SMOKED TURKEY SANDWICH

1 1/2 cups barbecue spice rub
One 3- to 4-pound boneless turkey breast
1/2 head green cabbage
1/4 head red cabbage
1 medium carrot
3/4 cup mayonnaise
1/3 cup sugar
1/4 cup white vinegar
1/8 teaspoon salt
1/8 teaspoon ground black pepper
3 cup fresh cranberries
1 cup sugar
1/2 cup orange juice
1 tablespoon barbecue spice rub
1 1/2 habanero chiles, finely chopped
Four 6-inch deli rolls
8 slices Swiss cheese
Barbecue sauce, for serving

Steps:

  • For the smoked turkey breast: Combine 1 cup spice rub and 2 gallons water in a large container, then add turkey breast to brine. Cover and place in refrigerator overnight.
  • Preheat a smoker for cooking at 200 degrees F.
  • Remove turkey breast from brine and pat dry. Rub with remaining 1/2 cup spice rub. Place in smoker and cook until it reaches an internal temperature of 150 degrees F, about 3 1/2 hours. Remove from smoker and let rest 15 minutes, then slice thin.
  • For the cole slaw: Meanwhile, thinly cut both cabbages and put in a medium bowl. Grate the carrot and add to the bowl. Add the mayonnaise, sugar, vinegar, salt and pepper and mix well.
  • For the gorilla berry habanero sauce: Add cranberries, sugar, orange juice, spice rub and habanero to a saucepan. Cook, stirring occasionally, over medium-high heat, about 20 minutes. Break down with an immersion blender.
  • For the sandwich: Cut open the rolls. Open and toast, with two slices of cheese on the top halves. When cheese is melted, remove from heat and add about 3 tablespoons Gorilla Berry Habanero Sauce to each roll bottom. Add turkey breast, barbecue sauce and 1/2 cup cole slaw to each. Close sandwiches, then cut in half and enjoy!

2 cups smoked turkey, meat-pulled
2 cups crushed pineapple with juice
1/2 cup diced onion
3 tablespoons minced garlic
1/2 cup mushroom (optional)
1/4 cup fresh parsley, chopped (garnish)
whole berry cranberry sauce (jellied cranberry sauce may be used, slice thin)
2 tablespoons curry powder, or1 cup Asian curry sauce (bottled)
mixed spring greens

Steps:

  • Sauté onions and garlic, add juice from pineapple to caramelize (lightly) add turkey heat through, add all pineapple,stir in sauce, let simmer till hot (may add extra to taste).
  • Serve over mixed spring greens, with baked sweet potatoes in jackets.

1 fresh whole turkey (15 to 17 pounds), patted dry with paper towels
Canola oil, for brushing
Kosher salt and freshly ground black pepper
1 cup chicken stock
2 tablespoons honey
2 tablespoons apple cider vinegar

Steps:

  • Remove the turkey from the fridge and allow to sit for 30 minutes to 1 hour before cooking.
  • Meanwhile, prepare a charcoal grill or smoker for indirect heat, at approximately 275 degrees F. Sprinkle in wood chips (such as hickory, apple or pecan wood) that have soaked in cold water for at least 4 hours and up to 48 hours, and allow them to char before cooking.
  • Place the turkey in a roasting pan fitted with a rack. Brush the entire turkey with the oil and season liberally with salt and pepper.
  • Place the turkey in the grill or smoker and cook for 45 minutes.
  • Meanwhile, mix together the chicken stock, honey and vinegar. Baste the turkey after cooking for 45 minutes. Repeat the basting every 45 minutes until the internal temperature of the thigh registers 165 degrees F and the breast registers 155 degrees F, about 3 1/2 to 4 1/2 hours, depending on the size of the bird.
  • Remove the turkey to a large cutting board and let rest for at least 20 minutes before carving.

There are countless advantages to smoke-roasting (also known barbecuing) your turkey, as in this recipe from the barbecue expert Steven Raichlen. Smoking produces a bird of incomparable succulence, especially when combined with another traditional American barbecue technique, brining. There is the rich, evocative flavor of wood smoke, and the burnished mahogany sheen it gives the bird. Then there's the simplicity of the method: once you put the bird in the smoker or on the grill, you pretty much leave it there until it is done, while the kitchen and oven are freed up for side dishes and desserts. Last but certainly not least, you get an excuse to spend a fall afternoon outdoors, maybe with beer in hand.

1 10- to 12-pound turkey, brined (see recipe)
2 tablespoons melted unsalted butter

Steps:

  • Set up an outdoor grill for indirect grilling, placing a large foil drip pan in center. (If using a smoker, light and set it up according to manufacturer's instructions and heat to 275 degrees. In a smoker, you will need to cook bird longer, 3 1/2 to 4 1/2 hours.)
  • Drain bird. Blot dry inside and out and truss if desired. Place in center of grill grate, over drip pan and between mounds of natural lump charcoal. Toss 1/2 cup of soaked wood chops on each mound of coals. Place lid on grill. Adjust vents to keep temperature between 325 and 350 degrees.
  • Grill turkey until darkly browned and cooked through, 2 1/2 to 3 hours. Baste turkey with melted butter after first hour and every hour thereafter. If skin starts to brown too much, loosely tent bird with foil. Use an instant-read thermometer to test for doneness; turkey is ready when internal temperature of the thigh is 180 degrees. Replenish charcoal every hour, adding 8 to 10 lumps of charcoal to each mound of coals and leaving grill uncovered for a few minutes to allow charcoal to light. After 1 hour, add 1 1/2 cups of soaked wood chips.
  • Transfer turkey to a platter, loosely tent with foil, and let rest for 10 minutes before carving. Reserve any drippings in drip pan for gravy.

This is an easy to make recipe. I've tried numerous others using colas, fancy pans, etc., but none come out near as good as this. Keeping it simple is the best way. Be sure to use a high-quality charcoal, so that it will burn for a long time. Turkey will be moist tender and smoky!

1 (12 pound) whole turkey, neck and giblets removed
1 (20 pound) bag high quality charcoal briquettes
hickory chips or chunks

Steps:

  • Place the charcoal into the bottom pan of the smoker. Light the coals and wait for the temperature of the smoker to come to 240 degrees F (115 degrees C). Lightly oil grate.
  • Rinse turkey under cold water, and pat dry. Place hickory chips into a pan with water to cover.
  • Place turkey onto the prepared grate. Add 2 handfuls damp chips at start of cooking, then a handful every couple of hours during the cooking process. Leave the lid on - DO NOT keep looking at the turkey, or you will let the heat out! Continue smoking until the internal temperature of the turkey reaches 165 degrees F (74 degrees C), or keep going until the coals die out.

  • Preheat whatever type of grill you are using for indirect smoking at 225 degrees F. If you're using gas, turn on half of the burners to medium-low and leave the other half off. If you are using charcoal, preheat your coals until just ashed over, dump them on one far side of your grill, and set the vents to about 25% open. If you are using a dedicated smoker, preheat your grill to 225 degrees F. Add the wood chunks or chips, if needed, to achieve a thin blue smoke.
  • Remove your defrosted turkey from the packaging. Remove the neck and giblets from the inside cavity of the bird. If your turkey has been brined, carefully rinse the exterior of the turkey with cold water. Pat the turkey down on all sides with a paper towel. Tie the legs together with butcher's twine and tuck the wing tips behind the shoulder joint.
  • Coat the exterior of the bird with olive oil or melted butter and then season on all sides with the Sweet Rub.
  • At 225 degrees F, you can plan on approximately 30 minutes per pound for your turkey to smoke. For example, this 15 pound turkey will take 7 and 1/2 hours at 225 degrees F. I always plan an extra 30 minutes, just in case.
