SLOW-COOKER TURKEY WHITE BEAN CHILI
Corn and Progresso® chicken broth provide a simple addition to this slow cooked turkey bean chili.

Steps:
- Spray 5- to 6-quart slow cooker with cooking spray. Heat 12-inch nonstick skillet over medium-high heat. Add turkey; cook 6 to 8 minutes, stirring occasionally, until no longer pink. Place turkey in slow cooker. In same skillet, heat oil over medium heat. Cook onion, chile and garlic in oil 5 minutes, stirring frequently, until onion is tender. Add to slow cooker.
- In blender, place 1 can of the beans and 1 cup of the broth. Cover; blend on medium speed 20 seconds or until smooth. Pour mixture into slow cooker. Stir in remaining 2 cans of beans, remaining 2 cups broth, the corn, chili powder, cumin, oregano, pepper and salt.
- Cover; cook on Low heat setting 8 hours. Top each serving with 1 tablespoon sour cream. Sprinkle with cilantro. Serve with lime wedges.

SLOW-COOKER LEFTOVER TURKEY CHILI

- In 4- to 5-quart slow cooker, mix great northern beans, kidney beans, chiles, onion, garlic, cumin, red pepper and broth. Place turkey on bean mixture.
- Cover; cook on Low heat setting 8 to 10 hours.
- Remove turkey from cooker to cutting board. Remove meat from bones; discard bones. Cut turkey into bite-size pieces. Add turkey and corn to cooker. In small bowl, mix flour and water; stir into turkey mixture. Increase heat setting to High. Cover; cook 20 to 30 minutes or until thoroughly heated and slightly thickened. Serve individual servings with lime wedges for squeezing juice over chili.

TURKEY AND WHITE BEAN CHILI

- In a large kettle, soak beans in cold water to cover by 2 inches overnight. Drain beans in a colander and return to kettle with enough water to cover by 2 inches. Cook beans at a bare simmer until just tender, about 1 hour, and drain in a colander.
- In a skillet, heat the oil and saute the onion and jalapeno until soft and beginning to caramelize, 4 minutes. Add the garlic and cook, stirring, for 2 minutes. Add the ground turkey, Southwest Essence, chili powder, salt, cumin, oregano, and bay leaf and cook, stirring occasionally, until turkey is browned and cooked through, 6 minutes. Add the cornmeal and cook, stirring, for 2 minutes. Add the chicken broth, canned tomatoes, canned chiles, and cilantro stems and stir to combine. Bring to a boil, reduce heat to a simmer, and cook, uncovered, for 45 minutes, stirring occasionally. After it has cooked for 30 minutes, add the cooked beans. Add the heavy cream and cilantro leaves and cook, stirring occasionally, for 15 minutes longer.
- Serve the chili in deep bowls, garnished with dollops of sour cream, grated Cheddar cheese, and green onions to taste.
- Combine all ingredients thoroughly.

Steps:
- Heat 2 tablespoons olive oil in skillet over medium-high heat.
- Add onions, garlic, coriander, cumin and oregano. Saute until translucent and fragrant, approximately 5 minutes.
- Add red peppers and sauté for 2 more minutes. Empty contents of skillet into slow cooker.
- Heat one tablespoon oil in same skillet over medium-high heat.
- Add chicken to skillet (working in batches if necessary) and cook until it is no longer pink on the outside, approximately 5-7 minutes. Transfer to slow cooker.
- Add wine, chicken stock, green chiles, beans and white pepper to slow cooker and turn on to low. Cook for 6-7 hours.
- Remove chicken from slow cooker and shred with a fork. Return to slow cooker.
- Add cream, salt, and turkey sausage, turn cooking setting to high and remove lid or simple leave lid slightly ajar to let moisture escape. Cook until sauce is thickened, approximately 30-45 minutes.
- If a thicker chili is desired: Mix 1 tablespoon cornstarch with 2 tablespoons water or stock for each cap of liquid. Add to slow cooker and mix. Allow sauce to thicken before serving.
- Serve in bread bowl and top with favorite garnishes.
- TIPS.
- For a hearty all in one meal, serve in a warm bread bowl.
- If you like your chili extra spicy, add ½ a diced jalapeno and sauté with onions before adding to slow cooker.
SLOW COOKER TURKEY CHILI
This is one of my weekly meals for my family! It's easy and delicious. Top with sour cream, Cheddar cheese, chopped onion, green onion, or crushed tortilla chips. Maybe even in a sourdough bread bowl!

- Cut turkey tenderloin lengthwise into quarters. In a skillet, cook the turkey, onion and garlic in butter until turkey is no longer pink and vegetables are crisp-tender. Remove turkey and let stand until cool enough to handle. Cut into cubes. Transfer vegetables to a saucepan. Add the turkey, broth, beans, tomatoes, salsa, parsley and cayenne. Bring to a boil. Reduce heat; simmer, uncovered, for 12-16 minutes or until slightly thickened. Top each serving with cheese or sour cream if desired.

This is so easy and so tasty. Freezes great for meals later in the week. If you want it a little thinner add an extra can of tomato sauce. Also the green chiles are not hot but add a wonderful flavor, so don't be afraid of them.
