- Peel and cut the potatoes into large cubes and boil in salted water until tender.
- Meanwhile, beat the cream cheese, then stir in the sour cream, milk and spices.
- Drain and mash the potatoes in the pot, then stir in the cream cheese mixture.
- Spoon into a casserole dish or a 9x13 pan.
- You may cover it and refrigerate for 24 hours, or proceed to baking right away.
- Bake covered with foil at 350 for 45 min's.
- Increase the time if the dish has been chilled.

- Cut potatoes in half and place in a pot. Cover with water and bring to a boil. Work on other dishes while you are waiting for the water to boil.
- When water boils, add the potatoes and some salt, 2 big pinches, and boil for 10 minutes or until tender. Drain and return potatoes to the hot pot. Smash potatoes with masher and combine with sour cream and cheese. When cheese melts into potatoes, add chives and salt and pepper and re-smash. Taste the potatoes and adjust seasonings.

My son and I saw this on a PBS cooking show (Test Kitchen) and thought that it looked good so we tried it and loved it. I would use this as a base recipe and then added whatever you want afterwards like a package of ranch or bacon. Hope you enjoy. Cooking time will vary.

- Boil the whole potatoes in salt water.
- Remove them from the water and allow to dry (it will only take a couple of minutes) Do not pour out all the water. Save about 1/2 cup.
- While they are drying, mix the rest of the ingredients and the 1/2 cup of the potato water. I use a hand mixer for this and that really helps.
- Then, with a spatula or a wooden spoon, simply smash the potatoes. Just enough to break open to spud. Do not mash. Your goal is to have potato chunks.
- Fold the cream cheese mixture in with the potatoes.
- Season to taste.

- Place potatoes and 1 tablespoon salt in a medium pot, cover with cold water by 2 inches, and bring to a boil. Reduce heat, cover partially, and simmer until potatoes are tender, about 35 minutes. Drain, and let stand until just cool enough to handle. Rub off skins, and discard. Cut potatoes into large pieces.
- Combine potatoes, cream cheese, butter, milk, and 1/4 cup cream in a mixer bowl fitted with the paddle attachment. Beat until combined. Season with salt and pepper, and beat to desired consistency.
