This slow cooker pork and vegetables couldn't be easier to make, with just 10 minutes prep work you'll have a delicious, hearty and satisfying meal to feed the whole family.

1 lb. carrots (peeled and sliced into 1-inch pieces)
8 mini golden potatoes (quartered)
1 sweet onion (chopped)
1 teaspoon Italian seasoning
½ teaspoon minced fresh garlic
¼ teaspoon salt
1 Smithfield Marinated Fresh Roasted Garlic & Herb Pork Sirloin (about 23 ounces)
1 lemon (halved)
½ cup chicken broth
2 cups fresh or frozen broccoli florets

Steps:

  • Place carrots, potatoes, and onions in the bottom of a large slow cooker. Sprinkle Italian seasoning, garlic and salt over the vegetables and toss to coat.
  • Place pork on top of the vegetables.
  • Add lemon to the slow cooker and pour chicken broth over everything.
  • Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  • I don't think that broccoli cooks well in the slow cooker because it gets mushy. Instead, I prefer to steam my broccoli separately so that it's just crisp-tender, and then stir it into the pot at the end of the cooking time.
  • As an alternative, you can stir the raw broccoli into the slow cooker during the final 1 hour of cooking time so that it has an opportunity to cook with the rest of the dish, but it doesn't become overcooked.
  • Slice pork loin just before serving.

1 Smithfield Marinated Roasted Garlic & Herb Pork Roast (or other cut)
2 lemons
6 cloves garlic (minced)
6 cups halved purple potatoes
4 cups fresh green beans
1 onion (quartered)
chicken broth (enough to cover vegetable by 1/2 inch)
garlic salt & pepper to taste

Steps:

  • In a skillet on high heat, sear the pork on each side. Place in your slow cooker (I use a 6 quart). Spread the minced garlic cloves, purple potatoes, green beans, & onion around the pork. Squeeze the juice of one lemon evenly over top of the vegetables & pork. Sprinkle with garlic salt & pepper to taste. Slice the other lemon & arrange over top of the vegetables & pork. Pour in enough chicken broth to cover the vegetables by 1/2".
  • Cook on low for 6 hours. Slice the pork & serve with the pan drippings ladled over top.

1 (3 lb) boneless pork loin roast
1 tablespoon vegetable oil
1 teaspoon salt
1 teaspoon fresh coarse ground black pepper
1 cup chicken broth
1 medium onion, sliced
6 garlic cloves, peeled
8 slices fresh lemon peel (3x1/2-inch each)
1 1/2 lbs red potatoes, cut in 1/2-inch thick slices
1 (16 ounce) bag peeled baby carrots
1/2 teaspoon dried thyme

Steps:

  • In 12-inch skillet, heat oil over medium-high heat until hot. Place pork roast in skillet and cook until just browned on all sides.
  • Transfer pork to 5 to 6 quart slow-cooker pot, sprinkle with salt and pepper. Add broth, onion, garlic, lemon peel, potatoes and carrots to pot. Sprinkle with thyme.
  • Cover slow cooker with lid and cook pork and vegetables on the low setting 7 to 8 hours or until pork and vegetables are tender. Skim any fat from broth. Serve pork with vegetables and broth.

2 pkg mccormicks dry pork gravy mix (optional)
mashed potatoes with ?
veggies of choice that go with pork

Steps:

  • 1. Spary your crockpot with cooking spray. Purchase a Garlic and Lemon Pork Loin Roast at your market. Remove plastic packaging and put into Crockpot.
  • 2. Set temperature control on high for two (2) hours. After two hours, continue cooking on low for another two(2) hours. If you do not have a temp control on yours, cook it on high for two hours and test it to see if it is done, by using a fork. If it goes in easily, it is done. If not, continue cooking checking each hour.
  • 3. for those of you with a temp control: this can be cooked even longer but it will fall apart on you. I have made this time and time again and it is just the right time for making perfect cuts. Serve with mashed potatoes and veggies of choice with Pork You may take McCormicks packaged Pork Gravy mix and use two pks to make a gravy with the juice from the Pork. It is up to you. If no gravy..........use Butter for potatoes or mix in a cup of sour cream and chives. ENJOY

1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds skinless, boneless chicken breast halves
2 tablespoons butter
¼ cup water
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon chicken bouillon granules
1 teaspoon chopped fresh parsley

Steps:

  • In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker.
  • In the same skillet, mix the water, lemon juice, garlic, and bouillon. Bring the mixture to boil. Pour over the chicken in the slow cooker.
  • Cover, and cook on High for 3 hours, or Low for 6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time.

1 lemon, washed and sliced
1/4 cup olive oil
1 1/2 tablespoons lemon juice

  • Mix marinade ingredients.
  • Place pork chops in slow cooker.
