A delicious side for any meal! Easy clean up and tender delicious potatoes that are packed with flavor!

4 Medium sized potatoes or 6-8 small red or yellow potatoes
1 large onion (thinly sliced)
1/2 pound bacon (1 pound makes it that much better)
2 1/2 cups shredded cheddar cheese
1 package dry ranch seasoning packet
2 Tablespoon butter (melted)
1/2 cup sliced green onions

Steps:

  • Cook the bacon until it is just done but not too crisp. I lined a cookie sheet with foil and baked it at 350 degrees for 16 minutes while I was prepping everything.
  • Line your slow cooker with aluminum foil. Leave enough to over hang so that you can wrap the potatoes on the top once in the slow cooker.
  • Spray the inside of the foil with cooking spray and layer half of the potatoes along the bottom. Next layer with half of the bacon, green onions, onion, ranch packet and top with cheese. Repeat the layers and top with cheese reserving 1/2 cup. Pour melted butter over top.
  • Cover the potatoes with remaining foil. This helps them to steam and cook perfectly. Cook on low for 4-6 hours in your slow cooker. Once finished, top with remaining 1/2 cup cheese and let melt on the top.
  • Garnish with fresh green onions if desired.

1 cup heavy whipping cream
2 tablespoons cornstarch
2 tablespoons water
8 oz Kraft™ Velveeta™ original cheese, cut into cubes
2 cups shredded sharp Cheddar cheese (8 oz)

Steps:

  • Spray 5-quart slow cooker with cooking spray. Heat 12-inch skillet over medium heat; cook bacon 10 to 15 minutes or until crispy. Transfer to paper towels to drain. Crumble 3 slices of the bacon; cover and refrigerate until ready to serve. Crumble remaining 3 slices, and transfer to slow cooker.
  • Pour all but 1 tablespoon bacon drippings out of skillet. Add onion to skillet; cook 4 to 6 minutes, stirring occasionally, until tender. Transfer onion mixture to slow cooker. Stir in broth, potatoes and ranch dressing mix.
  • Cover; cook on Low heat setting 5 to 6 hours or until bubbly and potatoes are tender.
  • Increase heat setting to High; stir in whipping cream. In small bowl, beat cornstarch and water with whisk. Beat cornstarch mixture into soup; cover and cook about 15 minutes or until slightly thickened.
  • Add Kraft™ Velveeta™ cheese to slow cooker; stir until melted. Add 1 1/2 cups of the Cheddar cheese; stir until melted. Serve soup with remaining 1/2 cup Cheddar cheese and reserved crumbled bacon.

2 tablespoon Ranch Seasoning Powder Mix
8 slice Bacon
2 cup Sharp Cheddar Cheese
1/4 cup Fresh Chives

Steps:

  • Line your crock pot with aluminum foil leaving enough to cover the potatoes completely. Spray aluminum foil with Nonstick Cooking Spray (as needed).
  • Add Baby Red Potato (2 pound) and cover with Ranch Seasoning Powder Mix (2 tablespoon). Top with Bacon (8 slice), Sharp Cheddar Cheese (2 cup), reserving 1/2 cup of cheese and 1 tablespoon of bacon for the end. Add Fresh Chives (1/4 cup), reserving 1 teaspoon. Cover and close the foil, making sure to seal all openings.
  • Put the lid on and cook on high heat for 3 to 4 hours, until potatoes are fork-tender.
  • Add the reserved cheese and bacon then cover and seal again. Cook for an additional 2 minutes to allow the cheese to melt.
