LAMB NECK STEW
The title doesn't sound like much, but it is very good. I love lamb, but often can't afford good cuts. I find crock pot cooking Lamb Necks is cheap good eats.

Steps:
- Brown the lamb necks in a bit of oil.
- Made a sauce in a small bowl by mixing the tomato sauce with the remaining ingredients on down the list.
- Place the vegetables in the crock pot. Pour over half the sauce and mix to coat the vegetables.
- Add the lamb necks, and pour the rest of the sauce over top.
- Cover and cook on low 8 hours.

Steps:
- Brown lamb neck in olive oil.
- add stock.
- add tomatoes.
- add garlic.
- add chilli powder.
- Bring to boil.
- Simmer on stove top with lid on for 2-3 hours.
- Remove lid, simmer for 1-2 hours until meat falls from bones and sauce is thick and chunky.
- Cook pasta
- Serve sauce over pasta.
- suck meat off bones.
- Wipe sauce off chin.

LAMB IN THE SLOW COOKER
We adore Australian or New Zealand lamb, which has more flavor than the blander US lamb. So I was happy to have been given this simple recipe using a Crock-Pot®. Great served with mashed potatoes.

Steps:
- Heat oil in a large skillet over medium-high heat. Add lamb and cook until outside is browned, about 5 minutes per side. Remove to a plate and add onion to the oil in the skillet. Saute until lightly browned, about 5 minutes.
- Place onion in the bottom of a slow cooker pot and place the lamb roast on top. Mix water, soy sauce, garlic, and onion soup mix together and pour over the roast. Cook on Low for 8 to 10 hours.
- Remove roast, cover lightly with foil, and let rest for 20 minutes before carving. Mix butter and flour into a paste. Add small pieces of this paste to the hot cooking liquid, mixing well to incorporate. Cook until sauce reaches desired thickness, 5 to 6 minutes.
- Slice roast thinly and serve with gravy.

- Preheat the oven to 160C/325F/gas mark 3. Warm 1 tbsp oil over a high heat in an ovenproof casserole dish. Season the lamb pieces all over with salt and pepper, then brown them in batches to nice, deep brown for a few minutes on each side, transferring them to a plate as you go.
- There should be some residual lamb fat in the casserole, but add extra oil if you need to. Turn the heat down to medium. Add the onion, carrot and celery. Cook gently for 10 minutes, stirring occasionally, until they’re softened and aromatic. Scrape up any brown bits from the lamb that may have stuck to the bottom of the pan (discard anything if burned). Add the garlic, bay and thyme, harissa and preserved lemon and cook for a further 5 minutes, stirring, until it’s all smelling really good. Add the lamb to the dish, laying them flat. Cover the meat with the wine and 600ml cold water, bring to a boil, then reduce to a simmer. Cover and cook in the oven for 1½-2 hours, until the meat is tender.
- Mix the relish ingredients together in a bowl just before serving and serve the lamb neck on cooked pearl barley, with some of the relish spooned over.
