This Slow Cooker Chicken Fajita Soup is so easy to make because everything goes right in the slow cooker! Plus it's hearty but surprisingly good for you! Top it however you like for a dinner the whole family will love.

2 lb chicken breasts (about 4 chicken breasts)
32 oz chicken stock
1 green bell pepper (diced)
1 red bell pepper (diced)
1 onion (diced)
1/2 cup salsa (jarred)
28 oz diced fire roasted tomatoes (canned)
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp paprika
1/4 tsp cumin
1/3 cup fresh cilantro (chopped)

Steps:

  • Place chicken breasts in bottom of slow cooker. Add all other ingredients on top except for the fresh cilantro. (We'll add the cilantro later.)
  • Cook on high with lid on for 3 - 4 hours or low for 6 - 8 hours.
  • Use two forks to shred the chicken and then place it back in the slow cooker.
  • Taste. Add more salt if that's your preference.
  • Stir in your chopped fresh cilantro.
  • Ladle into bowls and serve! Add avocado, cheese, sour cream, or tortilla chips if you like. It's perfectly delicious without as well!

2 tablespoons taco seasoning

Steps:

  • Combine all the ingredients in a 6 quart crock pot.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Remove the chicken, shred and return it back to the crock pot.
  • Stir to combine the flavors. Serve with your favorite toppings. I topped mine with sour cream, shredded cheddar cheese and chopped cilantro.

2 medium yellow onions, sliced
2 green peppers, cored, seeded, and sliced into strips
1/2 cup frozen corn, thawed
1 (14-ounce) can diced tomatoes
1 tablespoon chopped garlic
2 tablespoons chile powder, divided
1 chipotle pepper in adobo sauce, chopped (reserve adobe for Creamy Mexican Dip)
1 quart chicken broth
Kosher salt and freshly ground black pepper
2 cups canola oil, for frying
12 corn tortillas, cut into eighths
1 cup Monterey Jack cheese, shredded
2 scallions, sliced

Steps:

  • In the sleeve of a slow cooker, add the onions, peppers, corn, tomatoes, garlic, 1 tablespoon chile powder, chipotle, and broth. Season with and salt and pepper, to taste. Cook on low for 4 to 6 hours.
  • In a deep skillet over medium heat, add the canola oil and heat to 365 degrees F. Fry the tortilla pieces until brown and crispy, 1 to 2 minutes. Drain on brown paper and immediately season with salt and the remaining 1 tablespoon chile powder. (Reserve half the chips for Online Round 2 Recipe Creamy Mexican Dip with Spiced Chips.)
  • Preheat the broiler.
  • (Reserve 1 cup of the onion and pepper mixture for Round 2 Recipe Creamy Mexican Dip with Spiced Chips.) Ladle the soup into ovenproof bowls or crocks and top each with 2 tablespoons cheese. Steps:

  • Add half of the sliced peppers and onions to your slow cooker.
  • Layer the chicken and coat all sides with taco seasoning.
  • Top with garlic, the juice from one lime, and tomatoes (be sure to drain).
  • Add the remaining peppers and onions, cover and any remaining lime juice.
  • Cook on high for 3-4 hours.
  • Remove chicken and cut/shred into slices (chicken left longer will tend to shred more - cook to your preference).
  • Return the sliced chicken to the slow cooker to marinate in the juices for about 10 more minutes (on LOW) until ready to serve.
  • NOTE: If you find that there is too much liquid, you can remove till there is a desired amount before serving.
  • Assemble Fajitas to your liking - we recommend topping with cheese, sour cream, and guacamole!

1 cup salsa
2 cups frozen corn

1/2 teaspoon dried cilantro
1 cup shredded cheddar cheese
sour cream
diced tomatoes
green onions

lettuce
diced avocado

Steps:

  • Spray your slow cooker with cooking spray. Add chicken to the bottom of the slow cooker.

2 teaspoons chili powder
