Elevate your plate with this smoked salmon breakfast casserole layered over a bed of soft brioche, cheesy eggs and farm fresh toppings!

Number Of Ingredients 12

8 whole cage-free eggs
3/4 cup milk
1 cup shredded mozzarella cheese, (divided)
1/3 cup cream cheese (can use flavored like salmon or chives)
1 tsp dijon mustard
1 pinch ground black pepper
6 oz smoked salmon (can sub for roasted salmon), (flaked)
1/2 whole red onion, (diced)
2 tbsp capers (optional)
1 cup fresh kale, (chopped small)
1/2 cup cherry tomatoes, (diced)
1/2 loaf brioche bread, (cubed)

Steps:

  • Pre-heat oven to 375F degrees.
  • In a large bowl whisk the eggs, add in milk, 1/2 cup cheese, dijon mustard, cream cheese (of choice) and ground pepper. Whisk to combine. Set aside.
  • In a separate bowl add in salmon, onion, capers (if using), kale and cherry tomatoes. Mix to combine. Set aside
  • Place a layer of brioche bread on the bottom of the casserole. Make sure to cover the entire bottom of casserole with loose cubes of brioche but don't press it down.
  • Pour half of the egg mixture on to the brioche.
  • Add in all the salmon and veggies. Make sure to distribute evenly.
  • Top with remaining egg mixture.
  • Fishish with remaining shredded cheese.
  • Bake for 40-45 minutes. Check the center to make sure it is cooked through. Cheese should be bubbly but egg cooked all the way.
  • Garnish with fresh greens, chives or dill, fresh ground black pepper and serve.

2 ounces goat cheese, crumbled (about 1/2 cup)
2 tablespoons chopped fresh dill

Steps:

  • Preheat oven to 350°F.
  • Place eggs, egg whites, milk, cottage cheese, chives, mustard, and pepper in a large bowl; whisk to combine. Set aside.
  • Heat oil in a 10-inch oven-safe skillet over medium. Add potatoes; stir to coat, and arrange in a single layer. Cover and cook until potatoes are almost tender, about 8 minutes, stirring occasionally. Uncover, add leeks and shallot, and cook 5 minutes, stirring occasionally, until soft.

Steps:

  • Spray 13x9-inch (3-quart) baking dish with cooking spray.

8 oz smallish pasta like penne, elbow or bow tie
1 c chopped bell pepper, red & green
1/2 c chopped red onion
2 Tbsp flour, seasoned
1/4 tsp ground black pepper
6 oz aged gouda cheese, shredded
1 Tbsp lemon juice
4 1/2 oz smoked salmon
1 lb asparagus, fresh
1 c seasoned bread crumbs
1/4 tsp salt
2 Tbsp olive oil, extra virgin
2 1/2 c milk

Steps:

  • 1. preheat oven to 350F. Put pasta on to cook, drain and set aside when done. Chop the asparagus into 1 inch long pieces.
  • 2. heat oil in large skillet. While this heats, coarsely chop bell peppers and onion. Add these to the hot pan, cook on medium high until tender then add seasoned flour and pepper. Mix well, add milk all at once. Cook, stirring often, till it begins to thicken up a little. Add the grated cheese and asparagus, stir until cheese is melted. Add lemon juice and crumbled salmon, mix in with reserved pasta.
  • 3. pour into a 2 quart baking dish. Sprinkle with bread crumbs and bake, uncovered, for ~ 30 minutes or until heated through and topping is golden. Let dish rest for about 10 minutes before serving

BREAKFAST STRATA WITH SMOKED SALMON

This is basically a layered savory bread pudding. I have served this at many brunches and it is always a hit.

12 oz cream cheese, room temperature
1 stick butter, room temperature
1/2 c cream
6 large eggs
12 oz gruyere cheese - shredded
1 tsp sea salt
1/2 tsp freshly ground black pepper
2-3 Tbsp fresh dill
10-12 oz smoked salmon
1 pkg round sourdough bread - sliced

Steps:

  • 1. Pre-heat oven to 350 and spray bottom and sides of 9" spring form pan
  • 2. Melt butter and cream cheese in a large bowl in microwave and whisk together
  • 3. whisk in cream, salt, pepper and chopped dill
  • 4. add 6 large eggs and whisk together well
  • 5. shred gruyere cheese and set aside
  • 6. Take largest (center portions) of round bread and dip in egg mixture. You will add two pieces to form the round to match the pan. You may have to use portions of smaller pieces to fill the round completely.
  • 7. Crumble close to half of the smoked salmon on top of the bread.
  • 8. Sprinkle a third of the shredded gruyere on top of the salmon
  • 9. Repeat steps 6-9 for layer two
  • 10. Repeat steps 6-9 for layer three, but in this layer, you will have little (or none if you prefer) smoked salmon
  • 11. Pour any remaining egg/cream mixture evenly over the final layer
  • 12. Place springform pan on jelly roll pan (or something large enough with lip in case there is leaking liquid)
  • 13. Cover with foil and bake for 20 minutes covered
  • 14. Remove foil and bake another 20-30 minutes uncovered until it feels firm in the center
  • 15. Cool for 10 minutes, remove outer form, slice, serve and enjoy!

6 large eggs
200ml whole milk
100ml single cream
½ bunch of chives, finely sliced
1 lemon, zested
200g soft cheese
½ tsp freshly ground black pepper, plus extra for sprinkling
6 croissants, split (use stale croissants, if you have them)
200g smoked salmon

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Whisk together the eggs, milk, cream, half the chives and some seasoning.
  • Combine most of the remaining chives with the lemon zest, soft cheese and black pepper in a separate bowl. Spread the soft cheese mixture over the bases of the croissants, then divide the smoked salmon between them and sandwich back together with the croissant tops.
  • Pour the egg mixture into a 38 x 23cm baking dish. Nestle the croissant sandwiches, top-side down, in the egg mixture and leave to soak for 20 mins. After this time, carefully flip over, sprinkle with the remaining chives and black pepper, then bake for 20-25 mins until the tops are golden brown and the egg mixture is set. Leave to stand for a few minutes, then serve.

Russell made this for brunch for the two of us this morning. It is really a luxurious dish and could probably feed 3 or 4 people less greedy than us! The original recipe came from the net, but he has modified it quite a bit. I would also enjoy smaller sized pieces of this served just warm as fingerfood. Yum. Or served with a green salad for lunch. Just adding, we have made this in a round pan too, and cut into wedges (see phot) this worked really well.

100 g smoked salmon, flaked into bite sized pieces
2 teaspoons olive oil
2 green onions, chopped
1 clove garlic, chopped
1/2 teaspoon fresh thyme, chopped
1/4 teaspoon fresh dill, chopped
5 eggs
1/4 cup light cream
1/2 cup smoked cheese, grated (we have used sliced smoked camembert, but gouda would be good)
1 pinch salt & freshly ground black pepper

Steps:

  • Preheat oven to 180c.
  • Heat the oil in a small pan, add the onions and garlic and saute about 2 minutes.
  • Remove from the heat and add the herbs.
  • Whisk the eggs and cream together, add the smoked salmon and cooled onion/garlic mix.
  • Stir well and pour into a greased loaf pan.
  • Bake 20 minutes.
  • Top with the cheese and salt and pepper and return to the oven for about 10 minutes more, or until set.

1 cup shredded Swiss cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
