6 ripe plantains
8 cups chicken stock
1 1/2 pounds pork meat with fat, such as boned pork ribs
Salt and pepper
6 cloves garlic, mashed
Juice of 2 lemons
8 slices cooked bacon, crumbled
1/2 cup sliced green onions

Steps:

  • Cut the ends off the plantains and discard. Slice each plantain into 2-inch chunks and score the skins with a knife along one edge. (Do not remove the peel.) Combine the plantains with the chicken stock in a large pot. Bring to a boil, then lower heat, cover and simmer until tender.
  • Cut the pork into approximately 1-inch cubes. Season with salt, and place in a large sauce pan. Add enough water to just barely cover the pork. Bring to a boil and simmer, uncovered, until all of the water has boiled away and the pork begins to fry in the rendered fat. Continue to cook just until brown but not crispy. (The meat should be tender and stringy.)
  • Remove the fully cooked plantains from the broth, reserving the broth. Peel the plantains. Mash the plantains with a little of the broth, just enough to make a soft paste, like mashed potatoes.
  • Mash together the plantains, garlic and lemon juice. Mix in the pork and half of the bacon. Season with salt and pepper. Garnish the top with the remaining bacon and green onions and serve hot.

  • Combine 3 chopped ripe plantains in a saucepan with 2 cinnamon sticks, 1/4 cup brown sugar, 4 tablespoons butter and 1 teaspon kosher salt. Cover with water and simmer until tender, 15 to 20 minutes. Drain, reserving the liquid. Mash the plantains. Brown 4 tablespoons butter in a skillet, 6 to 10 minutes. Mix into the plantains; add enough of the reserved liquid until creamy. Season with salt, pepper and ground cinnamon.

6 very ripe plantains, peeled and cut into 1-inch pieces
5 cups water
1 cup milk
1 tablespoon ground turmeric
Salt and freshly ground black pepper
Canola oil
2 cups chorizo, small dice, (recommended: Goya)
Mojo, for serving, (recommended: Goya)

Steps:

  • Put the plantain pieces a pot large enough to hold them, and add water and milk. Add turmeric and season with salt and pepper. Bring to a boil, lower the heat and allow to simmer for 20 minutes. Drain and mash through a ricer.
  • Lightly coat a separate pan with canola oil. Add chorizo and saute for 5 minutes over low heat. Add pureed plantain and mix well.
  • Serve with the Mojo.

Vegetable or peanut oil, for frying
2 green plantains, peeled and cut into 2-inch pieces
Flaked sea salt

Steps:

  • In a heavy pot, add enough oil to fill halfway. Heat until a deep-frying thermometer reads 350 degrees F or the handle of a wooden spoon begins to sizzle immediately when dipped in the oil.
  • Add the plantains and fry until bright yellow and slightly golden brown, about 4 minutes. Remove from the oil with a slotted spoon to a sheet of parchment paper. Make sure all pieces are standing tall on the cut side, then place another sheet over the top. Using a small plate, glass or other flat item smash each piece into a 1/4-inch jagged circle.
  • Place the plantain discs back in the oil and fry for 4 to 6 more minutes or until the edges are golden brown. Remove to a wire rack and sprinkle with salt.

Plantains cannot be eaten raw like regular bananas. They are ripe when they are black and just starting to soften to the touch. If plantains are green allow them to ripen at least 10 days or put in a paper bag to speed up the process. This recipe is from Christine Cushing. Enjoy!

2 ripe plantains, peeled, cut on the diagonal into 1/4-inch slices
flour, for dredging
salt and pepper

Steps:

  • In large skillet, heat oil on high. Lightly smash the slices of plantains using a large, flat meat tenderizer or a heavy-bottomed pot.
  • Dredge plantain slices in flour very lightly. Fry for 2 minutes per side or until golden.
  • Transfer to tray lined with paper towel to drain. Season the smashed plantains with salt and pepper.

I bought a recipe book by a local women's group on my recent trip to Belize (Silly Bug & Bittle Recipes) and this one sounds like something I would like. I love plantains and I love mashed sweet potatoes, so I'm guessing I would like this. The original recipe calls for just the plantain but the site requires at least 2 ingredients so I added butter and salt as I have a feeling I'll add a little of both, but will give it a try plain first and then modify as needed.

Steps:

  • Plantains are ripe when the skin turns black and they are soft to the touch. Peel the plantain and cut in half. (I've found it easiest to peel by scoring the skin with a knife in several spots before attempting to peel).
  • Put plantain in a pot covered with water and boil until soft (I have no idea on the time, will update the recipe after I try it).
  • Drain water and mash in pot with a potato masher.
  • Add butter and salt as to taste.
