1 ½ pounds small yellow-fleshed potatoes
¼ cup olive oil
1 teaspoon butter at room temperature
2 tablespoons balsamic vinegar
3 cloves garlic, minced
1 teaspoon dried rosemary
½ teaspoon dried sage
½ teaspoon ground thyme
½ teaspoon dried savory
½ teaspoon sea salt
½ teaspoon ground black pepper

Steps:

  • Place potatoes in a saucepan, fill with water to cover the potatoes, and bring to a boil. Reduce heat to a simmer, and cook the potatoes until tender but not mushy, about 20 minutes. Drain and allow potatoes to cool.
  • While potatoes are cooking, combine olive oil, butter, balsamic vinegar, garlic, rosemary, sage, thyme, savory, sea salt and pepper in a bowl. Stir with a fork to combine well.
  • Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.
  • Place the potatoes in a single layer on the prepared baking sheet, and lightly press down on the potatoes to partially crush them. Spoon the oil-herb mixture over each potato.
  • Bake in the preheated oven until the edges of the potatoes are beginning to crisp, about 25 minutes. Cool for about 5 minutes before serving.

12 to 14 medium red potatoes, unpeeled
2 sticks salted butter, softened
1 1/2 cups sour cream
1/2 cup heavy cream
8 slices cooked bacon, crumbled
5 green onions, sliced thin, plus more for garnish
1 1/2 cups grated Monterey Jack cheese
Kosher salt and freshly ground black pepper

Steps:

  • Put the potatoes in a pan and cover with cold water. Place over medium heat and bring to the boil. Simmer until fork-tender, 20 to 25 minutes, then drain.
  • Smash the potatoes with a potato smasher for a minute or so to break them down a little. Add the butter, sour cream and heavy cream, then mix thoroughly. Stir in the bacon, green onions and grated cheese. Season to taste. Serve hot, topped with some extra green onions for garnish.

To make them fluffy and flavorful, be sure to simmer them slowly and add plenty of salt to the cooking water. And don't skip the step of steaming the excess water off; leaving too much moisture in the potatoes causes them to be loose and gluey.

2 pounds russet potatoes, peeled and quartered
Kosher salt and freshly ground black pepper
1 stick (8 tablespoons) unsalted butter, cubed
3/4 cup heavy cream, heated

Steps:

  • Put the potatoes in a large pot and cover with cold water. Generously salt the water and bring to a boil over high heat. Then lower the heat to medium and gently simmer until the potatoes are completely tender when pierced with the tip of a knife, about 30 minutes.
  • Drain the potatoes well and return them to the pot. Place the pot over low heat and let any residual water steam off, about 2 minutes. Mash the potatoes well with a potato masher. Fold in the butter with a spatula until melted, and then fold in the cream. Season with salt and pepper.

1 lb small red potatoes (about 20 golf ball sized potatoes) or 1 lb gold potato (about 20 golf ball sized potatoes)
1/3 cup melted butter
3 -4 tablespoons kosher salt, divided
1 -2 tablespoon fresh ground black pepper
6 slices cooked bacon (optional)
1/2 cup shredded cheddar cheese (optional)

Steps:

  • Preheat oven to 450* F.
  • Bring a large pot of water to a boil, with 2 tbsp salt. Add potatoes, and boil until quite tender, but not falling apart.
  • Line two baking sheets with parchment. Once potatoes are soft, place on baking sheets, leaving ample space between them.
  • Use a flat bottomed glass to smash each potato to 1/4" thickness.
  • Melt butter, and drizzle or brush over potatoes. Sprinkle with salt and pepper.
  • Bake for 30 minutes, until crispy. Meanwhile, fry the bacon and shred the cheese. Dice the bacon.
  • After the potatoes are out of the oven, sprinkle with the bacon and cheese.

12 small yukon gold potatoes or 12 small Red Bliss potatoes
1/2 cup olive oil
2 sprigs fresh thyme
1/2 tablespoon chopped fresh thyme leave
coarse salt
freshly cracked black pepper
1 garlic clove, sliced

Steps:

  • Using a rolling pin or a heavy pan, gently smack the potatoes, 1 potato at a time, until the skin begins to split, exposing the interior of the raw potato.
  • Over low heat, add the olive oil to a medium-sized heavy-bottomed saucepan, then add the potatoes and thyme sprigs and season generously with salt and pepper. Place the lid on the pan and allow to cook, undisturbed, shaking the pan every 5 minutes or so, until the bottoms of the potatoes are browned, about 10 to 12 minutes. (Check occasionally to make sure the potatoes aren't browning too quickly and adjust heat accordingly.) Turn the potatoes to their second side, replace the lid, and continue cooking undisturbed a further 5 to 8 minutes.
  • Remove the lid and cook a further 2 to 3 minutes, for the condensation to evaporate.
  • Remove the thyme sprigs and add the sliced garlic and chopped fresh thyme and cook until the garlic is caramelized and chewy, about 2 minutes. Serve hot.

1/4 cup vegetable oil
6 medium Yukon Gold potatoes, peeled
Salt
Freshly ground black pepper
1/2 cup Crema (recipe follows), creme fraiche or sour cream
2 cups heavy cream
1/4 cup buttermilk

Steps:

  • Preheat oven to 350 degrees. In a cast iron skillet heat the oil over high heat. Cook the potatoes whole, turning frequently until evenly browned, about 10 to 15 minutes. Transfer to paper towels to drain. When cool enough to handle, wrap each potato in aluminum foil and place in the oven. Bake until cooked through, about 40 minutes. Remove the foil and transfer the potatoes to a serving platter. Place a kitchen towel over the potatoes and crush with the palm of your hands. Sprinkle with salt and pepper and garnish with the crema, creme fraiche or sour cream. Serve immediately.
  • Whisk the cream and buttermilk together. Cover and set in a warm place (a gas oven with just the heat from the pilot light is fine) for 8 hours. Crema may be kept in the refrigerator as long as a week.

1kg new potatoes
3 tbsp olive oil

Steps:

  • Cook the potatoes in a pan of boiling salted water for 15 mins, or until cooked through but not falling apart. Drain well. Drizzle 1½ tbsp oil into a shallow roasting tin or baking tray (about 30 x 20cm - a Swiss roll tin works well). Tip the potatoes into the tin and toss in the oil. Squash the potatoes down using a potato masher or fork - the smashed potatoes should fill the tray and be joined at the edges like jigsaw pieces. Will keep chilled for up to a day.
  • Heat the oven to 190C/170C fan/ gas 5. Drizzle the potatoes with the remaining oil and season with sea salt. Bake for 40 mins until deeply golden and crunchy.

I got this recipe off of foodnetwork.com. What a wonderful recipe. Another way to make potatoes interesting. I made them as this recipe called for and it was delicious. The next time I made it I made variations to this. After smashing them, I put on the olive oil and then sprinkled dill weed and chives and covered in mozza cheese, and served with herbed sourcream. So delicious.

6 tablespoons extra virgin olive oil
2 tablespoons fennel seeds
1 teaspoon salt and pepper, to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place potatoes on a baking tray and bake for 45 to 60 minutes, until tender.
  • Turn oven up to 450 degrees F (230 degrees C).
  • Push down on the baked potatoes with a potato masher or small plate so that they crack open and are flattened, doubling in diameter.

16 red potatoes (unpeeled)
3 cloves garlic, halved
1/4 cup olive oil
kosher salt, to taste
fresh ground pepper, to taste

Steps:

  • In a large soup pot combine the potatoes and garlic with enough water to cover them by several inches.
  • Bring the water to a boil, cover the pan, and lower the heat.
  • Let the pototoes simmer steadily for 20 minutes or until they are tender when pierced with a skewer.
  • Set the oven at 450 degrees.
  • Have on hand a 12-inch baking dish.
  • Rub the dish with a thin film of oil.
  • Drain the potatoes and garlic and set them aside until they are cool enough to handle- do not let the potatoes become cold.
  • Cut the potatoes into quarters and squeeze each one with your fingers or set the potatoes on a board and tap them lightly with a mallet.
  • Transfer the potatoes to the baking dish, packing them tightly into the dish.
  • Chop the garlic and scatter it on the potatoes.
  • Drizzle the oil on top of the potatoes and sprinkle them with salt and pepper.
  • Transfer the dish to the hot oven.
  • Roast the potatoes for 20 minutes or until the top is crusty and golden brown.
  • Serve at once.
