SLOW COOKER GINGERBREAD CAKE

Moist, dense and decadent gingerbread make in a slow cooker.

Number Of Ingredients 12

1/2 cup salted butter (room temperature (not melted))
1/2 cup sugar
1 large egg
1 tsp. vanilla
1 cup molasses
2 1/2 cups flour
3/4 tsp. salt
1 tsp. cloves
1 1/2 tsp. ground cinnamon
2 tsp. ground ginger (powder)
1 1/2 tsp. baking soda ((NOT BAKING POWDER))
1 cup hot water (WAIT TO ADD, READ INSTRUCTIONS (To heat water, I place in microwave for 1 minute 30 seconds))

Steps:

  • NOTE - THIS RECIPE WILL WORK BEST WITH A OVAL SLOW COOKER. Using a round slow cooker may not allow the cake to set in the middle before the edges burn.
  • You will need two bowls (both medium sized).
  • In one bowl add the softened butter and sugar. Using a hand mixer (or kitchen aid with paddle attachment) cream the sugar and butter together. Add the egg and vanilla and mix until incorporated. Next add the molasses and blend until smooth.
  • In the other bowl add the flour, salt, spices, and baking soda. Stir.
  • Pour this dry mixture slowly into the wet ingredients while blending. This may be a little chunky.
  • Next pour in the hot water and continue mixing until a smooth batter forms.
  • Spray your slow cooker non-stick spray. Pour in the batter. Place the lid on the slow cooker.
  • Set the slow cooker to HIGH and cook for 2 hours and 10 minutes without opening the lid during the cooking time. Check on the cake towards the end of the cooking time by peering through the lid. You can jiggle the stoneware to see if the cake is still jiggly. If it is still jiggly, continue cooking.
  • Remove the stoneware from the heating element of the slow cooker and set on a cooking rack after the cooking time is up.
  • Let cool until the cake is at room temperature.
  • Best if served cooled (the spices are more profound).
  • Serve topped with whipped cream, cool whip or ice cream.

½ cup unsalted butter, softened
½ cup white sugar
1 large egg, lightly beaten
1 cup molasses
2 ½ cups all-purpose flour

1 cup hot coffee
½ cup powdered sugar

2 medium lemons, juiced

Steps:

  • Beat butter and sugar for cake in a bowl with an electric mixer until creamy. Add egg and mix well. Mix in molasses.
  • Sift flour, ginger, baking soda, cinnamon, cloves, and salt together in another bowl. Stir into butter mixture. Add coffee and beat well.
  • Grease and flour the inside of a small, quart-sized French baking dish or baking insert. Pour in batter. Place in the slow cooker. Pour water around the insert or baking dish, halfway up the sides. Cover insert with lid, or cover baking dish with paper towels.
  • Cover cooker with lid slightly ajar to allow excess moisture to escape. Cook until edges are golden and a knife inserted into the center comes out clean, on Low, 3 to 4 hours, or High, 1 3/4 to 2 hours. Remove dish from the cooke and let cool on a wire rack for at least 5 minutes before running a knife around the outer edge of the cake and inverting onto a serving plate.
  • While cake cools, combine powdered sugar, water, lemon juice, cornstarch, and salt for lemon sauce in a saucepan, stirring with each addition. Cook over medium heat until thick and bubbly, about 1 minute. Remove from the heat and stir in butter.
  • Top cake with lemon sauce.

3/4 cup water
1/2 cup vegetable oil
1/2 cup sour cream
1 teaspoon ground ginger

1 cup powdered sugar
1/2 teaspoon grated fresh lemon peel
4 teaspoons fresh lemon juice

Steps:

  • Heat oven to 325°F. Generously spray 12-cup fluted tube cake pan with baking spray with flour.

2 cups all-purpose flour
1 tablespoon unsweetened cocoa powder
2 1/4 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/8 teaspoon nutmeg, preferably fresh
3/4 teaspoon salt
1 cup, packed, dark brown sugar
3 tablespoons turbinado sugar
2 1/2 tablespoons finely grated fresh ginger (a 2-ounce piece, peeled)
Grated zest of 2 lemons
1/2 cup grapeseed oil
1 large egg
3/4 cup stout beer
3/4 cup molasses
1/3 cup brewed coffee
3/4 teaspoon baking soda
1 cup confectioners' sugar, sifted
2 to 4 tablespoons lemon juice

Steps:

  • Preheat oven to 375 degrees. Grease an 8-inch springform cake pan and line bottom with parchment paper.
  • In a bowl, whisk flour, cocoa, baking powder, cinnamon, nutmeg and 1/2 teaspoon salt. Set aside. In a large bowl combine brown sugar, turbinado, ginger, zest of 1 lemon and oil. Beat in egg.
  • Place beer, molasses and coffee in a deep pot, at least 3 quarts. Bring to a boil. Remove from heat and stir in baking soda. Mixture will bubble up. Allow to cool 5 minutes.
  • Whisk flour mixture alternately with beer mixture into brown sugar mixture, in 3 shifts. Pour batter in pan and bake 40 minutes without opening oven. Give pan a 180-degree turn and bake another 15 minutes, until cake is springy and a tester comes out clean. Cool on a rack. When cool, remove sides of pan, invert briefly to remove bottom of pan and paper and set upright on a plate.
  • Place confectioners' sugar in a bowl, whisk in remaining zest and salt, then lemon juice (add up to 2 additional tablespoons to moisten if necessary). Spread over top of cake, allowing glaze to drip down the sides.

Make a double recipe as a sheet cake (bake for only 20 minutes @ 325) with a double recipe of Recipe#127144! I don't know why I haven't updated this sooner -- I've been making it this way for at least the last 2 years already!!
