BARREL BEANS



Barrel Beans image

Smoke more than just meat in your drum cooker. Try these sweet and salty baked beans with bacon, onions and dark brown sugar. Smoked to perfection.

4 strips bacon
2 red onions, chopped fine
1 clove garlic, minced
1 can (16 oz size) baked beans
1 cup dark brown sugar, packed
¾ cup ketchup
1 tbsp chili powder
1 tsp dry mustard
½ tsp white pepper, ground fresh
1 tbsp All-Purpose Pit Rub

Steps:

  • Cook the bacon in a skillet over medium-high heat until slightly crisp, about 3-4 minutes. Remove the strips to drain on paper towels, let cool, then chop into small pieces.
  • Drain all but 1 tablespoon of the bacon drippings from the pan.
  • Add the onions to the pan and cook until they are just softened, about 2-3 minutes. Add the garlic to the pan and cook 2 minutes longer.
  • Combine the onion mixture and the remaining ingredients in a medium mixing bowl and mix well.
  • Pour the bean mixture into a 2-quart baking dish.
  • Light your Pit Barrel® according to the instructions and install the grill grate.Tip: Use our Hinged Grill Grate to easily hang meat and cook sides at the same time.
  • Cook on the grill grate 2½ hours, or until the top is browned and bubbly.

3 cups ketchup
1 cup diced onion
1 green or red bell pepper, seeded and diced
1 1/2 cups packed brown sugar
1/2 cup sorghum or honey
2 tablespoons prepared yellow mustard
1 to 1 1/2 tablespoons Magic Dust
1 large can (28 oz.) pork and beans
1 can (19 oz.) large red kidney beans, drained and rinsed
1 can (15 1/2 oz.) chili beans
1 can (15 1/2 oz.) large butter beans, drained and rinsed
1 can (15 1/2 oz.) of great northern beans, drained and rinsed
4 or 5 slices bacon or a few cooked ribs or some barbecued pulled pork

Steps:

  • Preheat oven to 350 degrees. Mix ketchup, onion, bell pepper, brown sugar, sorghum or honey, mustard, and Magic Dust together in a large bowl.
  • Gently stir in beans with hand or large wooden spoon until evenly distributed.
  • Pour beans into a 13x9-inch baking dish. Lay strips of bacon, ribs or pork across top. Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes or until bubbly. Remove from oven and let cool for 15-30 minutes. Serve immediately or transfer to an airtight container and store in refrigerator for up to 1 week or freezer for up to 1 month.

1 cup chopped brisket
1 cup BBQ sauce (recommended: Jack Stack Original)
4 heaping tablespoons brown sugar
1 tablespoon chili powder
1 teaspoon liquid smoke
1/2 cup ketchup
1/2 cup water

Steps:

  • Combine all ingredients in a 4-quart saucepan. Over medium heat, bring beans to a boil, and then reduce to a simmer. Cook beans for 20 minutes or until a thick, soupy consistency is reached. Serve.
  • This recipe also works well on a grill, letting the great outdoors permeate and enhance the flavor of the beans as they cook.

Quick, simple and packed with goodness, try these beans as part of a pick-and-mix Mexican supper

1 tbsp olive oil
1 onion , thinly sliced
2 garlic cloves , chopped
1 tbsp white or red wine vinegar
1 heaped tbsp soft brown sugar
400g tin pinto beans , drained and rinsed
400ml tub passata
1 tsp Worcestershire sauce or vegetarian alternative (optional)
small bunch coriander , chopped

Steps:

  • Heat the oil in a small pan. Fry onion until starting to brown, then add garlic and cook for 1 min. Add vinegar and sugar and cook until onions are caramelised. Stir in beans, passata, Worcestershire sauce (if using) and seasoning and simmer for 10-15 mins until thickened. Stir through coriander and serve.

2 tablespoons vegetable oil
1 red onion, diced

1 red bell pepper, diced
3 jalapeno peppers, minced, or to taste
1 cup beer, or more to taste
1 cup barbeque sauce
1 cup brown sugar
¼ cup molasses
6 cups cooked pinto beans
1 pinch garlic salt, or to taste
cracked black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish with 1 tablespoon butter.
  • Heat oil in a large skillet over medium-high heat. Saute onion and garlic in hot oil until onion begins to soften, 5 to 7 minutes. Add bacon, bell pepper, and jalapeno peppers; cook and stir until bacon is browned, 7 to 10 minutes more.
  • Stir beer, barbeque sauce, brown sugar, and molasses together in a large bowl; add pinto beans and bacon mixture. Season with garlic salt and black pepper. Pour beans mixture into the prepared baking dish.
  • Bake in the preheated oven until bubbling and browned, about 45 minutes.

1 lb thick cut apple-smoked bacon
2 large onions, medium dice
1 (117 ounce) can baked beans
1 (108 ounce) can dark red kidney beans, drained and rinsed
2 (15 ounce) cans butter beans
1 cup ketchup
1 cup dark brown sugar, packed
1/2 cup yellow mustard
1/4 cup cider vinegar
1/8 cup Worcestershire sauce
1 cup barbecue sauce, your favorite brand

Steps:

  • bake the bacon on a sheet pan at 350 degrees until crispy.
  • remove bacon and crumble it.
  • on the sheet pan add the onions to the bacon drippings in a single layer and place back in the oven for a few minutes until they are translucent.
  • place all of the ingredients in a large aluminum roasting pan and gently fold until all of the ingredients are combined.
  • Bake at 350 degrees for 1 to 1/2 hours.

1 onion, diced
1/2 tablespoon ground pepper
1/2 tablespoon chili powder
1 teaspoon kosher salt
1 1/2 cups barbecue sauce
1/3 cup yellow mustard
1/3 cup maple syrup
1 (16 ounce) can pinto beans, drained
1 (16 ounce) can great northern beans, drained
1 (16 ounce) can black beans, not drained

Steps:

  • Dice the bacon and onion and cook in a skillet untillbacon is rendered and onions are translucent. Add all other ingredients in a disposable foil pan or if you don't have a disposable foil pan handy, just wrap the outside of a Pyrex casserole dish with aluminum foil. This prevents smoke from building up on the dish and makes cleanup a breeze. Heat in the pit or smoker at 250 degrees for an hour.

3 cups ketchup
1 cup diced onion
1 medium green bell peppers or 1 medium red bell pepper, diced
1 1/2 cups brown sugar
1/2 cup sorghum or 1/2 cup honey
1/2 teaspoon paprika
3/8 teaspoon table salt
3/8 teaspoon granulated sugar
1/4 teaspoon mustard powder
3/8 teaspoon chili powder
3/8 teaspoon ground cumin
1/4 teaspoon fresh ground black pepper
3/8 teaspoon granulated garlic
1/8 teaspoon cayenne pepper (to taste)
1 (28 ounce) can pork and beans, such as Campbell's
1 (19 ounce) can red kidney beans, rinsed
1 (15 1/2 ounce) can large butter beans, rinsed
1 (15 1/2 ounce) can navy beans or 1 (15 1/2 ounce) can great northern beans, rinsed
1/4 cup pulled pork or 2 -3 cooked pork ribs

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, mix together mustard, ketchup, onion, bell pepper, brown sugar, sorghum or honey and spices. Stir until smooth. Add beans and stir gently until combined, being careful not to smash the beans too much.
  • Pour into a 9x13 pan. Lay bacon strips over the top, or sprinke pulled pork evenly over the top. If using ribs, remove and shred the meat, then sprinkle over the beans. Cover with foil and bake 45 minutes.
  • Remove foil and bake another 15 minutes, or until bubbly. Serve hot. Keeps refrigerated up to 1 week, or frozen up to 1 month.

1 cup packed brown sugar (I used Dark Brown)
2 tablespoons Worcestershire sauce
1/4 cup dark molasses
1/2 cup chili sauce
2 -4 tablespoons vinegar (I ended up using more like 4)

Steps:

  • Combine all ingredients in oven proof dish or crock pot; mix well.
  • Cover and bake on high in crock pot or 350 in oven, until desired thickness; about an hour to an hour and a half.

  • Preheat your smoker to 250 degrees F using any mild or fruit wood. I really like pecan with this recipe.
  • Preheat a 12 inch cast iron skillet over medium high heat. Cook the bacon pieces for 2-3 minutes per side. Long enough to render fat, but not long enough to crisp thoroughly.
  • Remove the bacon pieces to a plate with a paper towel on top so they can drain. Leave the bacon grease in the pan and add the onions and jalapenos. Cook for 3-5 minutes, stirring frequently, until they have softened and the onions are slightly translucent.
