A rich and flavorful stew that's easy to make in a slow cooker. With a beefy, herby tomato broth and fork-tender bites of beef and vegetables, it's straight-up comfort food!

Provided by Brenda | A Farmgirl's Dabbles

Categories     Soup

Time 4h40m

Number Of Ingredients 19

2.5 lbs. well-marbled beef chuck roast, cut into 1" to 1-1/2" pieces, any large pieces of solid fat discarded
1/4 c. all-purpose flour
1 tsp. kosher salt
1/2 tsp. freshly ground black pepper
4 T. olive oil, divided
1 T. unsalted butter
1 large yellow onion, diced
1 large carrot, diced
6 large cloves garlic, minced
1 c. robust, dry red wine
29 oz. (two 14.5-oz. cans) Red Gold Diced Tomatoes
1/3 c. Red Gold Tomato Paste
4 c. low sodium beef broth
1 T. chopped fresh thyme
1 T. chopped fresh oregano
2 bay leaves
3 large carrots, sliced into 1/4" coins
16 oz. cremini mushrooms, quartered
fresh basil leaves, plus additional thyme and oregano leaves, for garnish if desired

Steps:

  • Place beef pieces in a medium mixing bowl that has a tight-fitting lid. Sprinkle flour, salt, and pepper evenly over the beef. Cover bowl tightly, then flip and shake the bowl a few times to completely coat the beef. If you do not have a bowl with a lid, place these ingredients in a ziplock bag and then flip and shake to coat the beef. Set aside.
  • If using a slow cooker with a brown/sauté function: Heat slow cooker and add 1 tablespoon of the oil and the tablespoon of butter. Once hot, add diced onion and carrot. Sauté, stirring occasionally, until vegetables are just softened, about 6 minutes. Stir in garlic and sauté 1 more minute. Remove vegetables to a large plate or a rimmed pan. If you do not have a brown/sauté function on your slow cooker: Complete this step in a large nonstick skillet on the stovetop over medium-high heat.
  • If using a slow cooker with a brown/sauté function: Add 2 more tablespoons of the oil to the hot slow cooker, still on the brown/sauté function. Once oil is shimmering hot, add half the beef in an even layer. Once the bottom sides of the beef pieces are very nicely browned (which means, added flavor!), flip them over and brown opposite sides. I use a tongs for flipping. Then remove beef to the plate with sauteéd vegetables. Add remaining 1 tablespoon of oil and let it come to shimmering hot. Then add remaining half of beef in an even layer, and repeat the browning process. Remove beef to the plate with other beef and vegetables. If you do not have a brown/sauté function on your slow cooker: Complete this step in a large nonstick skillet on the stovetop over medium-high heat.
  • If using a slow cooker with a brown/sauté function: Turn slow cooker to high heat and add wine, scraping and stirring any remaining bits and juices from bottom of slow cooker. Bring wine to a boil, and then cook for 2 minutes. If you do not have a brown/sauté function on your slow cooker: Complete this step in the same large skillet used to cook the vegetables and beef, scraping and stirring any remaining bits and juices into the wine.
  • If using a slow cooker with a brown/sauté function: Add beef and vegetables back to slow cooker. Then add diced tomatoes (do not drain), tomato paste, beef broth, thyme, oregano, bay leaves, carrot coins, and mushrooms. Cover and cook on high for 3 hours. Then taste test to see if stew needs more salt and/or pepper. With the ingredients I use, I usually add an additional 2 teaspoons of kosher salt and 1/2 teaspoon of black pepper at this point. Cover and cook for 1 more hour, to allow the flavors to deepen and the beef to get "fork-tender". If the beef is not ultra tender after 4 hours, let it cook a bit longer until it is. If you do not have a brown/sauté function on your slow cooker: Carefully pour hot wine into slow cooker, and turn slow cooker to high heat. Follow remaining instructions from this Step 5, until beef is fork-tender.
  • Discard bay leaves. To serve, ladle hot stew into individual bowls. Garnish with fresh thyme, oregano, and small basil leaves, if desired.

Number Of Ingredients 16

MEAT
2 tablespoons olive oil
1.5 pounds beef stewing meat in chunks
VEGETABLES
1 large onion (chopped)
4 large carrots peeled (ends trimmed and cut into chunks)
4 large celery sticks trimmed and thickly sliced
1/2 teaspoon dried rosemary
1/2 teaspoon dried sage
SAUCE
1 cup dry red wine
2 cups tomato sauce (I used San Marzano tomatoes puréed (you can use a fork to break them up or pulse in food processor))
1 sprig fresh rosemary
2 bay leaves
1-2 teaspoons salt
Black pepper to taste

Steps:

  • MEAT AND VEGGIES
  • Heat the oil in a large and deep skillet (I used a large cast iron skilleover medium-high heat. When the oil is heated up, place the beef into the hot pan. Brown beef until all sides have a nice sear on them (do not stir too much as the beef will not sear properly). Add in the onions, carrots and celery (do not stir too much, or the beef will not brown properly). Toss in the dried herbs, if using.
  • Pour the red wine into the pan, scratching the browned bits off the bottom. Add the salt and pepper. Cook until thickened, about 1 minute. Add the tomato sauce. Bring to a boil. Check the seasoning and add more salt and pepper, if needed. Remove to a 5-6 quart slow cooker.
  • SLOW COOKER
  • Carefully transfer to a 5-6 quart slow cooker. Add the tomato sauce on top of the meat and veggies. Add in the bay leaves and rosemary sprig. Stir it all gently together to make sure the sauce goes to the bottom of the meat and veggies.
  • COOK
  • Cook the stew on LOW for 8 hours or on HIGH for 4 hours. Adjust seasoning as needed. Either finish cooking with the lid open (if you want a thicker stew)or keep lid closed if you want it soupier. Before serving, discard the bay leaves and rosemary sprig.

SLOW COOKER ITALIAN BEEF

Recipe originally called for a chuck roast but the picture was definitely not a chuck roast. Next time, I will buy a better cut of meat. It also called for beef broth but due to sodium, I used water and it was really tasty that way.

1 large yellow onion (, diced)
4 cloves garlic (, finely minced)
5 Tbsp olive oil (, divided)
2 1/2 lbs beef shoulder (, chuck roast or rump roast, trimmed of fat and cut into 1-inch pieces)
1/3 cup all-purpose flour
salt and freshly ground black pepper
4 cups low-sodium beef broth
1 Tbsp red wine vinegar
2 (15 oz) cans diced tomatoes
1 tsp dried oregano
1 tsp dried thyme
3/4 tsp dried rosemary (, crushed)
1/2 tsp dried marjoram
2 bay leaves
8 oz cremini mushroom (, sliced (optional))
4 medium carrots (, chopped into 1/2-inch thick pieces (2 cups))
1 1/2 lbs Russet potatoes (, peeled and diced into 1-inch pieces)
3 Tbsp chopped fresh basil
3 Tbsp chopped fresh parsley
Parmesan or Romano cheese (, for serving (optional))

  • Return pot to medium-high heat, add remaining 3 Tbsp olive oil. Once oil is hot add half of the beef and cook tossing occasionally until beef has browned, about 4 - 5 minutes.
  • Transfer browned beef to a plate then add another 1 Tbsp oil to pot and add remaining half of the beef and brown.
  • Slowly add 1 cup broth and then add red wine vinegar and beef on plate and cook, stirring frequently while scraping bottom of pan to loosen browned bits on bottom, until sauce has thickened.
  • Add remaining 3 cups beef broth, diced tomatoes, oregano, thyme, rosemary, marjoram, bay leaves, mushrooms and sauteed veggie mixture. Bring mixture just to a boil, stirring frequently. Season with salt and pepper to taste.
  • Reduce heat to low, cover pot and simmer 1 1/2 hours, stirring occasionally. Add potatoes and carrots and cook about 1 1/2 longer until beef and veggies are very tender.
  • Serve warm sprinkled with fresh basil and parsley and parmesan if desired.

It turned out so good I wanted to save what I did so I could make again! Chicken broth can be used instead of beef broth if desired.

  • Add onion and garlic to the pan and cook for 2 minutes. Stir in Italian seasoning and tomato paste, then stir in 1/2 cup beef broth and the soy sauce. Scrape any browned bits off the bottom of the pan, then transfer to the slow cooker (OR add the meat back into the Dutch oven).

  • Slow Cooker Chicken Alfredo. Who doesn’t love creamy alfredo sauce with al dente pasta and roasted chicken? It’s about as close to perfect as food gets if you ask me!
  • Slow Cooker Lasagna. Have you ever cooked lasagna in the oven only to have the edges burned and the middle still cold? Slow cookers use evenly distributed heat, so everything cooks at the same time.
  • Slow Cooker Spaghetti Sauce. When I make sauce on the stove, I usually leave it cooking for at least an hour. Maybe two if I forget about it. I think it’s best when it simmers slowly so all the ingredients can marry.
  • Slow Cooker Beef Ragu. Ragu is similar to bolognese sauce, with the biggest difference being the former is thicker and uses red wine to make it extra decadent.
  • Crockpot Stuffed Shells. I still remember trying to stuff pasta shells and struggling to get the spoon inside. Then when I saw someone using a piping bag, I had a serious facepalm moment.
  • Minestrone Soup. Soup is the Crockpot’s best friend. There’s nothing better than throwing a whole bunch of ingredients into the pot with broth and coming back to a comforting bowl of goodness.
  • Crock Pot Pizza Casserole. I prefer to think of this as pizza-pasta, but you can call it whatever you like. As you might’ve guessed, it’s the perfect blend of hearty pasta and yummy pizza flavors.
  • Crock Pot Italian Sloppy Joe. If you’re looking for a classic sloppy Joe that’s maybe a little lighter, you’ll have to try this turkey version. I love ground turkey (and chicken) because they’re wonderfully lean and super tasty.
  • Soft And Creamy Slow Cooker Polenta. I have a dangerous weakness for polenta. When it’s made with cream and cheese, I just can’t get enough. As with rice, you’ll want to cook the polenta in stock first and then add the cream at the end.
  • Slow Cooker Cheesy Tortellini. Pasta is great. It’s cheap, easy to cook, and a pretty safe dinner option no matter who you’re cooking for. But if you like your comfort food with extra comfort, you have to try making your next pasta meal with three-cheese tortellini.
