SLOW COOKER LOUISIANA RIBS (CAJUN STYLE)



Slow Cooker Louisiana Ribs (Cajun Style) image

Make this slow cooker ribs that have a touch of heat! No need for take out when you have a recipe like this up your sleeve.

1 rack pork baby back ribs
1/2 cup water
1 Tbsp. paprika
2 tsp. salt
2 tsp. garlic powder
1 tsp. pepper
3/4 tsp. onion powder
3/4 tsp. dried leaf oregano
3/4 tsp. dried leaf thyme
1/2 tsp cayenne pepper
1/2 tsp. creole seasoning
1/4 tsp. crushed red pepper flakes
1/4 cup packed brown sugar
1 cup barbecue sauce (use your favorite!)
1/2 tsp. molasses
1/2 tsp. creole seasoning
1/4 tsp. garlic powder
1/8 tsp. onion powder

Steps:

  • Mix the dry rub ingredients in small bowl, and the barbecue sauce ingredients in a small bowl, set aside.
  • Put the ribs on a large cutting board, flip them over so the curved side is up. Remove and discard the silver skin, I do this but getting my fingers under middle edge on one side and pulling up, most of the time I can get it off in one piece. Cut the ribs into 4 even portions. I do this because it fits nicely in the slow cooker.
  • Using your hands rub the dry rub on the ribs on both sides. Place the rib pieces into the slow cooker that has been sprayed with non-stick cooking spray. Take half of the barbecue sauce and spread over the ribs (being careful not to contaminate the rest of the barbecue sauce with the raw meat, that sauce will be used later when the ribs are cooked.) Add the 1/2 cup water around the ribs.
  • Cover and cook on Low for 8 hours without opening the lid during the cooking time.
  • Brush the remaining barbecue sauce on the ribs.
  • Enjoy!

2 cups baby carrots
1 large onion, coarsely chopped
1 large green bell pepper, cut into 1 inch pieces
1 large red bell pepper, cut into 1 inch pieces
2 teaspoons garlic, minced
2 tablespoons cajun seasoning, divided (or Creole Seasoning)
3 1/2-4 lbs pork ribs (country-style)
1 (14 1/2 ounce) can stewed tomatoes, undrained
2 tablespoons water
1 tablespoon water
1 tablespoon cornstarch
hot cooked rice

Steps:

  • Combine carrots, onion, bell peppers, garlic, and 2 tsp Cajun or Creole seasoning in slow cooker; mix well.
  • Trim excess fat from ribs. Cut into individual riblets. Sprinkle 1 tbsp Cajun or Creole seasoning over ribs; place in slow cooker over vegetables. Pour tomatoes with juice over ribs (slow cooker will be full.) Cover; cook on LOW 6 to 8 hours or until ribs are fork tender.
  • Remove ribs and vegetables from cooking liquid to serving platter. Let liquid stand 5 minutes to allow fat to rise. Skim off fat. Blend water, cornstarch, and remaining 1 tsp Cajun or Creole seasoning until smooth; stir into slow cooker. Cook, uncovered, on HIGH 15 to 30 minutes or until sauce is thickened. Return ribs and vegetables to sauce; carefully stir to coat. Serve with rice.

8 bone-in country-style pork ribs (8 ounces each) or 8 beef ribs (8 ounces each)
1 cup ketchup
1 cup honey barbecue sauce
1/4 cup brown sugar
1/4 cup Worcestershire sauce
1 tablespoon balsamic vinegar
1 tablespoon molasses
3 garlic cloves, minced
2 tablespoons dried onion flakes
1 teaspoon cajun seasoning
1 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place ribs in a 5 quart slow cooker.
  • Combine all ingredients and pour over ribs in slow cooker.
  • Cover. Set to cook for 6 or 7 hours or until ribs are nice and tender.
