Easy, loaded cheesy, creamy slow cooker cauliflower casserole recipe, homemade with simple ingredients. Loaded with frozen cauliflower florets, cream cheese, cheddar cheese, mozzarella cheese.

2 bags Frozen cauliflower florets (12 oz. bag each)
1/2 cup Cream cheese (Full fat)
1 cup Mozzarella cheese (Full fat, Shredded)
1 cup Cheddar cheese (Full fat, Shredded)
1 tsp Garlic powder
1 tsp Italian seasoning
Salt (To taste)
Pepper (To taste)
1 tbsp Parsley (Fresh, Roughly chopped, For garnish)

Steps:

  • Spread half the cauliflower in a crockpot.
  • Drop spoonfuls of cream cheese on top.
  • Sprinkle half the mozzarella cheese and half the cheddar cheese.
  • Sprinkle garlic powder, Italian seasoning, salt, pepper.
  • Spread the remaining cauliflower florets on top of this cheese mixture.
  • Sprinkle remaining mozzarella cheese and cheddar cheese on top.
  • Cover and cook on low heat for 3 hours, stirring once halfway through.
  • Remove lid and gently mix everything together.
  • Garnish with fresh parsley and enjoy!

3 slices bacon
nonstick cooking spray
1 medium head cauliflower, cut into florets
¼ cup chicken broth
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon ground turmeric
1 (10.75 ounce) can cream of chicken soup (such as Campbell's®)
½ cup shredded mozzarella cheese
½ cup shredded Cheddar cheese
1 scallion, green part only, thinly sliced

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Once cool enough to touch, crumble and divide into thirds.
  • Spray the inside of a slow cooker with cooking spray.
  • Place cauliflower into the slow cooker and pour chicken broth on top. Season with salt, pepper, and turmeric.
  • Combine cream of chicken soup, mozzarella cheese, and Cheddar cheese in a bowl. Pour over cauliflower mixture.
  • Cook on High until cauliflower is cooked to your liking, about 2 hours. Stir in 2/3 of the crumbled bacon just before serving.
  • Transfer to serving platter and top with green onion and remaining bacon.

1 serving olive oil cooking spray
1 link sweet apple chicken sausage (such as Trader Joes®), cut into 1/4-inch slices
1 large head cauliflower, cut into florets
½ (8 ounce) package cream cheese, cubed
3 tablespoons unsalted butter
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon freshly ground black pepper, or to taste
¼ teaspoon red pepper flakes, or to taste
6 ounces shredded pepper Jack cheese
4 slices bacon

Steps:

  • Spray the inside of a 4- to 6-quart slow cooker with cooking spray.
  • Spray a small skillet with cooking spray and add sausage. Cook over medium heat until sausage are browned, 2 to 3 minutes. Transfer to the prepared slow cooker. Add cauliflower, cream cheese, butter, garlic powder, salt, pepper, and red pepper flakes; stir to combine.
  • Cover slow cooker and cook on Low until cauliflower is fork tender, about 2 hours. Stir in pepper Jack cheese and cook for 30 minutes longer.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, about 10 minutes. Drain bacon slices on paper towels and crumble once cool enough to handle. Sprinkle crumbled bacon over finished casserole.

A delicious and easy recipe from cooktopstove.com. Can be either a side dish or a vegetarian main course. I'd advise leaving out the salt; the Parmesan is plenty salty already!

1 large cauliflower
4 garlic cloves, minced
4 tablespoons butter, melted
1 tablespoon sage, finely chopped
1 lemon, juiced and zested
1 1/2 teaspoons salt
1/2 teaspoon pepper
3/4 cup parmesan cheese (the powdered kind)
2 tablespoons fresh parsley, finely chopped

Steps:

  • If cauliflower has greens still attached to the bottom, leave them on. Place whole cauliflower in the slow cooker.
  • In a small bowl, mix together garlic, butter, sage and lemon zest. Pour butter mixture over cauliflower. Use your fingers to rub into the surface.
  • Evenly sprinkle with the salt and pepper, followed by the powdered Parmesan cheese.
  • Pour the lemon juice around the cauliflower in the slow cooker (not on top of the cauliflower).
  • Cook on low for 5 hours, or on high for 3 hours, 30 minutes.
  • Gently remove the cauliflower from the slow cooker. Add parsley to the slow cooker and mix with the liquid from cooking.
  • Slice the cauliflower and pour the sauce (cooking liquid with parsley) over the top. Serve with grilled chicken or fish, or let it stand alone and shine.

1 tablespoon olive oil
2 lbs stewing beef, cut into cubes
1 -2 onion, chopped
1 tablespoon gingerroot, minced
2 garlic cloves, minced
1 piece cinnamon stick
1 teaspoon pepper
2 bay leaves
2 tablespoons cumin seeds, toasted (or 1 teaspoon ground cumin)
1 tablespoon coriander seed (or 1/2 teaspoon ground)
1 -2 cup beef broth (I used 1 can or 2 cups canned broth)
2 tablespoons tomato paste
salt (I used canned broth so I skipped the salt) (optional)
1 red bell pepper, diced
1 -2 long green chili bell pepper, minced (I used hatch chili peppers)
4 cups cauliflower florets, cooked (or 1 head cauliflower, separated into florets)
plain yogurt or sour cream
1/4 cup almonds, slivered and toasted, garnish
1/2 cup cilantro leaf, minced, garnish

Steps:

  • In a skillet over medium high heat heat the oil for about 30 seconds and then add the beef, in batches, cook stirring until browned (3-5 minutes). Transfer meat to slow cooker as it is brown.
  • Reduce heat to medium, adding additional oil to pan if needed.
  • Add onions, cook stirring until softened (3-5 minutes) and then stir in gingerroot, garlic, cinnamon stick, pepper, bay leaves and cumin and coriander, cook stirring for one more minute or so.
  • Stir in beef broth and tomato paste and bring to a boil. Season with salt, if desired. Transfer to the slow cooker, stir well.
  • Cover and cook on low for 6-8 hours or on High for 3-4 hours. Discard bay leaves and cinnamon stick.
  • Stir in red pepper, chili pepper.
  • Stir in cooked cauliflower.
  • Cover and cook on high for 20-30 minutes or until pepper is tender.
  • Serve with yogurt, toasted almonds and cilantro if desired.
