CREAMY SMOKED GOUDA DIP
Thick and creamy smoked gouda dip is a flavorful, four-ingredient dip that's great for dipping homemade pretzels, veggies, and more.

Steps:
- Place butter in a saucepan set over low-medium heat. Once melted, whisk in the flour until combined.
- Add milk and whisk to evenly mix. Keep whisking as the mixture begins to thicken, about 10 or so minutes, or until it's to a point where it can thickly coat the whisk (or a spoon).
- Once the mixture has begun to thicken, add the cheese. Stir or whisk frequently as the cheese melts and the dip becomes smooth and creamy. Serve immediately.

SMOKED GOUDA BEER DIP
Steps:
- Heat the butter in a small saucepan over medium-high heat. Add the flour and cook, stirring until smooth, for 2 minutes. Slowly whisk in the beer so the mixture is smooth. Simmer until thickened, about 5 minutes. Add the Cheddar, Gouda, sour cream, mustard and paprika and whisk until the cheeses are melted, 2 to 3 minutes. Stir in the jalapenos, and season with salt and pepper. Serve with tortilla chips.
SMOKED GOUDA CHEESE DIP
This has got to be my husband's favorite cheese dip! Whenever we have a family party, we always request the dip from my sister (the creator), and the jalapenos make a great dare for the adventurous! This recipe is very much "to your own taste", hence the minimal measurements, but I promise it will be worth it!

Steps:
- Grate the smoked Gouda.
- Add mayonnaise until spreadable or your preferred consistency.
- Add chopped onion, liquid smoke to taste, and Tabasco sauce to taste.
- You can make it as smoky or as spicy as you like (cayenne pepper for even more kick!).
- Garnish dip with finely chopped fresh jalapenos for color.
- Serve with crackers, bread, or veggies!
GOUDA DIP
This is my mother's recipe for a dip she used to serve at all the parties she held. Dad was in the Navy, so we held a lot of them. :) My mom would always use the whole Gouda in the red wax, but I find it difficult to get the cheese out without ruining the wax, so I use whatever I can find.

Steps:
- Cut off top of wax and remove the cheese. Set cheese aside until soft and refrigerate the wax shell.
- When cheese is soft, smash it with a fork and mix with remaining ingredients. The cheese should be a little lumpy, but not too much.
- Fill the shell and refrigerate until a few hours before serving. You don't want the cheese to be too hard, then you can't spread it well.
- Serve with Ritz crackers.
- I by pass the wax and put the dip in a serving bowl.

SMOKED GOUDA & WILD MUSHROOM DIP

Steps:
- In medium saute pan, melt butter over medium heat and saute mushrooms and garlic until soft, about 6 to 8 minutes.
- Remove from heat and set aside.
- In medium saucepan, combine half & half, cream cheese and Gouda over low heat.
- Stir constantly until ingredients have incorporated.
- Add mushroom mixture and spinach to cheese mixture.
- Season with salt and pepper and serve immediately with crackers, french bread rounds or fresh vegetables for dipping.

QUESO CON GOUDA
Just goes to prove that Queso can be made with almost any cheese. The important factor in making good queso is to use a processed cheese (like Velveeta) for at least one of the cheese choices. A mixture of smoked Gouda and regular Gouda is recommended and gives this a subtle smoke flavor that really adds depth. If necessary, this can be made using 8 oz of regular Gouda. Developed for RSC #11.

- Heat the oil in a medium size pan, saute the shallots and garlic until soft, stir in the chili peppers.
- Add the milk starting with 3/4 cup and adding the additional 1/2 cup as needed for proper consistency; add tomatoes, cayenne pepper, and cheese.
- Heat over low heat until cheese melts; season as desired with salt and pepper.
- Serve warm with tortilla chips, hamburger patty, hamburger steak or chicken.
