Slow Cooker Mexican Tater Tot Casserole is loaded with ground beef, cheese, and tater tots! This gluten-free dinner will become a family favorite.

1 pound ground beef (browned)
2 cloves garlic (minced)
32 oz bag of tater tots (frozen)
12 oz Velveeta Cheese (cubed)
1 packet Taco Spice
1 cup shredded cheese

Steps:

  • Brown ground beef with minced garlic.
  • Layer the bottom of the Crock Pot with tater tots. Add ground beef on top and then Velveeta.
  • Sprinkle Taco Seasoning over everything and lightly stir.
  • Cover with remaining hash browns.
  • Cook on high for 2 hours or low for 5-6 hours.
  • Remove lid and top with 1 cup shredded cheese. Cover and let cheese melt for 10 minutes.

2 pounds ground beef
1 large onion, chopped
1 pound sliced fresh mushrooms
3 garlic cloves, minced
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1/2 teaspoon salt
1/2 teaspoon pepper
1 pound frozen cut green beans
1 bag (32 ounces) frozen Tater Tots
1 cup shredded cheddar cheese

Steps:

  • In a large skillet cook beef over medium-high heat until no longer pink, 5-6 minutes, breaking into crumbles; drain and transfer to a 5-qt. slow cooker. Add onions and mushrooms to skillet; cook over medium-high heat until vegetables are tender, 8-10 minutes. Add garlic; cook 1 minute longer. Stir in condensed soup, salt and pepper. Place vegetable mixture in slow cooker; add green beans and stir to combine. Top with Tater Tots and cheese. , Cook, covered, on low 6 hours. Let stand, uncovered, 15 minutes before serving.

2 teaspoons vegetable oil, or as needed
1 (15.25 ounce) can whole kernel corn, drained
1 (4.5 ounce) can sliced mushrooms, drained
1 cup diced green bell pepper
½ cup mild salsa
½ large tomato, diced
3 tablespoons mild nacho cheese sauce
1 pound ground beef
¼ cup mild taco sauce
1 (16 ounce) package frozen bite-sized potato nuggets (such as Tater Tots®)
1 cup shredded Mexican cheese blend

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a 9x13-inch casserole dish.
  • Mix corn, mushrooms, green bell pepper, salsa, tomato, and nacho cheese sauce together in a bowl. Layer mixture over the bottom of the prepared dish. Mix ground beef and taco sauce together in a separate bowl; add to the corn mixture in the dish and stir together. Layer potato puffs on top of casserole. Top with shredded Mexican cheese blend.
  • Bake in the preheated oven until beef is no longer pink, about 25 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Broil casserole until top is golden brown, about 5 minutes.

3 tablespoons oil
1 onion, diced
1 1/2 lbs hamburger meat
1 ounce taco seasoning mix
1/2 cup corn (optional)
10 ounces condensed cream of chicken soup
2 cups cheese, grated
frozen tater tots, as needed

Steps:

  • In a large nonstick frying pan put the oil and diced onion. Stir-fry until lightly browned and tender.
  • Add the hamburger meat and break it up with a spoon as it browns, stirring frequently.
  • Drain off excess oil.
  • Add the taco seasoning mix and 3/4 cup water. Bring mixture to a boil and cook until most of the excess liquid evaporates.
  • Stir in the corn and the cream of chicken soup.
  • Check seasonings.
  • Spoon the hamburger mixture into a 9 x 13 inch pan (a one-layer cake pan).
  • Top with the grated cheese.
  • Layer at least 1 pound of tater tots on top, putting them close together, or as desired.
  • Bake 350 degrees for at least 50 minutes. The tater tots should be well browned. Start checking after 40 minutes.

1 (8 ounce) can canned chicken or 1 (8 ounce) can canned tuna
1/2 teaspoon salt
1/4 teaspoon pepper
1 (14 ounce) can of drained green beans
1 (10 ounce) can cream of mushroom soup, condensed
1 tablespoon minced onion
1/2 cup milk
1/2 cup cheddar cheese

Steps:

  • Pour bag of frozen tater tots in greased cooker.
  • Combine remaining ingredients except cheese in separate bowl.
  • Pour over potatoes.
  • Cook on high for 3 hours or on low for 4 and 1/2-5 hours.
  • One half hour before serving, sprinkle grated cheese on top.
