Steps:
- Place an oven rack in the center of the oven. Preheat the oven to 325 degrees F.
- For the rub: In small bowl, combine the sugar, chili powder, smoked paprika, salt and pepper.
- Pour the beef broth into a 9- by 13-inch baking dish. Using a paring knife, score the surface of the meat all over. Massage the rub into the meat. Cover the dish tightly with foil and roast until very tender, 3 1/2 to 4 hours, adding water 1/2 cup at a time if the roasting juices start to dry up.
- For the sauce: In a food processor, combine the garlic, celery, onion, tomato sauce, vinegar, maple syrup, mustard, smoked paprika, chili powder and salt. Blend for 1 to 2 minutes until smooth, scraping the side of the food processor bowl as needed with a spatula. Transfer the sauce to a medium saucepan. Bring the mixture to a simmer over medium heat. Cook, stirring occasionally, until thick, about 30 minutes.
- Brush 1/3 cup of the sauce over the surface of the brisket.
- Slice the brisket into 3/4-inch pieces and arrange on a serving platter. Serve the extra sauce alongside.
SMOKEY BBQ SAUCE
I have developed this sauce over a few years. The flavors develope a richer more flavorful sauce over the next day or so in the fridge. I always have everything on hand and takes no time to make. I keep an extra bottle in the fridge. If you want spicier, you can add some chopped jalapeno, or onion.

SWEET & SMOKEY BBQ SAUCE
Another variation to my tangy style BBQ sauce, I do like this sweet style sauce on ribs, pulled pork or even drizzled lightly on my pulled pork pizza just before it goes into the oven.

Steps:
- To make the sauce, combine the ingredients in a saucepan, then season. Bring to the boil and bubble for 3-4 mins until the sugar has completely dissolved and the sauce is glossy. Leave to cool. The sauce will keep in the fridge for up to two weeks or freeze for up to two months.
- Heat a barbecue until the coals are glowing white hot. Lay six of the sausages next to each other and push one stick through one end of all the sausages and the other stick through the other ends so the sausages look like a ladder (leave a gap between each sausage). Repeat with the other sausages in batches of six.
- Barbecue the sausages on each side until they are browned and cooked through, then brush with sauce and cook for a minute on each side until sticky-looking. Brush once more with the sauce before serving, and serve the rest of the sauce on the side.

SWEET AND SMOKY BARBEQUE SAUCE
Use this toward the end of cooking as you would for any BBQ meat such as pork, ribs, or chicken. I have even used it on beef and hamburgers, sausages, hot dogs, or anything you want, for the most part. I use it on everything from ribs to roasts to hamburgers to hot dogs. Even goes good with a good old classic grilled cheese sandwich. This is a great all-round BBQ sauce. Use right away or cool to room temperature, transfer to jars or containers, and refrigerate. The sauce will keep for several months in the fridge.

SMOKY APPLE BARBECUE SAUCE
This BBQ sauce is sweetened with apple butter instead of sugar. The liquid smoke and spices give it just the right heat without going overboard. It can be mixed right in the slower cooker if you're using it that way.

BBQ SAUCE WITH HOMEMADE LIQUID SMOKE
1890 Recipe for BBQ Sauce. In 1890, Master Chef's made their own Liquid Smoke. This sauce is usually served with the famous BBQ Veal/Lamb Spare Rib recipe which is found in my cookbook. This sauce and the recipe are presently being used by hotels in Las Vegas and the sauce is being used by a major franchise with restaurants in Las Vegas, Los Angeles, Dallas, Houston, etc. The sauce won a "Best of Las Vegas Award". The method for producing homemade Liquid Smoke from either Hickory, Apple or Mesquite wood is in the cookbook. Note: This recipe is from my cookbook which is located at my site www.gelb.com/gayninetiescookbook/
