SMOKIN' POTATO SALAD

Steps:
- Preheat a grill to medium. Oil the grill grates well.
- Slice the potatoes lengthwise about 3/4 inch thick. Place the potatoes in a bowl and add 2 tablespoons canola oil, the paprika and 2 teaspoons each salt and pepper. Toss to coat.
- Place the potatoes on the grill, cover and cook 5 minutes, then rotate them 90 degrees F and cook 5 to 10 more minutes. Flip the potatoes and repeat on the other side. They should be slightly puffed and golden brown. Remove and allow to cool completely. Dice into 3/4-to-1-inch pieces.
- In a large glass bowl, combine the diced potatoes, celery, red onion and cilantro. In a medium glass bowl, combine the sour cream, mayonnaise, mustard, 1 teaspoon salt, 2 teaspoons pepper, the capers and lemon juice. Adjust the salt as needed.
- Fold the mayonnaise mixture into the potato mixture until coated. Cover and refrigerate 20 to 30 minutes. Stir and adjust the seasoning as needed.
HIDDEN VALLEY RANCH CHICKEN
I got this recipe from the back of a bottle of Hidden Valley Ranch Dressing. It's simple to make (a must for me) and tasted delicious. I lost the recipe but from memory, here it is.

- Rinse and pat dry chicken breasts.
- In a small dish or on a plate, combine the Ranch dressing and the flour. Dip each breast in the mixture until well coated.

- 1. In large skillet heat about 1/4 cup olive oil on medium heat.
- 2. Slice chicken breasts in half creating 6 pieces, season with salt and pepper.
- 3. In small bowl combine egg and dressing, beat.
- 4. In additional small bowl combine ground granola and bread crumbs, season with salt and pepper.
- 5. Dip each chicken breast into egg/ranch then coat in granola/bread crumbs, covering completely.
- 6. Add to skillet and brown on each side until done.
- 7. squeeze lemon juice over top of chicken.
- 8. Serve on top of fresh spinach, dressing and favorite salad ingredients.

SMOKY CHICKEN SALAD

- Preheat a grill to high. Toss the chicken with 1 tablespoon olive oil, the paprika, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Grill the chicken until marked and cooked through, about 7 minutes per side. Let cool slightly, then thinly slice.
- Meanwhile, make the dressing Combine the garlic and the remaining 3 tablespoons olive oil in a small microwave-safe bowl; microwave until the garlic is softened, about 1 minute. Transfer the garlic and oil to a blender; add the 2 whole piquillo peppers and puree until smooth. Transfer to a bowl and whisk in the mayonnaise, lemon juice and 2 tablespoons cilantro; season with salt and pepper.
- Divide the sliced chicken among the lettuce leaves; drizzle with the dressing. Top with the celery, almonds, the remaining sliced piquillo pepper and 1 tablespoon cilantro.

- Layer first 8 ingredients, one at a time, in a large glass bowl so you can see each layer.
- Mix the dressing ingredients together and pour evenly over the salad in the bowl.
- Add a layer of cheese, then a layer of bacon.
- Chill overnight.
- To serve using tongs go straight down into the salad to get all the layers.
- Optional:.
- Make in individual margarita glasses. I would shred the lettuces for ease for eating out of the glass. It`s a nice way to use leftover ingredients from the main salad as well. This way you can bring the trifle to a pot luck and have two for home. ;).

- Preheat oven to 400 degrees F.
- If using a pizza stone, preheat the stone while preheating the oven.
- Prepare dough according to package directions.
- Transfer dough to baking sheet or if using pizza stone, continue with directions.
- Combine Hidden Valley Ranch and Greek Yogurt; set aside.
- Heat oil in a large skillet over medium-high heat. Add chicken tenders, garlic and pepper and saute until golden brown, about 10 minutes. Add mushrooms and spinach and saute till mushrooms are soft. Remove from heat. When chicken is cool enough to handle, dice chicken to yield a little over 1 cup. In a small bowl, toss chicken, with 2 tablespoons of Hidden Valley Ranch mixture. Set aside.
- Measure one cup Hidden Valley Ranch Mixture and spread evenly over pizza crust. Distribute chicken, mushrooms, and garlic over entire pizza surface. Add the cheeses.
- Using a pizza peel, transfer the pizza to the stone that has preheated in the oven.
- Cook for 20 min or until crust is golden brown and cheese is bubbly.

AJIACO BOGOTANO (CHICKEN AND POTATO SOUP, BOGOTA STYLE)
Ajiaco is a typical dish in Colombia. It has a lot of potatoes since Bogota is in the mountains and potatoes are plentiful. This recipe calls for yucca which can be found in the produce section or frozen (Goya). If you cannot find it, just use Yukon gold potatoes, both will all but disintegrate and thicken the broth. Corn on the cob is cut into 1 inch rounds and thrown into the soup. They are easier to cut if you rotate the corn, eventually the cob will break. Once you remove the cover, you'll get a burst of sweet corn aroma. An avocado half is served either on the side, so you can take a spoonful of avocado and dip it in the soup.

- In a large skillet, brown chicken (seasoned with salt and pepper) in oil then add to Dutch oven or pressure cooker.
- Put potatoes, yucca and corn in pot and season with salt and pepper and cayenne, if using; pour chicken stock into pot.
- Meanwhile, cook onions and garlic in skillet until onion is translucent, about 5 minutes.
- Pour in 1 cup water and loosen the bits stuck to the bottom; pour all into pot.
