4 pounds lean raw corned beef brisket
3 tablespoons pickling spice (often included with brisket)
1 medium rutabaga, halved and cut into wedges
1 pound large carrots, cut into 4-inch pieces
1 1/4 pounds large fingerling potatoes
1 leek, white and light-green parts only, cut into 3-inch pieces
1/2 head Savoy cabbage, cut into wedges
1/3 cup horseradish, drained
1/3 cup creme fraiche or sour cream

Steps:

  • Place the corned beef in a large slow cooker and scatter the pickling spices on top. Layer the rutabaga, carrots, potatoes and leek in the cooker (in this order for even cooking). Add enough hot water (4 to 5 cups) to cover the meat by at least 1 inch, put the lid on the slow cooker and cook on high, 7 to 8 hours.
  • Remove the meat and vegetables from the slow cooker and keep warm. Put the cabbage in a microwave-safe dish with 2 cups cooking liquid from the slow cooker, cover and microwave until tender, 7 to 10 minutes. Meanwhile, boil another cup of cooking liquid in a small skillet until reduced by half, about 10 minutes. Mix with the horseradish and creme fraeche in a small bowl.
  • Slice the corned beef and serve with the slow-cooked vegetables, cabbage and sauce; reserve about a quarter each of the meat and vegetables and 1 1/2 cups cooking liquid for Corned Beef Hash.

6-8 small red potatoes (cut into large wedges)
3 medium carrots (thick sliced)
2 ribs celery (thick sliced)
3-5 pounds corned beef brisket ((fat trimmed off and rinsed))
1 cabbage (cut into large wedges (about 2 pounds))
2 garlic cloves (minced)
1 small bottle dark beer (about 12 ounces)
½ cup brown sugar
½ cup brown mustard
½ cup water
1 Tbsp butter
½ cup honey or agave
½ cup brown mustard
¼ cup Greek yogurt (optional)

Steps:

  • Layer the potatoes 1/2 cup celery and ½ cup carrots in the bottom of slow cooker. Place corned beef on veggies. Add garlic and packet of seasoning that comes with the corned beef. Add beer and water until meat is covered. Cover and cook on LOW for 8-9 hours (or HIGH for 4-5 hours).
  • Just prior to corned beef being done, melt butter in small saucepan -- add water and brown sugar. Heat over medium-high heat. After about 5 minutes, stir in mustard. Simmering another 2-3 minutes. Pour in dish and set aside.
  • When corned beef is ready, remove and place on cookie tray and tent with foil. Place large pot in sink with colander inside. Pour out the slow cooker ingredients saving both liquid and potatoes. Discard cooked carrots and celery. Preheat broiler. Place pot of liquid on stove on medium-high until boiling. Boil the remaining carrots and celery for 3 minutes then add cabbage and boil for 3 minutes. Remove from heat and drain liquid.
  • Remove foil tent. Brush glaze on top of corned beef and broil on low, 6-inches from the element for 30 minutes adding glaze every 10 minutes. Always keep an eye on the broiler to avoid burning. After 30 minutes remove corned beef and place on cutting board. Cut corned beef across the grain. Serve with veggies and honey mustard sauce.

One 4-pound piece corned beef brisket, rinsed
12 ounces stout beer
2 tablespoons pickling spice
1/2 small head green cabbage, core intact and cut into thick wedges
1/2 cup sour cream
1/4 cup prepared horseradish
2 tablespoons whole-grain mustard
3 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1/2 cup loosely packed parsley leaves, chopped

Steps:

  • Layer the potatoes, carrots, onions, celery and thyme in the insert of a 6-quart slow cooker. Put the brisket on top of the vegetables and add the beer and pickling spice. Add enough water to just cover the brisket. Cover and cook on low until the meat and vegetables are tender, about 8 hours.
  • Arrange the cabbage over the brisket (it's OK if the cooker seems crowded), cover and cook until soft and wilted, 45 minutes to 1 hour more.
  • Whisk together the sour cream, horseradish and mustard in a small bowl.
  • Remove the cabbage and toss with 1 tablespoon of the butter and pepper to taste in a large bowl. Remove the meat and let rest. Strain the remaining vegetables (reserve some of the cooking broth to serve on the side if you like) and toss with the parsley, the remaining 2 tablespoons butter and salt and pepper to taste.
  • Slice the corned beef against the grain and serve with the vegetables, horseradish sauce and broth if using.

  • Put the peppercorns, coriander seeds, mustard seeds, garlic and bay leaves in a piece of cheesecloth and tie tightly with butcher's twine to make a sachet. Put the corned beef in a slow cooker and pour enough water over it until just submerged (2 to 3 quarts). Add the sachet and brown sugar and cook until the meat is just tender, 8 hours on low or 4 hours on high.
  • Two hours (on low) or 1 hour (on high) before the corned beef is done, add the carrots, potatoes and cabbage on top of the meat, making sure the veggies are submerged. Continue to cook until the vegetables are tender; if the beef is fork-tender and fully cooked but the vegetables still need time, remove the beef and tent with foil, then continue to cook the veggies until tender.
  • Transfer the veggies to a bowl using a spider or slotted spoon and immediately toss with the rice wine vinegar.
  • Slice the corned beef and plate with an assortment of the veggies and some Horseradish Mustard. Garnish with the chives.

Get a corned beef made from flat-cut brisket, if you can, as it will be easier to slice into neat, uniform slabs. (The point cut has more striations of fat and may fall apart when sliced.) Corned beef is often braised in beer, and you could certainly do that, but a slightly sweet wine, like a semi-dry Riesling, balances the beef's saltiness. 1 1/4 cups semi-dry white wine, such as Riesling
1 pound red or Yukon gold potatoes, cut into 1- to 2-inch pieces
2 to 3 large carrots (about 1/2 pound), peeled and cut into 1- to 2-inch pieces
1/2 small head green or savoy cabbage (about 1 pound), core left intact, cut into 4 wedges
3 tablespoons Dijon mustard, plus more for serving

Steps:

  • Remove the corned beef from its packaging in the sink and reserve the spice packet. Rinse the beef well under cold running water and pat it dry with paper towels. (If you don't rinse off the brine, the meat will be too salty.) If there is a substantial fat cap on top of the beef, place the beef on a cutting board and trim most of it, if you'd like. (The fat will not completely render away during cooking.) Be sure to leave at least a thin layer of fat on top, about 1/8- to 1/4-inch thick, to keep the meat moist.

3 -4 lbs corned beef brisket
1 onion, coarsely chopped
1/4 cup cider vinegar
1/4 cup brown sugar
1 -2 tablespoon Dijon mustard
1/2 teaspoon pepper
1/4 teaspoon ground cloves
1 medium head of cabbage, cut into wedges
1 apple, sliced
1/4-1/2 teaspoon caraway seed (optional)
12 ounces dark beer

Steps:

  • Place corned beef brisket and any seasonings included in your slow cooker. Top with onion.
  • Whisk together the vinegar, brown sugar, mustard, pepper and cloves and pour over top.
  • Add the cabbage wedges and apple slices and caraway seeds if using them.
  • Pour beer over top.
  • Cover and cook on low for about 7 hours or high for about 4-5 hours.

I found this in a weekly magazine pull out. I've never been too keen on corned beef but it's my husbands favourite meat. I had always made it with mustard sauce and thought this sounded nice for a change.

1 1/2 kg piece corned beef, rinsed (silverside)
1 large onion, quartered
1 large carrot, sliced thickly
2 tablespoons red wine vinegar
2 tablespoons brown sugar
1/2 cup bottled plum sauce (I used Barkers)
2 tablespoons red wine vinegar
2 tablespoons Worcestershire sauce
2 tablespoons tomato ketchup

Steps:

  • Place the first five ingredients in to a large slow cooker, then pour over enough cold water to cover meat.
  • Cook on low for 7-9 hours or high for 4-6 hours until meat is tender.
  • Remove meat when cooked and put on serving plate.
  • Pour the plum glaze over entire piece of meat and slice to serve.
  • Plum Glaze.
  • Combine all ingredients for the plum glaze in a small saucepan and bring to the boil.
  • Let simmer for 2-3 minutes to reduce to a thick glaze.
  • Pour over meat before slicing.

6 medium carrots, sliced
6 medium potatoes, peeled and cut into quarters
2 medium onions, cut in quarters
2 cloves smashed garlic
2 1/2 lbs boneless fresh corn beef brisket
1 1/2 teaspoons salt
black pepper
1/4 teaspoon thyme
2 cups beef broth (can also use water)
1 small cabbage, cut in wedges

Steps:

  • In bottom of crockpot, place carrots, potatoes, onions and garlic.
  • Trim fat from brisket and sprinkle with salt, black pepper and thyme.
  • Place brisket on top of vegetables.
  • Add beef broth, cover and cook on low for 10 to 12 hours.
  • Before serving, remove 1 cup of broth from crockpot and pour into skillet.
  • Add cabbage wedges and simmer until cabbage is tender.
  • Cut meat across the grain and serve with vegetables and broth.

This is a typical St. Patrick's Day meal which is simple, with few ingredients and cooked in a slow cooker so it is super easy, yet delicious! Serve in a large soup mug or bowl with Irish soda bread, rye bread, or rolls on the side.

10 medium red potatoes, scrubbed
1 (3 pound) corned beef brisket
3 tablespoons dried onion flakes
1 ½ teaspoons pickling spice
1 teaspoon whole black peppercorns
1 pinch caraway seeds
1 small head green cabbage, cored and chopped
1 teaspoon juniper berries

Steps:

  • Place potatoes in the bottom of a large slow cooker and cover with water. Rub corned beef with onion flakes, pickling spice, peppercorns, and caraway seeds. Add to the slow cooker. Add cabbage and juniper berries on top; do not worry if the liquid does not cover the cabbage, it will steam and more liquid will come out of the meat to add to the broth.
  • Cover and cook on Low until tender, 8 to 12 hours. Serve.

4 large carrots, peeled and cut into matchstick pieces
10 baby red potatoes, quartered
1 onion, peeled and cut into bite-sized pieces
4 cups water
1 (4 lb) corned beef brisket, with spice packet
6 ounces beer
1/2 head cabbage, coarsely chopped

Steps:

  • Place carrots, potatoes, and onion into the bottom of a slow cooker, pour in water, and put the brisket on top of the vegetables. Pour beer over the brisket. Sprinkle spices from the packet, cover, and set the cooker on High.
  • Cook the brisket for about 8 hours. An hour before serving, stir in cabbage and cook for 1 more hour.
