CANNING MARINARA SAUCE

I found this recipe online years ago, but I don't recall where. It's a lot of work, but if you want to use your fresh garden tomatoes this is a great way to do it. Then the next time you make mozzarella sticks or breadsticks the marinara sauce is already done.

Number Of Ingredients 13

1 1/4 cups finely chopped onions
1 1/2 cups finely chopped celery
1 cup finely chopped carrot
1/2 cup olive oil
1 teaspoon minced garlic
8 lbs ripe tomatoes, peeled, seeded and chopped
1 teaspoon sugar
1 bay leaf
1 teaspoon dried basil
1 teaspoon oregano
1 teaspoon marjoram
1 teaspoon salt
1 teaspoon pepper

Steps:

  • In a large pot cook onion, celery, and carrots in oil until tender (around 20 minutes).
  • Stir a few times and add garlic.
  • Cook for 2 more minutes.
  • Add tomatoes, sugar, and pepper and stir.
  • Put through a food mill if you would like a smoother sauce or whirl in a food processor.
  • Add remaining seasonings except salt and cook to desired consistency.
  • Add salt and remove bay leaf.
  • Pack into hot clean jars leaving 1/2 inch head space.
  • Process for 45 minutes (altitudes up to 1000 feet).
  • Yield depends on how much you cook it down, but it will make approximately 8 pint jars.

1/2 teaspoon salt
1/2 teaspoon dried oregano leaves
1/2 teaspoon fennel seed
16 oz uncooked multigrain spaghetti
2 tablespoons shredded Parmesan cheese

Steps:

  • Spray 3- to 4-quart slow cooker with cooking spray. In cooker, mix all ingredients except spaghetti and Parmesan cheese.
  • Cover; cook on Low heat setting 4 to 5 hours.
  • Cook and drain spaghetti as directed on package. Serve sauce over spaghetti; sprinkle with cheese.

My favorite way to eat it is to pour over raw zucchini 'pasta' for an extra-fresh and tasty meal that's very healthy, too! A great recipe for using up extra-ripe tomatoes from your garden. Double the batch and freeze half; it freezes well.

3 tablespoons olive oil
½ onion, chopped
8 large tomatoes, peeled and cut into big chunks

½ cup red wine
1 tablespoon honey

1 teaspoon salt

Steps:

  • Heat olive oil in a stockpot over medium heat. Cook and stir onion in hot oil until softened, about 5 minutes; add tomatoes, garlic, and bay leaf. Bring the liquid from the tomatoes to a boil, reduce to medium-low, and simmer mixture until tomatoes are softened, about 30 minutes.
  • Stir red wine, honey, basil, oregano, marjoram, salt, black pepper, fennel seed, and crushed red pepper into the tomato mixture; bring again to a simmer and cook until herbs have flavored the sauce, about 30 minutes more.
  • Stir balsamic vinegar into the sauce.

4 lbs roma tomatoes, chopped (12 cups)
1 cup diced onion
6 garlic cloves, chopped
1 teaspoon kosher salt
1/2 teaspoon red pepper flakes
1/4 cup extra-virgin olive oil
1/2 cup fresh basil leaf, chopped

Steps:

  • Combine tomatoes, onion, garlic, salt, and pepper flakes in a 3- to 4-qt. slow cooker.
  • Stir in oil. Cover; cook on high-heat setting for 3-4 hours or low-heat setting for 5-6 hours.
  • Using a hand-held immersion blender, puree marinara in the slow cooker, or puree the sauce in batches in a regular blender. Stir in basil into pureed sauce.
  • Cook marinara to room temperature, then transfer to a container with a tight-fitting lid. Refrigerate sauce up to 1 week or freeze for up to 2 months. Serve marinara over pasta or use as a sauce for pizza.
