Smoked Salmon 7-Layer Dip image

This recipe is a showstopping and grown-up version of everyone's favorite party snack-the 7-layer dip.

Categories     Bon Appétit     Appetizer     Dip     Salmon     Fish     Christmas     Hanukkah     Cream Cheese     Goat Cheese     Capers

Yield Serves 8

Number Of Ingredients 11

4 ounces cream cheese
2 ounces fresh goat cheese
3 tablespoons prepared beet horseradish
2 teaspoons finely grated lemon zest
1 pound hot-smoked salmon, skin removed, flaked, divided
2 large radishes, trimmed, finely chopped
1/3 cup finely chopped red onion
1/2 cup drained capers, chopped
3 tablespoons finely chopped chives
2 Belgian endives, leaves separated
Bagel chips or pumpernickel bread (for serving)

Steps:

  • Line a 6"-diameter ring mold, 6"-diameter cake pan or springform pan, or 16-oz. ramekin with plastic wrap, pressing it along the bottom and up the sides (you can also use a small bowl, but the layers won't be quite as even). Pulse cream cheese, goat cheese, horseradish, and lemon zest in a food processor until well combined and creamy.
  • Press a third of smoked salmon into an even layer across the bottom of mold. Spread half of cream cheese mixture evenly over salmon, smoothing surface with a rubber spatula.
  • Toss radishes and onion in a small bowl to combine, then scatter over cream cheese mixture and press down lightly into mixture. Top with half of remaining salmon, making an even layer, then scatter capers over. Spread remaining cream cheese mixture over capers and finish with a final layer of the remaining salmon. Cover dip with plastic wrap and chill at least 1 hour to let dip set and flavors meld.
  • Uncover dip and carefully invert onto a plate. Remove ring mold, then carefully peel away plastic. Top with chives. Serve with endives and bagel chips for spreading over.

Time P1DT5h30m

Yield 20 to 30 portions, depending o

Number Of Ingredients 5

1 cup kosher salt
1/2 cup sugar
1/2 cup dark brown sugar
1 tablespoon crushed black peppercorns
2 large salmon fillets or sides, pin bones removed

Steps:

  • In a bowl, mix together salt, sugar, brown sugar and peppercorns. Spread extra-wide aluminum foil a little longer than the length of the fish and top with an equally long layer of plastic wrap. Sprinkle 1/3 of the rub onto the plastic. Lay 1 side of the fish skin down onto the rub. Sprinkle 1/3 of the rub onto the flesh of the salmon. Place second side of salmon, flesh down onto the first side. Use the remaining rub to cover the skin on the top piece. Fold plastic over to cover then close edges of foil together and crimp tightly around the fish. Place wrapped fish onto a plank or sheet pan and top with another plank or pan. Weigh with a heavy phone book or a brick or two and refrigerate for 12 hours. Flip the fish over and refrigerate another 12 hours. Some juice will leak out during the process so make sure there's a place for the runoff to gather. Unwrap fish and rinse off the cure with cold water. Pat salmon with paper towels then place in a cool, dry place (not the refrigerator) until the surface of the fish is dry and matte-like, 1 to 3 hours depending on humidity. A fan may be used to speed the process. Smoke fish (see Note) over smoldering hardwood chips or sawdust, keeping the temperature inside the smoker between 150 degrees F and 160 degrees F until the thickest part of the fish registers 150 degrees. Serve immediately or cool to room temperature, wrap tightly and refrigerate for up to 3 days. Cook's Note: Trout, mackerel, and bluefish also smoke well.

SMOKED SALMON & LEMON RISOTTO

Smoked salmon & lemon risotto image

Inspired by a risotto from London restaurant Ooze, smoked salmon may sound expensive for a midweek meal, but is no more costly than cooking with red meat

Provided by Good Food team

Categories     Dinner, Main course, Supper

Time 25m

Number Of Ingredients 10

1 onion, finely chopped
2 tbsp olive oil
350g risotto rice, such as Arborio
1 garlic clove, finely chopped
1 ½l boiling vegetable stock
170g pack smoked salmon, three-quarters chopped
85g mascarpone lite
3 tbsp flat-leaf parsley, chopped
grated lemon zest, plus squeeze of juice
handful rocket

Steps:

  • Fry the onion in the oil for 5 mins. Add the rice and garlic, then cook for 2 mins, stirring continuously. Pour in a third of the stock and set the timer to 20 mins. Simmer, stirring occasionally, until the stock has been absorbed, then add half the rest of the stock and carry on cooking, stirring a bit more frequently, until that has been absorbed.
  • Pour in the last of the stock, stir, then simmer until cooked and creamy. Take from the heat and add the chopped salmon, mascarpone, parsley and lemon zest. Grind in some black pepper, but don't add salt as the salmon will be salty enough. Leave for 5 mins to settle, then taste and add a little lemon juice if you like. Serve topped with reserved salmon (roughly torn) and some rocket.

Categories     European

Time 1h

Yield 4 serving(s)

Number Of Ingredients 11

2 ounces butter
1 1/2 ounces flour
1 1/4 cups milk
3 eggs, separated
4 ounces smoked salmon, chopped
2 tablespoons dill, freshly chopped
1 pinch salt & freshly ground black pepper
4 tablespoons dry white wine
2/3 cup heavy cream
1 tablespoon dill, freshly chopped
1 pinch salt & freshly ground black pepper

Steps:

  • Melt the butter and brush 4 timbale moulds with it. Allow the butter to set and brush again. Add the flour to the remaining butter in the saucepan, cook for 1 minute
  • Remove from the heat, gradually add the milk stirring all the time.
  • Return to the heat and bring to the boil, stirring continuously. Simmer for 1 minute
  • Tip into a large bowl and leave to cool slightly.
  • Add the egg yolks, salmon and dill to the sauce, season with salt and pepper.
  • Whisk the egg whites in a clean bowl until stiff but not dry and fold into the salmon mixture.
  • Divide the soufflé mix between the prepared moulds and bake in a Bain Marie (roasting tin half filled with hot water) for 15-20 minutes.
  • Allow the soufflés to sink and cool down.
  • Run a knife around the edge of the moulds and turn the soufflés upside down onto an ovenproof dish.
  • Cover and set aside until you are ready to reheat and serve them. (Or, leave to cool completely and out in fridge over night if you are planning to eat them the next day.).
  • Meanwhile, make the sauce: put the wine into a small heavy pan and reduce, by boiling rapidly, to half its original quantity.
  • Add the heavy cream and chopped dill, season with salt and pepper.
  • Either pour over the soufflés and reheat for 15 minutes, or serve the sauce separately around the soufflé on the plate.
