SLOW-COOKER PORK CURRY

2 small pork tenderloins (about 12 ounces each)
2 teaspoons Madras curry powder
2 teaspoons packed light brown sugar
Grated zest and juice of 1 lime, plus wedges for serving
Kosher salt and freshly ground pepper
1 pound small red-skinned potatoes, halved or quartered if large
1 small bunch fresh cilantro, leaves whole, tender stems chopped
1 small red onion, halved and thinly sliced
1 13.5-ounce can light coconut milk (preferably Thai)
3 tablespoons Thai red curry paste
1 1/2 cups frozen French-cut green beans (about 6 ounces)
1 1/2 cups mung bean sprouts

Steps:

  • Toss the pork with the curry powder, 1 teaspoon brown sugar, the lime zest and a generous pinch each of salt and pepper in a large bowl; set aside. Put the potatoes in a 6- to 7-quart slow cooker and top with the cilantro stems and half of the red onion slices.
  • Whisk the coconut milk with 1/4 cup water and the curry paste in a small bowl. Pour into the slow cooker. Add the pork and nestle into the vegetables and sauce. Cover and cook on low, 7 hours.
  • Transfer the pork to a cutting board; let rest. Stir the green beans into the slow cooker and let stand, uncovered, 10 minutes. Toss the remaining red onion with the lime juice in a small bowl and let stand 10 minutes. Stir the remaining 1 teaspoon brown sugar into the curry sauce and season with salt and pepper.
  • Divide the green beans, potatoes and sauce among bowls. Slice the pork and add to the bowls. Top each serving with the onion and any remaining lime juice in the bowl, the bean sprouts and cilantro leaves. Serve with lime wedges.

2 pounds boneless pork loin roast, cut into 1-inch cubes
1 small onion, chopped
1/2 cup orange juice
1 tablespoon curry powder
1 teaspoon chicken bouillon granules
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1 medium apple, peeled and chopped
2 tablespoons cornstarch
2 tablespoons cold water
Hot cooked rice, optional
1/4 cup raisins
1/4 cup sweetened shredded coconut, toasted

Steps:

  • In a 6-qt. electric pressure cooker, combine the first 9 ingredients. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Quick-release pressure. A thermometer inserted in pork should read at least 145°. , Add apple to pressure cooker. In a small bowl, combine cornstarch and water until smooth; stir into pressure cooker. Select saute setting and adjust for low heat. Simmer, stirring constantly, until thickened and apple is tender, 3-5 minutes., If desired, serve with rice. Sprinkle with raisins and coconut.

1 teaspoon ground cumin

3 cups cubed peeled butternut squash (about 1 pound)
1 can (14-1/2 ounces) reduced-sodium chicken broth

Steps:

  • In a small bowl, mix seasonings. In a 6-qt. slow cooker, combine vegetables, broth and 2 teaspoons seasoning mixture. Rub remaining seasoning mixture over roast; place over vegetables. Number Of Ingredients 14

1kg lean pork, cubed (we used pork steaks)
3 tbsp plain flour
1 tsp salt
2 tbsp sunflower oil
1 large onion, peeled and chopped
1 tbsp curry powder
1 tbsp paprika
300ml hot chicken stock
1 red chilli, deseeded and sliced
1 tbsp mango chutney
1 tsp Worcestershire sauce
432g can pineapple chunks in syrup or juice
2 bay leaves
Pilau rice, plain yogurt, mango chutney and coriander leaves, to serve

Steps:

  • Toss the pork in the flour and salt. Heat the oil in a large pan and brown the meat all over - it's best to do this in two batches. Spoon the meat on to a plate.
  • Cook the onion in the pan until softened. Stir in the curry powder and paprika. Fry for 2 minutes, then return the pork to the pan and add the remaining ingredients, including the juice from the can of pineapple. Bring to the boil, tip the mixture into a slow-cook pot and cook on 'auto' for 6-8 hours, or until the meat is tender. Alternatively, cook the curry in a casserole in the oven at 150°C/ 302°F/Gas Mark 3 for 2 hours.
  • Serve curry with rice and top with yogurt, coriander,and mango chutney, if you like.

  • In a large enameled cast-iron casserole, cover the pork chunks with 1 inch of cold water (about 12 cups). Add the salt and bring to a boil over moderately high heat. Reduce the heat to moderate and simmer until the pork is tender, about 1 hour and 15 minutes. Using a slotted spoon, transfer the pork to a bowl. Set aside 2 cups of the pork stock; reserve the remaining pork stock for another use.
  • Wipe out the casserole. Add 1 cup of the coconut milk and simmer over moderate heat until reduced by half, about 5 minutes. Stir in the curry paste and peanut butter and cook for 1 minute more. Add the remaining 1 cup of coconut milk and the reserved 2 cups of pork stock along with the sweet potato, galangal, lemongrass and shrimp paste. Cover partially and bring to a simmer over moderate heat. Cook until the sweet potato is almost tender, about 10 minutes. Add the eggplant and simmer until just tender, about 10 minutes.
  • Add the pork and chiles to the casserole and simmer over moderate heat until the pork is heated through and the vegetables are tender, 10 minutes. Discard the galangal and lemongrass. Stir in the pineapple and cook until heated through, 1 to 2 minutes. Remove from the heat and stir in the basil. Serve with steamed white rice.
