Easy BBQ beans image

Quick, simple and packed with goodness, try these beans as part of a pick-and-mix Mexican supper

1 tbsp olive oil
1 onion , thinly sliced
2 garlic cloves , chopped
1 tbsp white or red wine vinegar
1 heaped tbsp soft brown sugar
400g tin pinto beans , drained and rinsed
400ml tub passata
1 tsp Worcestershire sauce or vegetarian alternative (optional)
small bunch coriander , chopped

Steps:

  • Heat the oil in a small pan. Fry onion until starting to brown, then add garlic and cook for 1 min. Add vinegar and sugar and cook until onions are caramelised. Stir in beans, passata, Worcestershire sauce (if using) and seasoning and simmer for 10-15 mins until thickened. Stir through coriander and serve.

Spicy Baked Beans image

Tangy and sweet old-fashioned baked beans with a little jalapeno. They're easy to make and great at a BBQ, hamburger night, a picnic, etc. My husband's favorite semi-homemade recipe. Says the sweetness and fire create a super depth of flavor. It's not strong enough to overwhelm the sweet home-style of baked beans.

4 slices bacon, or more to taste, cut into bite-size pieces
1 small onion, chopped
2 (28 ounce) cans baked beans
½ cup ketchup
½ cup brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons prepared yellow mustard
2 tablespoons minced jalapeno pepper
1 tablespoon chili powder
1 tablespoon mustard powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir bacon in a large skillet over medium-high heat to render some fat, 2 to 3 minutes. Stir onion into the rendered fat and cook until the bacon is crisp and the onion is tender, 7 to 10 minutes.
  • Stir baked beans, ketchup, brown sugar, Worcestershire sauce, prepared mustard, minced jalapeno pepper, chili powder, and mustard powder together in a large bowl; add bacon mixture and stir. Pour the mixture into a 13x9-inch baking dish.
  • Bake in the preheated oven until the liquid has thickened, 45 to 55 minutes.

  • In a large pan, add olive oil over medium-high heat then add in the diced smoky bacon, frequently stirring and cooking until crispy. Remove from pan and drain on a paper towel-lined plate. Reserve Bacon for later.
  • Keep the bacon drippings and add in the diced onions, all of the peppers, and minced garlic, sautéeing until onions are translucent.
  • Add the drained beans to the sautéed veggies, along with the BBQ sauce, brown sugar, mustard, salt, pepper, and liquid smoke, and half of the crispy bacon, mixing well.
  • Turn the heat down to low and continue to cook, stirring occasionally, for at least 1 hour, but best if it can be simmered for 2 - 3 hours for incredible flavor.
