FALL-APART SLOW-COOKER BEEF BRISKET AND ALE CASSEROLE

Fall-apart slow-cooker beef brisket and ale casserole image

A whole beef brisket slowly cooked in ale until it is melt-in-the-mouth tender- the ultimate comfort food!Syns: 1.5/2 syns per portion

Provided by Pip.Payne

Number Of Ingredients 13

700/800 g beef brisket (visible fat removed, and remove any string)
2 onions (finely chopped)
3 sticks celery (finely chopped)
1 clove garlic (finely chopped)
1 tbsp cornflour
3 carrots (chopped into small chunks)
500 ml ale (I just use a local ale, but you can use Guinness!)
1 can chopped tomatoes
1 tbsp tomato puree
1 beef stock cube or stock pot
salt and pepper
1 tsp dried thyme
spray oil or low-calorie cooking spray

Steps:

  • Fry the onions in spray oil/low-calorie cooking spray until softened (about 3-4 minutes)
  • Add the celery and the garlic, and stir-fry for another 2 minutes
  • Move the vegetables over to the side of the pan and pop in the piece of beef. Give it a quick sear (30 seconds to 1 minute will suffice) on each side.
  • Pop the piece of beef into the slow-cooker pot, add in the fried veg and sprinkle the cornflour over everything
  • Add in the carrots, ale, chopped tomatoes, tomato puree, beef stock cube (crumble this, or dissolve the stock pot in a little boiling water before adding), thyme and season with salt and pepper. Give everything a bit of a stir to combine the ingredients
  • Pop the lid on and cook on low for 8-12 hours.
  • When you are ready to serve, either use 2 forks to pull the beef apart into the casserole, or you can remove the brisket, slice it up and serve it with the sauce poured over it!

SLOW COOKED BRISKET WITH BROWN SUGAR, CARROTS AND GREMOLATA

Slow Cooked Brisket with Brown Sugar, Carrots and Gremolata image

There are two distinct parts of brisket, the first and second cuts. The first cut is very lean, and the second loaded with beautiful (fat) marbling. This makes cooking a "whole" brisket a felony. It's like cooking a small and large potato in the same oven, for the same amount of time, and expecting them both to be perfectly cooked. Brisket falls under the category of "butcher's cuts" that were prized and taken home more by the butcher than the customers. That said, adjust your cooking time for slightly shorter with the leaner pieces and slightly longer with the more "marbled" ones. This is a simple recipe with a good thickening trick at the end-and don't be scared: gremolata is just a fancy word for garlic, parsley and lemon...

Provided by Alex Guarnaschelli

Categories     main-dish

Time 4h20m

Yield 6 to 8 servings

Number Of Ingredients 17

One 3- to 4-pound second-cut or point-cut brisket, preferably in one piece
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
3 large shallots, sliced lengthwise
12 large cloves garlic
1 pound small carrots, halved lengthwise
1/4 cup dark brown sugar
1/4 cup red wine vinegar
5 cups beef stock
2 tablespoons mayonnaise
3 tablespoons grainy mustard
2 teaspoons coriander seeds, lightly crushed
1 teaspoon plus 2 tablespoons extra virgin olive oil
1 cup flat-leaf parsley leaves, stemmed
2 large cloves garlic, minced
Zest and juice from 1 large lemon
Kosher salt

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the brisket: Tie the circumference of the brisket with butcher's twine. In a large Dutch oven or other wide heavy pot, heat the oil over medium-high heat. When the oil begins to smoke lightly, sprinkle both sides of the brisket with salt and pepper. Use metal tongs to add the meat to the pot. If the oil is hot enough, the meat won't stick. Cook, undisturbed, on its first side, until browned, 3 to 5 minutes. Turn on the other side and brown, 3 to 5 additional minutes. Remove the meat from the pot and place it on a baking sheet.
  • Cook the vegetables: Lower the heat to medium. In the same pot add the shallots, garlic and carrots and sprinkle them with another pinch of salt. Brown for 3 to 5 minutes. Stir in the sugar and vinegar and simmer over very low heat until the liquid reduces and starts to coat the carrots, 3 to 5 minutes. Pour the vegetables and cooking liquid into a bowl.
  • Cook the meat: Return the brisket to the pot and add the beef stock. Bring the stock to a gentle simmer. Cover, then place the pot in the center of the oven and cook for 1 hour. Remove the pot from the oven and add the vegetables and their liquid back in. Return the pot to the oven, uncovered, and cook until the meat is tender when pierced with a fork, an additional 1 to 2 hours. (If the meat looks dry or begins to get overly browned, cover the pot with the lid or a layer of aluminum foil for the remaining oven time.)
  • Make the gremolata: In a small skillet, toast the coriander seeds in 1 teaspoon olive oil until lightly colored and fragrant. Meanwhile, in a small bowl, combine the parsley, garlic, lemon zest and juice and a generous pinch of salt. Add the coriander seeds warm, straight from the skillet. Add the remaining 2 tablespoons olive oil, then stir and set aside.
  • Finish: Remove the pot from the oven and allow it to rest for 10 to 15 minutes. Meanwhile, blend half the cooking liquid and half of the remaining vegetables in a blender until smooth, then pour back into the pot. Whisk in the mayonnaise and mustard. Taste for seasoning. Slice the meat against the grain. (It should be fork-tender without being dry.) Transfer the meat and the remaining vegetables to a serving platter Pour the sauce over the meat. Serve with the gremolata.

SLOW COOKER BRISKET WITH GOLDEN ALE GRAVY & HORSERADISH MASH

Slow cooker brisket with golden ale gravy & horseradish mash image

Prepare this beef brisket and let it bubble away in the slow cooker, leaving you with a tender, rich stew. Add a kick to your mash using horseradish

Provided by Anna Glover

Categories     Dinner

Time 9h

Number Of Ingredients 17

1.2kg brisket, rolled
2 tbsp vegetable oil, plus extra for drizzling
2 large onions, sliced
4 tbsp plain flour
500-550ml golden ale
1 tbsp yeast or beef extract
1 tbsp dark brown soft sugar, plus extra to taste
1 tbsp balsamic vinegar, plus extra to taste
1⁄2 bunch of thyme
2 bay leaves
500ml hot beef stock
2 tsp cornflour (optional)
2kg Maris Piper or other floury potatoes, chopped
4 tbsp horseradish
100g butter
100g crème fraîche
handful of parsley, chopped

Steps:

  • Season the brisket all over with salt and pepper. Heat the vegetable oil in a frying pan (or use the sear function on your slow cooker) and sear the meat all over until browned. Transfer to a plate. Add another drizzle of oil, if needed, and fry the onions with a pinch of salt until lightly golden, about 12 mins. Sprinkle over the flour, stir until well-mixed, then pour in the ale and scrape the bottom of the pan to pick up any browned bits. Tip everything into the slow cooker (if using a frying pan).
  • Add the yeast or beef extract, sugar and vinegar, then the beef and herbs. Top up with stock until the brisket is just over half submerged. Cover and cook for 7-8 hrs on low until tender. Remove the meat from the slow cooker and cover to keep warm. Use the reduce or simmer function on your slow cooker and simmer for 10-15 mins until the gravy has thickened to your liking. If your slow cooker doesn't have a simmer function, pour the gravy into a pan and simmer on the hob until thickened. Add a pinch more salt, sugar or a dash more vinegar if needed. If you like your gravy to be extra-thick, mix the cornflour with a splash of cold water, then add to the pan and bubble for a few minutes.
  • Just before you remove the meat from the slow cooker, start on the mash. Cook the potatoes in a pan of boiling salted water for 20 mins until very tender when pressed. Drain and steam-dry for a few minutes before mashing with the horseradish, butter and crème fraîche. Scatter with parsley to serve. Cut the brisket into wedges and serve with the gravy and mash.

Provided by Tom Kerridge

Categories     Dinner, Lunch, Main course

1 tablespoon vegetable oil

In a large cast-iron pan set over medium-high heat, add the oil and heat until it starts to shimmer. Add the brisket, fat-side down, and sear until browned and slightly crispy, 2 to 3 minutes. Use tongs or two metal spatulas to carefully flip the brisket. Cook until browned and slightly crispy on all sides, 1 to 2 minutes.
  • Transfer to a cutting board and slice the brisket against the grain. Serve hot with the cooking liquid.
