4 pounds bone-in beef short ribs
1 teaspoon Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix
2 tablespoons olive oil
2 onions, quartered
1 cup red wine
2 tablespoons Dijon mustard
Kosher salt and ground black pepper, to taste

Steps:

  • Place short ribs in a Glad® zipper bag and sprinkle with the Hidden Valley® Original Ranch® Salad Dressing and Seasoning Mix. Seal and toss until the short ribs are evenly coated.
  • In a large pot or Dutch oven, heat the olive oil until very hot but not smoking. Brown the short ribs on all sides (you may need to do this in two batches), about 10 to 12 minutes total.
  • Transfer to a slow cooker. Nestle the onions in and around the short ribs. Mix the red wine and mustard together and pour over the top. Cover the slow cooker.
  • Cook on low for 8 hours or high for 4 hours. Skim as much fat as possible from the top. Season with salt and pepper. Serve over noodles, rice or potatoes.

These meaty beef short ribs are browned then slow cooked to perfection with a wonderful red wine sauce. Use a good-quality, dry red wine.

6 to 8 bone-in beef short ribs , about 3 to 4 pounds
1/4 teaspoon kosher salt, plus more, to taste
1/4 teaspoon freshly ground black pepper, plus more, to taste
2 tablespoons vegetable oil
1 cup carrots, diced or sliced
1 cup celery, diced
1 1/2 cups onion, chopped
4 cloves garlic, sliced
2 cups dry red wine , e.g., Cabernet, Malbec, or Merlot
1 1/2 cups unsalted chicken stock , or veal or beef stock
1/2 teaspoon dried thyme

Steps:

  • Gather the ingredients.
  • Sprinkle short ribs with salt and pepper.
  • Heat vegetable oil in a large skillet or sauté pan over medium heat. Add short ribs and cook for about 10 minutes, turning to brown all sides. Remove to slow cooker insert.
  • Add celery, carrots, onion, and garlic to the same skillet. Cook over medium heat, stirring frequently until lightly browned, about 8 to 10 minutes. Add red wine, veal or chicken or veal stock, and thyme. Bring mixture to a full boil.
  • Pour hot wine and vegetable mixture over short ribs in slow cooker. Cover and cook on low for 6 to 8 hours, until meat is very tender. Alternatively, cook on high for about 3 to 5 hours.
  • Remove short ribs to a serving bowl or platter and keep warm. At this point, they will have separated from the bones, so you can discard the bones.
  • Strain cooking liquids and discard the solids. Skim fat from the juices (use a gravy separator if possible). Add juices to a medium saucepan. Bring to a full boil over high heat. Reduce heat to medium, and continue boiling for about 5 minutes, or until reduced by about one-third to one-half. You should have about 2 cups of sauce. Taste sauce and season with salt and freshly ground pepper, as needed.
  • Pour sauce over short ribs and serve immediately; or return to the slow cooker and keep warm until serving time.
  • Serve with mashed potatoes or a potato gratin, or serve open-faced on toasted sandwich buns with some of the sauce. Enjoy.

2 tablespoons flour
1 teaspoon salt
1/8 teaspoon ground black pepper
4 lbs beef short ribs
2 tablespoons extra virgin olive oil
2 onions, sliced
1 cup red wine
1 cup chili sauce
6 tablespoons brown sugar
6 tablespoons apple cider vinegar
2 tablespoons Worcestershire sauce
1 teaspoon dry mustard
1 teaspoon chili powder
4 tablespoons flour
1/2 cup red wine

Steps:

  • Mix flour, salt & pepper. Coat ribs with the mixture.
  • In a large skillet, heat olive oil over med-high heat and brown the short ribs on all sides.
  • In a crock pot, combine onions, 1 cup of red wine, chili sauce, brown sugar, vinegar, Worcestershire, dry mustard & chili powder. Add ribs to the mixture.
  • Cover & cook on low for 6 hours.
  • Remove ribs to a platter and keep warm.
  • Turn crockpot to high and add remaining flour and red wine. Cook 10 minutes or until thoroughly combined and sauce has thickened.
  • Pour sauce over ribs and serve immediately!

3 lb bone-in beef short ribs

1 can (14.5 oz) stewed tomatoes, undrained
1 medium onion, chopped (1/2 cup)
2 tablespoons tomato paste
1/2 cup red wine or Progresso™ beef flavored broth
1/2 cup Progresso™ beef flavored broth (from 32-oz carton)
1 tablespoon Worcestershire sauce
1/4 cup water
2 tablespoons cornstarch

Steps:

  • In 12-inch skillet, heat oil over medium-high heat. Add beef ribs; sprinkle with salt and pepper. Cook 4 to 6 minutes, turning occasionally, until browned.
  • Spray 3- to 4-quart slow cooker with cooking spray. In cooker, place tomatoes, onion and tomato paste; stir to combine. Add ribs, wine, broth and Worcestershire sauce.
  • Cover; cook on Low heat setting 7 to 9 hours.
  • Remove ribs and bones from cooker; cover ribs to keep warm. Discard bones. Spoon off any fat from mixture in cooker. In small bowl, mix water and cornstarch; stir into mixture in cooker. Increase heat setting to High. Cover; cook 10 to 15 minutes longer or until sauce is thickened. Serve over ribs.

  • Once the oil is hot, add the short ribs. You'll likely need to do two batches. Don't crowd the pan. Sear for 3-4 minutes per side.
  • Add all the other ingredients to the Crockpot except for the cornstarch. Give it a stir. Add the short ribs in as even of a layer as possible (some will likely stick out and that's ok). Cook on high for 5-6 hours or low for 7-8 hours.
  • Once the ribs are done, skim the fat off the surface (I just use a small spoon to do this). Mix the cornstarch with about a tablespoon of cold water until you've got a smooth mixture, then stir it into the Crockpot. Let it sit for about 5 minutes to thicken the sauce up a bit. Add extra salt & pepper as needed. A note on the salt: I prefer not to tell people how much to add since it's subjective, but you'll likely need to add a fair bit (around a teaspoon or more).
