SLOW-COOKER CHICKEN SAUSAGE WITH CABBAGE & APPLES

Slow-Cooker Chicken Sausage with Cabbage & Apples image

The cabbage comes out tender without being mushy and gives the slow-cooker chicken sausage a slightly sweet flavor. A splash of vinegar at the end perks up the whole meal with a bit of acidic brightness. There are several varieties of smoked chicken sausage from which you can choose. We recommend using an apple-flavored smoked sausage to complement the apples and vinegar.

Categories     Healthy Chicken Sausage Recipes

Time 6h20m

Number Of Ingredients 10

1 medium head green cabbage, cored and cut into 16 wedges (about 2 pounds)
2 Granny Smith apples, cored and cut into 1-inch-thick wedges (about 20 ounces)
¼ teaspoon kosher salt
½ teaspoon smoked paprika
½ teaspoon black pepper
2 ½ tablespoons olive oil
1 (13 ounce) package smoked chicken sausage, cut diagonally into 2-inch pieces
3 tablespoons apple cider vinegar, plus more for serving
¼ cup unsalted chicken stock
1 bunch Fresh flat-leaf parsley leaves

Steps:

  • Toss together the cabbage, apples, salt, paprika, pepper, and 1 1/2 tablespoons of the olive oil in a 5- to 6-quart slow cooker. Cover and cook on HIGH until the vegetables are tender, 5 to 6 hours.
  • Heat the remaining 1 tablespoon oil in a large nonstick skillet over medium-high. Add the sausage, and cook, turning to brown on all sides, about 4 minutes. Remove from the heat; add 3 tablespoons of the vinegar. Return to the heat, and cook until most of the liquid evaporates, about 30 seconds. Add the stock to the skillet; bring to a boil, scraping to loosen the browned bits from the bottom of the skillet. Spoon over the vegetable mixture in the slow cooker. Cover and cook on HIGH until the flavors come together, about 1 hour. Garnish with the fresh parsley leaves, if desired, and serve with a splash of apple cider vinegar.

Cabbage-Sausage Stew image

This comforting stew of smoked sausage and vegetables can be on the table in less than an hour. Great for a busy weeknight!

Provided by Bibi

Categories     Soups, Stews and Chili Recipes     Stews

Time 55m

Yield 4

Number Of Ingredients 10

2 tablespoons avocado oil
1 ¼ pounds smoked sausage, cut into 1-inch pieces
5 carrots, chopped
4 medium potatoes, peeled and cut into 1-inch pieces
1 medium sweet onion, cut into 1-inch pieces
3 cups chicken broth
3 grinds black pepper, or to taste
1 small head cabbage, cored and quartered
3 tablespoons all-purpose flour
water, or as needed

Steps:

  • Preheat a 6-quart Dutch oven over medium heat. Add avocado oil to the warm pan and heat until it shimmers, about 1 minute. Add sausage pieces, cut-side down, and heat until browned, 1 to 2 minutes. Turn and brown on the other side, about 1 to 2 minutes more. Transfer sausage to a plate and reserve juices in the pan.
  • Add carrots, potatoes, and onion to the Dutch oven and stir to coat with pan juices. Add chicken broth and black pepper, stirring to combine. Return browned sausage to the pan on top of the vegetables, and place cabbage wedges on top of kielbasa. Bring broth to a boil, about 5 minutes, then cover the Dutch oven and reduce heat to a simmer. Cook until vegetables are fork tender, about 20 minutes.
  • Use a slotted spoon to remove all vegetables and sausage pieces and set aside in a bowl. At this point, cabbage may be cut into bite-sized pieces.
  • Place flour in a small bowl and add enough water to make a thin paste, stirring until all lumps dissolve. Whisk liquid in the Dutch oven constantly while gradually adding flour mixture until liquid boils again, about 5 minutes. Return vegetables and sausage to the Dutch oven and adjust seasoning, if necessary. Serve in individual bowls.

SAUSAGE AND CABBAGE STEW (WITH INSTANT POT OPTION)

Sausage and Cabbage Stew (with Instant Pot option) image

Comforting and loaded with flavor (and lots of veggies), this one-pot meal may become a new favorite!

Yield 4-6 servings

Number Of Ingredients 12

3 slices thick cut bacon (or 5 regular), chopped
½ a yellow onion, finely chopped
2 large carrots, peeled and chopped
3 cloves garlic, minced (omit if not fan)
1 pound Italian turkey sausage, bulk or removed from casings*
2 teaspoons regular sweet paprika
2 teaspoons dried oregano (Julia uses 1 tablespoon)
1 teaspoon kosher or sea salt
1 (32-ounce) carton chicken bone broth**
1 (14- to 15-ounce) can diced tomatoes with juices
1 head cabbage (about 2 to 2½ pounds), thinly sliced or chopped into bite-size pieces
Fresh, chopped parsley to garnish, optional

Steps:

  • Heat a large pot or Dutch oven over medium-high heat, and add the bacon. Cook until it begins to soften and sweat, about 2 minutes. Add the onion, carrots and garlic, and continue cooking until the vegetables have softened but are still al dente, about 5-8 minutes. Scoot the vegetables off to one side of the pot and add the sausage, paprika, oregano and salt. Allow the meat to brown on one side for 2 minutes, then flip and continue cooking for another minute or so, breaking it up as it continues to cook. Add the bone broth and diced tomatoes with juices. Bring to a full boil, and then add the cabbage. (The pot may seem very full, but the cabbage will wilt and cook down a lot.) Stir to incorporate, and then cover and reduce the heat to maintain a gentle simmer. Cook, stirring occasionally, for 25-30 minutes or until the cabbage is tender. Taste and add a sprinkle of salt and pepper, if needed. Serve with a dusting of optional fresh parsley. Leftovers may be stored in the refrigerator for up to 7 days - and the flavor improves with age!
