

Steps:

  • Mix brine ingredients and submerge chicken in the liquid. Allow about 30 minutes per pound for the brining.
  • The smoked tomato recipe is number 117225 or number 181924. Use a mild wood, I like alder for this recipe.
  • Combine all the tomatos in a bowl with the wine, garlic, cinnamon, saffron and pimenton. Mix well and cover until needed.
  • Remove chicken from the brine, dry well and brown thoroughly in a heavy pan using some of the oil.
  • Remove the chicken.
  • Scrape the pan bottom, add some more oil if needed and dump in the onions and pepper strips, stirring to coat. Add oil as necessary but don't get it mushy from too much. It will end up as grease when the dish is finished.
  • Caramelize the vegetables.
  • Keeping heat up, add the tomato mixture. Reduce heat to simmer and cover.
  • Simmer for about 30 minutes until the sauce has come together and reduced a bit.
  • Return the chicken to the sauce, covering the pieces as much as possible. Place the mushroom strips over the chicken.
  • Keeping heat very low, cover tightly and simmer until the chicken is fork-tender and the sauce is a consistency pleasing to you, anywhere from very thick to thin, it's your call. (If you are serving this with rice, thinner is better. If it's a stand-alone with oven roasted potatos or something like that, make it thick so the sauce clings to the meat.).
