SMOKED SALMON & PEA FRITTATA
A great dish for the Spring, with the combination of smoked salmon and eggs giving this dish an interesting flavour.

Steps:
- Thickly slice the potatoes and cook in a pan of boiling salted water until just tender, about 10 minutes. Drain well and leave to cool slightly.
- Cut the salmon into wide strips. Crack the eggs into a bowl, beat with a fork until lightly foamy, then stir in the smoked salmon, dill, peas and plenty of salt and pepper. Finally, stir in the potatoes.
- Heat 3 tablespoons of olive oil in a large non-stick frying pan, carefully pour in the egg mixture and cook over a fairly low heat for 10-15 minutes, until the egg is starting to set just under the surface.
- Put a plate that is slightly larger than the top of the pan on top and invert the frittata onto it. Slide it back into the pan and cook for a further 5 minutes to brown the underside. Slide on to a plate and leave to cool for 5 minutes before cutting into wedges. A tomato and chive salad tastes very fresh with this.

- Cook pasta in salted boiling water.
- Cook, stirring until the pasta is"al dente".
- Drain the pasta and return it to the warm pot.

- Stir.
- Add salt and pepper to taste.
- Garnish with fresh dill.

Steps:
- Cook pasta in a large pot of boiling salted water until al dente, according to package instructions.
- Reserve 1/2 cup pasta water.
- Add onion to pot; immediately drain pasta mixture, and return to pot.
- Add cream cheese, dill, capers, and salmon to pasta.
- Toss, adding reserved pasta water a little at a time to create a thin sauce that coats pasta (you may not need all the water).
- Season lightly with salt and pepper.
- Serve.

- In a large pot of boiling salted water, cook pasta until al dente. Drain.
- Meanwhile, in a large skillet, combine cream and wine. Bring to a boil, add peas, and return to a boil.
- Reduce heat to medium and cook uncovered until sauce is slightly reduce and peas are tender, 2-3 minutes.
- Add scallions and dill to sauce and whisk in mustard. Add salmon and cook until fish is opaque, about 1 minute.
- Season with salt and pepper.
- Spoon sauce over bow ties and serve.

BOW TIE PASTA WITH SMOKED SALMON LEMON SAUCE

- HEAT oil in a skillet over low heat; add garlic and onion. Cook until soft. Set aside.
- COOK pasta according to package directions; drain well. Put pasta back in the pot it was cooked in. Add garlic and onion mixture; mix well. Add lemon juice, green onions, parsley and salmon; mix well again.
- SEASON with salt and pepper to taste. Garnish with Italian parsley and lemon slices, if desired.

Fabulous, quick and tasty pasta dish. I make this often and my husband inhales this (it is a sight to behold, let me tell you). Serve with a big loaf of garlic bread and your guests will be in heaven. It serves 4 people (well, normal people- my husband can eat more than half of this himself) but you can easily double for a larger crowd.

Steps:
- Boil water and cook pasta according to package directions. DO NOT ever add oil to the water! It will make the sauce slide off the pasta later.
- In a medium saucepan, melt butter and add onion and garlic. Cook over medium heat until onion starts to sweat and soften. Add salmon and cook until it starts to cook a little, about 2-3 minutes. Add vodka and flame off alcohol.
- Add the cream, tomato sauce, basil, salt and pepper. Bring sauce to a boil and simmer, reducing until it is thick, about 8 minutes or so.
- Serve over pasta and enjoy! Pass the grated cheese on the side.

- Heat the butter and olive oil together in a frying pan and fry the onions until golden.
- Add the peas and cook for 3 minutes.
- Add the salmon, season with salt and freshly ground black, pepper and cook for a further 2 minutes.
- Stir in the cream and cook for a further 2-3 minutes.
- In the meantime, cook the pasta in plenty of boiling, salted water until al dente. Drain, and then then add to the sauce.
- Stir well over a gentle heat until the sauce has thickened slightly.
- Serve immediately with some freshly ground pepper.
