SLOW COOKED GREEN BEANS
Why make canned green beans when these are so easy and taste just like the restaurants. Make one batch and they are just as good left over. There is one thing I'm always requested to make at Thanksgiving, and this is it. I also like to cook these over a campfire.. either way works. Personally, we like these with amount of pepper as listed, but your tastes may differ. You may have to experiment with the amount of salt & pepper. You can try fresh bacon, but I find that it contains too much grease and not a lot of flavor, The bagged pre-cooked bacon pieces (like you would use for salads) works great.

Steps:
- Snap off green bean ends, then snap in half.
- In large stock pot, add all ingredients, adding just enough water to cover green beans.
- Cover pot and simmer for about 2 hours. Green beans are done when fork tender.

COUNTRY GREEN BEANS WITH BACON
Slow cooked and delicious. Can be made with either canned or fresh green beans with fantastic results. Tastes best with some of the juice accompanying the beans.

Steps:
- Grab a good sized pot.
- Set the heat on the stove to medium high.
- Cook the bacon in the pot until brown, but not crunchy (include onion in this step cooked until translucent if desired).
- Add canned beans with juice to pot, making sure to stir the bacon and its juices into liquid.
- Add pepper sauce, salt, and pepper to pot.
- Leave on medium-high heat, uncovered, until beans and liquid come to a slight boil.
- When a boil is achieved, stir, turn the heat down to medium-low and cover (adjust the heat so the beans are just about boiling with the cover on but not boiling out of the pot).
- Cook for 1 hour, stirring every 10-20 minutes.
- Add more spices if desired (take a taste test every now and then).
- For fresh beans, before cooking as directed above, boil beans in enough water to cover + 1 teaspoon salt for 5 minutes (I feel this helps get rid of the strange taste some fresh green beans have).
- Drain.
- Add fresh green beans to recipe as indicated, but add enough water to cover once more.
GREEN BEANS SLOW-COOKED WITH BACON AND ONIONS

- Heat a heavy bottomed pot over medium high heat. Add the olive oil, bacon, and onions and cook until the onion is soft, about 5 to 10 minutes. Stir in the green beans and chicken stock; season with salt and pepper. Reduce the heat to low, and cook the green beans until they are soft but not mushy, about 30 to 45 minutes. Taste and adjust seasoning.
SLOW-COOKER GREEN BEAN CASSEROLE

- Combine the green beans, mushrooms and 1 teaspoon salt in a 6-quart slow cooker.
- Melt the butter over medium-high heat in a large skillet. Add the onions and a pinch of salt and cook, stirring occasionally, until the onions are tender and lightly browned, 6 to 8 minutes. Reduce the heat to medium, then add the garlic and cook, stirring constantly, until the garlic is just softened, about 2 minutes. Stir in the flour and stir constantly until it thickens into a paste, about 2 minutes. Add the half-and-half and 1 teaspoon each salt and pepper and cook, whisking occasionally, until thickened, 8 to 10 minutes. Remove from the heat and season to taste with salt and pepper. Pour the sauce into the slow cooker and stir to coat the vegetables. (The sauce will loosen as it cooks.)
- Cover the slow cooker and cook on low until the green beans are tender but not mushy, about 4 hours. Remove the lid and stir. If the green beans look too soupy, cook for an additional 15 minutes uncovered. Season with additional salt and pepper to taste. Transfer to a shallow serving dish and sprinkle with the fried onions. Serve hot.

- Place saucepan over medium heat; cook and stir bacon in the hot pan until almost crisp, about 6 minutes. Want the taste of green beans canned from a garden, but aren't able to can? This is a wonderful substitute. I learned this technique from a good friend. Put it in the crockpot on low before you head to church, put a roast or chicken in another crockpot, and come home to a wonderful, warm Sunday dinner!

- Pour green beans into slow cooker, do NOT drain.
- Add 3/4 cup of water.
- Add salt, pepper, minced onion or onion powder as desired (remember: salt pork will add more salt to the dish, and the beans have salt already, so don't over do it! You can always add more salt before serving or at the table.).
- Add a 1/2 inch slice of salt pork (I keep mine in the freezer to use as needed).
- Preferred method: If you have time, put the crock on high & allow the beans to come to a good simmer, then reduce heat to low for 3-4 hours. If you don't have time to let them come to a simmer on high, cook them on low for about 5 hours.

- Melt 1 stick of butter in a heavy 3 quart pan.
- Add onions and cook over low heat for a few minutes but not let the onions get brown.
- Except for the remaining stick of butter and salt add all of the remaining ingredients to the onions.
- Partially cover and bring to a boil and boil for 5 minutes.
- Then lower the heat and cover completley.
- Simmer at least 15 minutes or until green beans are cooked to the tenderness you like.
- Drain off the liquid and remove ham hock.
- Take the skin off the ham hock and cut meat from the bone.
- Return the meat to the beans.
- Add salt and the remaining butter an toss until butter is melted and green beans are coated.
