SKINNY BUFFALO CHICKEN DIP



Skinny Buffalo Chicken Dip image

Given to me by my mother-in-law and adapted to make it slightly less guilty, this skinny Buffalo chicken dip is a hit every time I make it! Great served with celery sticks, Tostitos® Baked Scoops® or Fritos® Scoops®.

½ tablespoon olive oil
2 skinless, boneless chicken breasts, diced
½ tablespoon garlic powder
1 (8 ounce) package fat-free cream cheese, softened
½ cup crumbled blue cheese
½ cup fat-free blue cheese salad dressing
½ cup Buffalo wing sauce (such as Frank's RedHot®)
1 (8 ounce) package shredded smoked Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a skillet over medium heat. Saute chicken in the hot oil with garlic powder until no longer pink in the center and juices run clear, 5 to 8 minutes.
  • Spread cream cheese onto the bottom of an oven-proof round pie dish. Add cooked chicken and blue cheese crumbles.
  • Mix blue cheese salad dressing and Buffalo sauce together in a bowl; pour evenly over cream cheese and chicken. Top with smoked Cheddar cheese.
  • Bake in the preheated oven until heated through and cheese is melted, about 25 minutes. Remove from the oven and let rest for 2 to 3 minutes; stir to mix ingredients.

1 (8 ounce) package reduced-fat cream cheese, softened
1/2 cup fat free ranch dressing
1/3 cup buffalo wing sauce
2 tablespoons water
1 1/2 cups shredded cooked chicken breasts
1 cup shredded reduced-fat colby-monterey jack cheese (4 oz) or 1 cup reduced-fat cheddar cheese (4 oz)
2 tablespoons chopped green onions (2 medium)
whole grain crackers or celery rib, if desired

Steps:

  • Pre-heat oven to 350°F
  • In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Beat in dressing, buffalo wing sauce and water until blended. Stir in chicken and cheese.
  • Spread chicken mixture in an ungreased 1-quart baking dish or 9-inch pie plate.
  • Cover with foil.
  • Bake 30 to 35 minutes or until hot and bubbly.
  • Stir; top with onions.
  • Serve hot with crackers or celery sticks.

1 (10 3/4 ounce) can condensed 98% fat-free cream of chicken soup
1 (16 ounce) container reduced-fat sour cream
1/2 cup nonfat milk (skim)
2 tablespoons no-trans-fat 68% extra-light vegetable oil spread, melted
1/2 teaspoon salt
1/2 teaspoon pepper
1 (30 ounce) bag frozen hash brown potatoes, thawed
1/2 cup chopped onion (1 medium)
2 cups shredded reduced-fat sharp cheddar cheese (8 oz)
2 cups fat-free herbed croutons, coarsely crushed
1/2 teaspoon paprika, if desired

Steps:

  • Heat oven to 350°F
  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In large bowl, mix soup, sour cream, milk, melted vegetable oil spread, salt and pepper until blended.
  • Stir in potatoes, onion and cheese. Spread evenly in baking dish. Sprinkle with crushed croutons and paprika.
  • Bake uncovered 55 to 60 minutes or until top is golden brown and mixture is bubbly.
