1 cup raisins
1 cup dried blueberries
1 cup dates
1 cup dried cranberries
2 cups dried apples
2 cups prunes
2 cups dried apricots
8 ounces peanut butter
1 cup sunflower seeds
8 cups rolled oats
12 ounces pancake mix
16 ounces honey

Steps:

  • Dice all of the fruit to the same size as the raisins.
  • Add fruit and peanut butter to a large mixing bowl and knead.
  • Add sunflower seeds, rolled oats, and pancake mix and knead.
  • Add the honey and knead till all is mixed well.
  • Press the mix into a baking tin (cookie sheets work well) 3/8" to 1/2" thick and as even as possible.
  • Bake in a conventional oven at 375 degrees for about 20 minute or until the top is a light brown.
  • Remove from oven and allow to cool, then turn out on a large cutting board and cut into individual servings.

1/4 cup quinoa, rinsed
2 cups old-fashioned oats
10 Medjool dates, pitted
3 tablespoons coconut oil
2/3 cup almond butter
3 tablespoons whey protein powder
2 tablespoons unsweetened coconut flakes
1 tablespoon chia seeds
1/2 teaspoon vanilla extract

Steps:

  • Line an 8-in. square baking pan with parchment, letting ends extend up sides. Prepare quinoa according to package directions. Transfer to a large bowl. Set aside and allow to cool completely. , In a food processor, combine dates, coconut oil, almond butter, protein powder and vanilla. Cover and pulse until blended. Add coconut and chia seeds. Pulse until combined. Add oats and cooked quinoa. Pulse until combined., Press firmly into prepared pan. Cover and refrigerate for at least 1 hour or until set. Lifting with parchment, remove from pan. Using a serrated knife, cut into bars. Store in the refrigerator.

2 cups rolled oats or 2 cups quick-cooking oats
1/4 cup wheat germ
1/2 cup diced dried apricot
1/2 cup raisins
1/4 cup sunflower seeds
1/2 teaspoon cinnamon
1 pinch salt
1 tablespoon melted butter or 1 tablespoon mild vegetable oil
1/2 cup brown sugar
1/4 cup liquid honey
1 egg, lightly beaten
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a 9-inch square baking pan with non-stick cooking spray or brush with oil.
  • Combine oats,wheat germ, apricots, raisins, sunflower seeds, cinnamon and salt in a large bowl.
  • Combine melted butter and brown sugar in a small bowl until sugar is dissolved.
  • Stir in honey, egg and vanilla until smooth.
  • Stir liquid mixture into dry mixture until dry ingredients are evenly moistened.
  • Press mixture firmly and evenly in prepared pan.
  • Bake for 20 minutes, or until golden and firm.
  • Cool on wire rack before cutting into squares or bars.
  • Wrap individually for easy grab and go breakfasts and snacks.

  • Spread walnuts and sunflower seeds in an even layer on a rimmed baking sheet and bake for 5 minutes. Add coconut to baking sheet in an even layer. Return to oven and bake until coconut is golden and fragrant, about 3 minutes. Let cool to room temperature.
  • Meanwhile, process oats and salt in a food processor until finely ground; transfer to a small bowl.
  • Add prunes and process until a smooth paste forms, about 2 minutes. Add oats and cooled walnut mixture and pulse, scraping down sides of bowl as needed, until well combined but pieces of walnuts are still visible, about 15 pulses.
