This is a smoky twist on an old favorite.

Ingredients

1 (16 ounce) bottle zesty Italian dressing
3 yellow squash, cut into 1/2-inch pieces
3 zucchini, cut into 1/2-inch pieces
2 cups cherry tomatoes
1 bunch spring onions, minced
wood chips, soaked

Steps:

Mix Italian dressing, yellow squash, zucchini, cherry tomatoes, and spring onions together in a large bowl. Cover with plastic wrap; let marinate in the refrigerator for 2 hours.
Place a vegetable tray in a smoker and heat to 250 degrees F (121 degrees C) according to manufacturer's instructions. Add wood chips.
Transfer marinated vegetables to the tray, reserving excess dressing in the bowl.
Cook vegetables, basting every 20 minutes with 1/3 of the reserved dressing, until tender, about 1 hour.

This easy to prepare soup is the creation of sous-chef Carol McKenzie of the Sebanton restaurant in Longmont, Colorado. I found it in the RSVP section of a July 1987 issue of Bon Appetit. It seems like a perfect way to use up that surplus of squashes your summer garden produces!

Ingredients

1/4 cup olive oil
1 medium onion, thinly sliced
2 tablespoons minced shallots
1 1/2 tablespoons minced garlic
1/4 cup all-purpose flour
2 medium zucchini, sliced into 1/4-inch-thick rounds (about 1 1/2 cups)
2 large crookneck yellow squash, sliced into 1/4-inch thick rounds (about 1 1/2 cups)
3 cups rich chicken broth (preferably homemade)
3 cups whipping cream
2 teaspoons minced fresh basil
2 teaspoons minced fresh oregano
salt & freshly ground black pepper

Steps:

Heat oil in heavy large saucepan over medium-low heat.
Add onion,shallots and garlic and cook until onion is translucent,stirring occasionally, about 10 minutes.
Add flour and stir 3 minutes.
Add zucchini and crookneck squash and cook until softened, stirring frequently, about 5 minutes.
Stir in stock,heavy cream, basil and oregano.
Reduce heat and simmer 20 minutes.
Season with salt and pepper to taste and serve immediately.
Soup may be pureeed if a creamier texture is desired.

This is a very simple dish that my family really enjoys. When I was a little girl my mother always made it for us to enjoy. Any vegetable can be used to add to the potatoes. I usually use small red potatoes (then I use about 8 rather than 4), but any kind of potato can be used.

2 squash, sliced
2 zucchini, sliced
4 potatoes, cut in pieces
salt
pepper

Steps:

Put water in pot add potatoes.
Cook potatoes until a little soft.
Add vegetables and cook until desired texture of veges.
Olive oil or butter can be spread on top.
Salt and pepper to desired taste.
Since I am always watching my weight I do not put butter or olive oil on top only salt and pepper.
